PIMENTO CHEESE MACARONI SALAD



Pimento Cheese Macaroni Salad image

This is inspired by a delicious and creamy pimento dip that my best friend makes whenever we do a weekend barbecue shindig. I decided to make a pasta salad version of that dish featuring elbow macaroni. The addition of diced red bell pepper adds a crunch of freshness that pairs perfectly with the creaminess of the ingredients. This fun and comforting salad is delicious warm or room temperature but can also be made in advance and served cold.

Kosher salt and freshly ground black pepper
8 ounces elbow macaroni
4 ounces cream cheese, at room temperature
1/2 cup mayonnaise
1/4 cup canned pimento peppers, diced
1/2 cup shredded sharp Cheddar
2 tablespoon chives, fresh or freeze-dried
1 tablespoon smoked paprika, plus more for sprinkling
1 clove garlic, minced
Dash hot sauce (use your favorite)
1 red bell pepper, stemmed, seeded and diced

Steps:

  • Bring a large pot of salted boiling water to a rolling boil. Add the macaroni and cook until al dente, about 1 minute less than package directions suggest.
  • Meanwhile, in a large bowl, mix the cream cheese, mayonnaise, pimento peppers, Cheddar, chives, smoked paprika, garlic, hot sauce and a pinch of salt and black pepper together until thoroughly combined.
  • Transfer the cooked macaroni directly to the large bowl with the cheese mixture and mix until everything is thoroughly combined. Fold in the red bell pepper and garnish with more smoked paprika. Serve immediately or chill in the fridge until ready to serve.

1 (3 ounce) package lemon-flavored gelatin mix (such as Jell-O®)
1 cup boiling water
1 (8 ounce) can crushed pineapple with juice
½ cup white sugar
1 (8 ounce) package pimento cheese
1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed

Steps:

  • Stir lemon gelatin and boiling water in a bowl until gelatin has dissolved; set aside to cool.
  • Stir crushed pineapple with juice and sugar together in a small saucepan over medium heat until sugar has dissolved and mixture comes to a simmer. Set pineapple mixture aside to cool.
  • Transfer cooled gelatin and pineapple mixture to a serving dish or mold; stir pimento cheese into mix until completely combined. Gently fold whipped topping into gelatin mixture. Refrigerate overnight.

I can't take credit for this recipe because it was one that was passed on to me by a coworker. However, I, my friends and family LOVE it so I thought I'd share.

1 box(es) lemon gelatin, 3 oz size
1 cup(s) boiling water
1/2 cup(s) sugar
1 small whipped topping, 8 oz.
1 small pimento cheese spread
1 small crushed pineapple, drained
1 cup(s) chopped nuts (optional)

Steps:

  • Dissolve gelatin in boiling water.
  • Add sugar and pimento cheese.
  • Mix well.
  • Add pineapple.
  • Partially congeal.
  • Fold in whipped topping and nuts, if desired.
  • Chill until set.

1 small jar pimento cheese spread
1 small can crushed pineapple, drained
9 ounce(s) carton of cool whip
1 cup(s) toasted pecans, if desired

Steps:

  • Dissolve gelatin in boiling water. Add sugar and cheese spread. Mix well. Add drained pineapple.
  • Let congeal to consistency of unbeaten egg whites. Fold in cool whip and pecans. Pour into oiled ring mold. Pace in refrigerator to congeal.

Steps:

  • Toss pasta with cheese in large bowl.
  • Mix all remaining ingredients except chives until blended.
  • Add mayo mixture to pasta mixture; mix lightly.
  • Sprinkle with chives.

This pasta salad reminds me of the best pimento cheese I ever had. IMy friends and family are always asking me to make pasta salad. I normally make a vinaigrette for my pasta salad, not this time! I decided to fuse my beloved pimento cheese with pasta and top it off with some grilled chicken. This salad is quick, simple, easy and is simply delcious. I will make this often. 12 ounce(s) pasta bowties, small
3/4 pound(s) asparagus spears
1/2 cup(s) roasted red peppers, chopped
4-6 ounce(s) aged sharp white cheddar cheese, grated
1 pound(s) grilled chicken breast, boneless & skinles**season chicken with extra virgin olive, greek seasoning & herbs de provence. grill for 5 minutes on each side. slice.**
DRESSING
1 1/4 cup(s) miracle whip
1 tablespoon(s) sriracha
1 teaspoon(s) white wine vinegar
1 package(s) ranch dressing, dry

Steps:

  • In a large pot of salted water, boil aspargus for 3 minutes. Remove immediately and place in an ice bath to stop the cooking process. Drain asparagus in a colander. Slice and set aside. Add pasta to the same boiling water. Boil according to package. Remove and drain in a colander. Run cold water over pasta until cool. Drain. Set aside. In a large mixing bowl combine the dressing ingredients . Mix well. Fold in asparagus, roasted red peppers & cheese. Chill for at least 1 hour. Top with grilled chicken when ready to serve. Enjoy!

Bacon Pimento Cheese Potato Salad image

A potato salad with pimento pepper, cheddar cheese and bacon in a creamy dressing!

1 1/2 pounds potatoes, diced (optionally peeled)
4 slices bacon, cooked and crumbled (optional)
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon apple cider vinegar
1 tablespoon buffalo hot sauce (or to taste)
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1 (7 ounce) jar pimentos, chopped and drained
1 cup cheddar cheese, shredded
1/4 cup onion, grated
1/4 cup green onion, thinly sliced

Steps:

  • Place the potatoes in a large pot, cover with water, add a pinch of salt, bring to a boil, reduce the heat and simmer until the potatoes are just tender, about 8-10 minutes, before removing from water and letting them cool.
  • Meanwhile, cook the bacon and crumble.
  • Mix the mayonnaise, sour cream, vinegar, hot sauce, Worcestershire sauce, salt and pepper.
  • Mix the potatoes, bacon, pimentos, cheese, onions and green onions, toss with the dressing and either enjoy right away or chill in the fridge overnight.
