1 (18.25 ounce) package yellow cake mix
1 (11 ounce) can mandarin oranges, juice reserved
4 eggs
¼ cup vegetable oil
1 (16 ounce) package frozen whipped topping, thawed
1 (15 ounce) can crushed pineapple, drained
1 (3.5 ounce) package instant vanilla pudding mix

Steps:

  • Mix together cake mix, canned oranges with juice, eggs, and oil. Pour batter into three greased and floured 8 inch round pans. Layers will be thin.
  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until cake tests done. Cool layers on wire racks.
  • Mix together whipped topping, drained pineapple, and instant pudding mix. Fill and frost the cooled cake. Refrigerate until ready to eat.

Nonstick baking spray, for the pan
One 18.25-ounce box yellow cake mix
8 tablespoons (1 stick) salted butter, softened
1 teaspoon vanilla extract
4 large eggs
One 23.5-ounce jar mandarin oranges, drained and 1/2 cup juice reserved
4 ounces cream cheese, softened
1/2 cup confectioners' sugar
1 1/2 cups chilled heavy cream
2 teaspoons vanilla extract
One 20-ounce can crushed pineapple, drained

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch cake pan with baking spray.
  • Combine the cake mix, butter, vanilla, eggs and 1/2 cup reserved mandarin juice in the bowl of an electric mixer and beat for 4 minutes on medium-high speed. Add 1 1/2 cups of the drained orange slices and beat again until the oranges have broken into small pieces, about 1 minute. Transfer the batter to the prepared cake pan and bake until golden brown and set, 25 to 27 minutes. Allow to cool completely, then turn out onto a large platter.
  • For the topping: Cream together the cream cheese and confectioners' sugar in the bowl of a stand mixer fitted with a paddle attachment, 1 to 2 minutes. Remove the mixture to a small bowl. Add the cream and vanilla to the stand mixer bowl and switch to the whisk attachment, then whip until soft peaks form, about 2 minutes. Add the cream cheese mixture, distributing it evenly around the bowl. Whip until stiff peaks form, 3 to 4 minutes. Fold in the pineapple.
  • Spread the frosting evenly over the cooled cake and refrigerate for at least 2 hours. Garnish with the remaining mandarin orange slices.

1 (18 1/4 ounce) box yellow cake mix
1 (11 ounce) can mandarin oranges in juice
4 eggs
3/4 cup vegetable oil
1 (20 ounce) can crushed pineapple
1 (9 ounce) container whipped topping (thawed)
1 (6 ounce) box instant vanilla pudding

Steps:

  • Pre-heat oven to 350°F.
  • Grease and flour lightly one 13x9-inch pan.
  • Place all ingredients for cake in mixer bowl and beat with electric mixer until well combined( about 2 minutes).
  • Bake at 350°F for 25-30 minutes( until toothpick inserted in center of cake comes out clean).
  • Allow cake to completely cool in pan.
  • Drain crushed pineapple and reserve juice.
  • In separate bowl combine crushed pineapple and dry pudding mix.
  • Fold in whipped topping until well blended.
  • Poke holes in cooled cake.
  • Pour 3/4 cup of reserved pineapple juice over cake.
  • Spread frosting over cake.
  • Refrigerate for at least 2 hours.

1/3 cup oil (or as called for by your cake mix)

Steps:

  • Prepare the yellow cake mix according to the directions on the box, EXCEPT substitute the can of mandarin oranges (with juice) for the water. Beat the mandarin oranges in with the other ingredients with an electric hand mixer. Bake according to directions.

1 butter cake mix
4 eggs
1/2/ cup vegetable oil
1 cup pecans, chopped
1 (15 oz.) can Mandarin oranges, chopped and drained (reserve juice)
Frosting
1 (5 oz.) box of INSTANT vanilla pudding
1 (8oz.) can crushed pineapple with juice
1 (16 oz.) large frozen whipped topping

Steps:

  • Preheat oven to 325 degrees. In a mixing bowl combine the cake mix, eggs, juice from the oranges and oil. Fold in the Mandarin oranges and pecans. Prepare three 9 inch round cake pans. Cut a circle of parchment or wax paper and place in the bottom of each pan. Spray the pans and paper with nonstick baking spray. Bake for 30 minutes. Remove from oven and allow to cool completely. To prepare the frosting, mix the pudding mix, whipped topping and pineapple. Place the frosting in the fridge and allow it to chill for about 30 minutes before frosting the cake layers. Place the cake layers on a cake plate and frost between each layer and over the sides and top. Refrigerate until ready to serve.

