Pierogi-hearty, potato-stuffed Polish dumplings-are the heart of this easy casserole. Start with frozen pierogi, then add cubed ham and a deliciously simple onion-cheese sauce for a weeknight bake that brings some wow to the table.

2 tablespoons butter
1 cup diced onions
2 tablespoons Gold Medal™ all-purpose flour
3/4 cup Progresso™ reduced sodium chicken broth (from 32-oz carton)
3/4 cup milk
1 1/2 cups shredded Cheddar cheese (6 oz)
1 package (16 oz) frozen potato and Cheddar pierogies
1 tablespoon water
1 cup cubed ham (6 oz)
2 tablespoons thinly sliced green onions

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In 3-quart saucepan, melt butter over medium heat. Add onions; cook 3 to 4 minutes, stirring occasionally, until just starting to soften. With whisk, stir in flour until smooth. Cook and stir 1 to 2 minutes or until mixture is bubbly.
  • In 2-cup glass measuring cup, mix broth and milk. Gradually stir broth mixture into saucepan. Increase heat to medium-high; heat to boiling, stirring constantly. Boil and stir 1 minute; reduce heat to medium. Stir in 1 cup of the Cheddar cheese. Cook until melted, stirring occasionally. Remove from heat.
  • Meanwhile, place frozen pierogies and water in baking dish; cover with plastic wrap. Microwave on High 2 minutes; stir. Continue microwaving on High 1 1/2 to 2 minutes or until thawed. Pour cheese sauce over pierogies. Top with ham and remaining 1/2 cup cheese.
  • Bake 20 to 25 minutes or until cheese is melted and edges are bubbly. Let stand 10 minutes. Top with green onions.

3 tablespoons butter
2 (8 ounce) ham steaks, diced
1 (4.5 ounce) can sliced mushrooms, drained
2 green onions, diced, or to taste
1 clove garlic, crushed
1 (10.75 ounce) can cream of mushroom soup
1 cup sour cream
½ cup milk
salt and ground black pepper to taste
1 pinch garlic powder, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a jelly roll pan with aluminum foil; spray with cooking spray.
  • Arrange pierogies on the prepared pan; spray pierogies with cooking spray.
  • Bake in the preheated oven for 9 to 10 minutes; flip pierogies and continue baking until lightly golden, 9 to 10 more minutes.
  • Melt butter in a large frying pan over medium heat; cook and stir ham, mushrooms, green onions, and garlic in the melted butter until ham and mushrooms are lightly brown, 5 to 10 minutes. Stir pierogies into ham mixture; cook until flavors have blended, about 5 minutes.
  • Mix mushroom soup, sour cream, and milk together in a bowl; season with salt, pepper, and garlic powder. Pour soup mixture over ham-pierogie mixture. Cook and stir until heated through, 5 to 10 minutes.

1 (12 ounce) package crescent roll dough (such as Pillsbury® Grands!™)
1 (8 ounce) ham steak, cut into 1/2-inch pieces
8 tablespoons shredded Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Unroll crescent dough and separate individual rolls at perforations. Place 1 piece of ham and 1 tablespoon of Gruyere cheese in the center of each triangle. Fold over the 2 longer sides of the triangle, overlapping them to seal ham and cheese.
  • Arrange crescents 1 inch apart on a baking sheet.

6 ounces smoked ham, cut into 1/4-inch cubes (about 1 cup)
1 cup shredded gruyere cheese (about 4 ounces)
1 9-inch pie crust, thawed if frozen
3 large eggs
1 1/4 cups half-and-half
1/4 cup finely chopped fresh chives
Kosher salt and freshly ground pepper
1 tablespoon red wine vinegar
2 teaspoons dijon mustard
3 tablespoons extra-virgin olive oil
1 5-ounce package mesclun greens (about 8 cups)
4 white mushrooms, very thinly sliced

Steps:

  • Set a baking sheet on the middle oven rack; preheat to 425 degrees F. Scatter the ham and cheese in the pie crust. Whisk the eggs, half-and-half, chives, 1/2 teaspoon salt and a few grinds of pepper in a large bowl; pour into the crust. Transfer to the hot baking sheet and bake until the eggs are set and the top is lightly browned, about 30 minutes.

2 cups leftover mashed potatoes
1/2 cup smoked ham, diced
1/4 cup frozen sweet peas, thawed
1/2 cup shredded Gruyere
2 cups bread flour
2 cups all-purpose flour
1/4 teaspoon baking powder
1 teaspoon salt
1 egg, beaten
2 teaspoons olive oil
1 cup warm water
1 gallon salted water
1 small onion, sliced
1/2 stick butter
2 scallions, sliced
Sour cream, to garnish

Steps:

  • In a medium bowl, add filling ingredients and combine well. Set aside.
  • In a large bowl add both flours, baking powder and salt and mix well. In a separate bowl add the remaining dough ingredients and whisk until combined. Add wet ingredients to the dry ingredient using a wooden spoon to form a ball. Cut in half. (You can freeze dough for another time, if desired.)
  • Flour a work surface and roll dough about 1/8-inch thick. Use a 3-inch biscuit cutter to cut out 12 rounds from the dough.
  • Place a dollop of filling in the center of each dough round. Fold dough over filling to form a half moon. Press edges together with your thumb. Seal the edges using the flat tines of a fork.
  • Bring a large saucepan of salted water to a simmer. Add perogies and cook for about 2 minutes. Drain perogies.
  • Meanwhile, in a large skillet over high heat, melt half of the butter and add the onion.
  • Cook onions for 5 to 6 minutes until slightly caramelized. Add perogies and the remaining butter. Allow to saute for a few minutes, then add the scallions.
  • Remove to a platter and serve with sour cream.

