4 teaspoons butter, melted
2 cups shredded cheddar cheese
1 (12 ounce) jar roasted red peppers, chopped
1 cup plain yellow cornmeal
1 cup flour
1 cup milk
1/4 cup canola oil
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten

Steps:

  • Preheat oven to 400*.
  • Brush melted butter in a cast-iron cornbread pan or skillet, coating entire surface so that cornbread does not stick.
  • Place pan in oven to heat.
  • In a large mixing bowl, combine remaining ingredients, stirring until just moist.
  • Spoon batter into prepared pan.
  • Bake for 15 to 20 minutes, or until top begins to brown.

Pimento Cheese Cornbread image

This pimento cheese cornbread uses a special Krusteaz mix, your favorite pimento cheese, and a cast iron skillet to make a Southern-style melt-in-your-mouth cornbread folks will RAVE over!!

1 box Krusteaz Honey Cornbread & Muffin Mix
1 egg
1/3 cup vegetable oil (or melted butter)
2/3 cup milk
1/2 -1 cup pimento cheese (I use Palmetto Cheese with jalapeño)

Steps:

  • Preheat oven to 400.
  • Place oil in skillet; put skillet in oven during preheat.
  • Mix cornbread according to package directions.
  • Stir in pimento cheese.
  • When oven reaches 400 degrees, remove skillet from oven.
  • Immediately pour batter into hot skillet.
  • Return skillet to oven.
  • Bake until golden on top, roughly 25 minutes