This Mandarin Orange Cake, also known as Pig Pickin Cake, is so good that it makes such pigs out of us! This is a beloved cake for all sorts of celebrations.

1 box Yellow Cake Mix (I prefer Duncan Hines)
11 ounce can Mandarin oranges diced, undrained
4 eggs
½ cup oil
3.4 ounce Box Instant Vanilla Pudding
16 ounce whipped topping
1 -8 ounce Can crushed pineapple (undrained)

Steps:

  • Preheat oven to 350. Grease and flour three round cake pans or grease one 9x13 baking dish.
  • Place all cake ingredients into a large mixing bowl and beat with an electric mixer until well blended and full combined, about two minutes.
  • Pour into prepared pans and bake until toothpick inserted in center comes out clean, 25-30 minutes, slightly less if you use three pans. If using round pans, allow to cool for ten minutes before turning out to cool completely. If using 9x13, allow to cool completely in pan.
  • For frosting, place pineapple (with juice) and pudding mix in a mixing bowl. Beat until just mixed. Add in whipped topping and beat on low speed for about one minute, until blended in. Frost cake.
  • Cover well and refrigerate. Best if made 2 or 3 days ahead and refrigerated before serving.

Found this recipe awhile ago. When I went to the site where I found it, it was no longer there. None of the other recipes were quite the same. I made this as a Sheet Cake covered in the Pineapple Topping. The Cake turned out wonderfully ! A few days later it tasted even better !

1 (15 1/4 ounce) box yellow cake mix (follow the directions on the cake mix box to make cake batter)
11 ounces mandarin oranges, drained
3 1/2 ounces vanilla instant pudding mix
1 (12 ounce) container Cool Whip

Steps:

  • Prepare cake batter according to directions on the box.
  • Beat in the drained oranges until blended.
  • Pour into greased and floured sheet cake pan or two prepared 9-inch round baking pans.
  • Bake at 350 degrees for 22 to 25 minutes or until a toothpick inserted neat the center comes out clean. Cool for 10 minutes and then transfer from the round pans to wire racks until completely cool. For Sheet cake make sure cake is Completely Cooled before continuing.

  • For the Round cake : Spread some of the frosting on top of one layer, Put other layer of cake on top. Spread the remaining frosting on the top and sides of the cake.
  • Garnish with mandarin oranges or pineapple chunks if desired.

I've only seen two other recipes on here for this, and they are both different than this one, so I'm posting it. This is GOOD! If you want something yummy and refreshing, this is it! The possiblities with this cake are endless, as you can use a variety of fruit and pudding flavors, or flavor combos, in this cake. So have fun! And, enjoy! **Prep time includes time to frost a 3 layer cake. If you want to make this even faster and easier, bake the cake in a large glass casserole dish and then frost that. 1 cup roughly chopped pecans (toasted)
1 15.25 oz box yellow or butter cake mix
1/2 cup self-rising flour (See Cook's note)
1 15 oz can mandarin oranges (drain, reserve 1/2 cup juice)
1/2 cup vegetable oil
4 large eggs
1 tsp pure vanilla extract
Frosting:
1 8 oz block cream cheese (softened)
1 20 oz can crushed pineapple (do not drain)
1 3.4 oz box instant vanilla pudding
1 16 oz frozen whipped topping (thawed)

Steps:

  • Preheat oven to 350°F. Butter and flour three 8 or 9-inch round cake pans or spray with baking spray. Spread pecans on a baking sheet in a single layer. Set aside.
  • Using an electric mixer, beat together, cake mix, flour, mandarin oranges plus 1/2 cup reserved juice, oil, eggs and vanilla. Beat tor 1-2 minutes until fully combined and mandarin oranges are roughly chopped.
  • Divide batter evenly between pans. Bake for 20-25 minutes or until a toothpick inserted into the center comes back clean. Cool completely in pans. (While layers are baking, toast pecans for 6 minutes, then set aside to cool.)
  • To make frosting: Using an electric mixer, cream together cream cheese and pineapple. Add dry vanilla pudding mix. Continue to whip for 1-2 minutes or, just until fully combined.
  • By hand, fold in whipped topping and toasted pecans. Frost between layers, top and sides of cake.
  • May garnish with additional mandarin oranges and whole pecans, if desired.
  • Chill for at least 6 hours, preferably overnight.
  • Store leftovers chilled.