One 20- to 22-pound corned ham, boned
10 pounds cabbage
1 to 1 1/2 pounds kale
3 pounds onion
2 1/2 to 3 tablespoons crushed red pepper
1 to 1 1/2 tablespoons black pepper
1 package cheesecloth

Steps:

  • Trim excess fat from ham.
  • Preheat oven to 400 degrees F.
  • Wash cabbage, kale and onions with cold water. Chop or shred cabbage, kale, and onions and place in a large bowl. Add red and black pepper. Mix all ingredients thoroughly.
  • Prepare ham for stuffing by making 1 or 2-inch slits all over the ham, about 1- to 2-inches deep. Using your gloved hand, press stuffing into slits until full. Fill large cavity where bone was located with stuffing also.
  • When finished stuffing, tie ham with string. Wrap ham with cheesecloth and tie securely. Cover ham with aluminum foil and bake for 5 hours.
  • When ham is finished, drain and let ham cool down overnight in the refrigerator before carving. Serve cold.

MINI GRILLED GRUYERE AND HAM SAMMIES WITH CORNICHONS



Mini Grilled Gruyere and Ham Sammies with Cornichons image

Number Of Ingredients 6

2 cups cornichon pickles, plus 24, halved lengthwise
12 slices Pullman loaf, or other tight crumb white bread
1 1/2 cups Dijon mustard
12 thick slices Gruyere
6 slices ham
2 sticks unsalted butter, room temperature

Steps:

  • In a food processor, finely chop 2 cups cornichons until they are a coarse paste.
  • Spread one side of each piece of bread with Dijon. Top each piece of bread with a slice of Gruyere. Place the ham on half of the pieces of the bread and cheese. Spread the cornichon paste on the other half of the pieces of bread and cheese.
  • Preheat a griddle or saute pan.
  • Close the sandwiches and press to secure. Butter the outsides of all the pieces of bread.
  • Place the sandwiches on the griddle or pan and cook until the bread is golden brown, 3 to 4 minutes. Turnover and repeat this process.
  • When the sammies are golden brown and crisp on each side, remove them from the griddle and neatly cut the crusts off the bread. Cut each crustless sandwich into 8 neat mini sammies.
  • Top each mini sammie with a cornichon half and secure it with a toothpick.

4 baking potatoes
2 teaspoons butter
2 teaspoons smashed garlic, about 2 cloves
1/2 cup 2% low-fat milk
1/2 cup shredded gruyere cheese
1/2 cup chopped cooked ham
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 500°.
  • Pierce the potatoes with fork and arrange in a circle in microwave oven.
  • Cover with damp paper towels.
  • Microwave potatoes at high 12 minutes or until done.
  • Rearrange after 6 minutes.
  • Let stand 2 minutes.
  • Split open, lengthwise in half, scoop out pulp, leaving a 1/4 inch shell.
  • Reserve shells, set aside pulp.
  • Heat butter in a small fry pan over medium high heat.
  • Add garlic; sauté 30 seconds.

My great-grandmother's recipe. A little bit of work, but well worth it. We make about 200 every Christmas Eve, and everyone can't wait. The amounts for the ingredients is an estimate, because my great-grandmother does not measure! Serve with a side of sour cream.

1 (16 ounce) container sour cream
3 cups all-purpose flour
2 cups cold mashed potatoes
½ cup butter
2 large onions, chopped

Steps:

  • Place the sour cream in a large bowl, and mix in flour to make a dough. Roll the dough out on a floured surface about 1/16 inch thick, and cut rounds about 3 1/2 inches across using a cookie cutter or a glass. Re-roll the unused dough to make more rounds, up to 4 times -- after that, it gets hard to work with.
  • Place about 1 teaspoon of mashed potatoes in the center of each dough round, fold over into a half-moon shape, and press and seal the edges with a fork. Set the filled pierogies aside under a towel to prevent drying.
  • Melt the butter in a large skillet over medium-low heat, and cook and stir the onions until translucent, 4 to 5 minutes. Remove the cooked onions and set aside, leaving butter in the skillet.
  • Bring a large saucepan of water to a boil, and carefully drop a few filled pierogies at a time into the boiling water. After they float to the surface, allow them to gently boil for about 4 minutes.
  • Re-heat the butter in the skillet over medium heat. Gently scoop the pierogies out of the water (they break easily) and place them in the skillet to brown on the bottom, about 3 minutes. Place the fried pierogies on a buttered baking sheet, sprinkle them with the cooked onions, and keep warm in the oven on low setting until served.
