This quick and easy sheet pan dinner will become your new favorite go to for an easy weeknight dinner. Pierogies, cabbage, and polska kielbasa, a kind of sausage, are cooked all together for a tasty pork main dish that is ready to serve in less than 45 minutes.

16 oz polska kielbasa (sliced into 1 inch pieces)
½ head of cabbage (shredded very thinly)
16 oz pierogies (any flavor)
¼ cup olive oil (divided)
1 ¼ tsp salt (divided)
½ tsp black pepper
⅓ tsp granulated garlic

Steps:

  • Preheat the oven to 400 degrees Grease a cookie sheet with baking spray.
  • Into a bowl, add the cabbage, 3 Tbsp of the olive oil, ¾ tsp salt, the black pepper and granulated garlic. Toss to coat.
  • Lay out pierogies in two short rows on the cookie sheet and drizzle with the remaining 1 Tbsp of olive oil and season with ½ tsp of salt. It is okay if they overlap slightly.
  • Add the sliced polska kielbasa to the cookie sheet and pile the cabbage into the remaining space.
  • Bake for 15 minutes. Stir the cabbage and flip the pierogies. Bake for an additional 15 minutes.

1 tablespoon olive oil or 1 tablespoon vegetable oil
1 (17 ounce) package frozen potato and cheddar pierogies
8 ounces kielbasa, thinly sliced
1 onion, quartered and thinly sliced
1/2 teaspoon caraway seed
4 cups packaged fresh coleslaw mix
1 apple, cored, quartered and thinly sliced
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In large skillet, heat 1 T oil over medium heat.
  • Add pierogies; cook, turning once, until tender and lightly browned, 8-10 minutes.
  • Transfer to a plate.
  • To same skillet over medium-high heat, add kielbasa, onion and caraway seeds; cook, stirring, until lightly browned, 5 minutes.
  • Stir in coleslaw mix, apple, 1/4 t salt and 1/4 t black pepper.
  • Cook until tender, 3 minutes.
  • Add 1/2 cup water and pierogies; cook, stirring 1 minute.
  • Serve with coarse-grain mustard, if desired.

12 oz smoked kielbasa (cut into 1/2 inch thick pieces)
1/2 cup chopped onion
14 oz coleslaw mix
2 tbsp olive oil (or corn, vegetable or canola oil)
2 tbsp butter
16 oz frozen pierogies (mini pierogies will cook faster but, don't have to use them)
1/4 tsp garlic powder
salt and pepper to taste

Steps:

  • First, in a large frying pan with 3 " or so high sides, on high/medium heat, add oil and butter.
  • Next, add onion and cook it for about 2-3 minutes.
  • Then, add the bag of coleslaw mix and stir. Cover and cook for 5 minutes.
  • Next, add the kielbasa, frozen pierogies, garlic powder, salt and pepper to taste. Cover and cook15-20 minutes or until the pierogies are softened.

1 pound kielbasa (pork or turkey), cut into 4 pieces
2 tablespoons whole-grain mustard
2 tablespoons apple cider vinegar
1/4 cup extra-virgin olive oil
1 large white onion, cut into 6 wedges
1 pound frozen potato-and-cheddar pierogies (do not thaw)
Kosher salt and freshly ground pepper
1/4 cup roughly chopped fresh parsley

Steps:

  • Preheat a grill to medium. Grill the kielbasa, turning, until marked, 8 to 10 minutes. Transfer to a baking sheet or platter.
  • Meanwhile, whisk the mustard and vinegar in a large bowl. Slowly whisk in 2 tablespoons olive oil until smooth.
  • Toss the onion and pierogies with the remaining 2 tablespoons olive oil and season with salt and pepper. Grill, covered, until the pierogies thaw and the onion begins to soften, about 5 minutes. Turn the pierogies and onion and continue to grill, covered, until the pierogies are cooked through and the onion is tender, 4 to 6 more minutes. Transfer to the baking sheet or platter.
  • Slice the kielbasa into pieces and add to the bowl with the mustard dressing. Roughly chop the onion and add to the bowl along with the pierogies and parsley. Season with salt and pepper and toss. Divide among shallow bowls.
