1 cup finely chopped onion
1/4 cup butter, cubed
2 cups 4% cottage cheese, drained
1 large egg
1/4 teaspoon onion salt
2 cups mashed potatoes (with added milk and butter)
1 cup shredded cheddar cheese, divided
1/4 teaspoon salt
1/8 teaspoon pepper
9 lasagna noodles, cooked and drained

Steps:

  • In a skillet, saute onion in butter until tender; set aside. In a bowl, combine cottage cheese, egg and onion salt. In another bowl, combine potatoes, 2/3 cup cheddar cheese, salt and pepper. Place 3 noodles in a greased 13x9-in. baking dish. Top with cottage cheese mixture and 3 more noodles. Top with potato mixture, remaining noodles and sauteed onion. Top with remaining 1/3 cup cheese. Cover and bake at 350° until heated through, 25-30 minutes. Let stand 10 minutes before serving.

I generally serve this dish with a side of salad to compliment the heaviness of the casserole. Sometimes I add some fried onions beneath the ham for something different.

1 (10 ounce) can cream of whatever soup
1 (10 ounce) can milk
2 cups ham or 2 cups cooked sausage
2 cups cheddar cheese

Steps:

  • Layer the bottom of a 9x13 greased pan with frozen pierogies.
  • Then sprinkle the ham over top of the pierogoies.
  • Mix together the soup and milk and pour over the ham and pierogies.
  • Top with cheese and bake uncovered for 45 minutes at 350.

1 large egg
8 tablespoons unsalted butter, softened, plus more for the baking dish
3/4 cup sour cream, plus more for serving
1 tablespoon chopped fresh chives, plus more for garnish, optional
1 teaspoon kosher salt
2 cups all-purpose flour, plus more for rolling the dough
2 pounds russet potatoes, peeled and cut into large chunks
Kosher salt and black pepper, to taste
1 cup heavy cream, heated until hot
8 tablespoons cold butter, cubed
1 tablespoon olive oil
1 pound bacon, chopped
2 large yellow onions, thinly sliced
1 1/2 cups shredded Gruyere
1 1/2 cups shredded farmer's cheese

Steps:

  • For the pierogi dough: Combine the egg, butter, sour cream, chives and salt with your hands in a bowl. Don't worry if the mixture is not uniform and, as with pie dough, don't overwork it. Add the flour and mix with your hands until a dough forms. Wrap in plastic and refrigerate the dough at least 2 hours and up to 2 days.
  • For the filling: Put the potatoes in a large pot and cover with 2 inches of cold water. Bring to a boil. Season the water generously with salt. Reduce the heat to maintain a simmer and cook until a knife easily pierces the potatoes. Drain and return the potatoes to the pot. Mash, slowly mixing in the hot cream and cold butter. Season with salt and pepper to taste and set aside.
  • Warm the olive oil in a large skillet over medium-high heat. Cook the bacon, stirring occasionally, until crisp, about 10 minutes. Transfer to a plate with a slotted spoon. Reduce the heat to medium, add the onions and toss to coat with the bacon fat. Season with salt and pepper. Cook, stirring frequently, until the onions are caramelized and sweet. Let cool.
  • Preheat the oven to 350 degrees F. Butter a 13-by-9-inch casserole dish or metal pan.
  • Roll out the pierogi dough with a rolling pin on a lightly floured work surface to a 1/8-inch-thick rectangle. Cut into 4-by-13-inch strips, re-rolling the scraps as necessary. You will need 14 to 20 strips.
  • To assemble: Have the mashed potatoes, crisp bacon, caramelized onions, pasta strips and cheeses ready on a work surface. Arrange one layer of pierogi dough strips on the bottom of the buttered casserole dish, slightly overlapping the edges of the strips. Spread a 1/2-inch layer of potatoes on top of the dough. Top with some caramelized onions, bacon and a sprinkling of both Gruyere and farmer's cheese. Repeat the layers to use the remaining ingredients, finishing with the dough, followed by some Gruyere and farmer's cheese. Season the top with pepper.
  • Bake until the casserole is bubbly and the cheese on top is golden brown, about 40 minutes. Let rest 15 to 20 minutes and then serve with a dollop of sour cream and a sprinkle of chives if using.

Steps:

  • Cook noodles, drain.
  • Melt butter and saute the onions until tender, meanwhile cook mashed potatoes according to package.
  • *Steps1 and 2 should be done around the same time.
  • Place half of the cooked noodles in the bottom of a 13x9 casserole dish.
  • Layer with 8 slices of cheese, all potatoes, the remaining noodles and top with remaining 8 slices of cheese.
  • Poke holes through the top layer of cheese; pour butter and onion mixture over top, making sure it seeps through the holes.

½ pound bacon
1 (8 ounce) package kluski noodles
¾ cup chopped onion
4 cups shredded cabbage
1 (12 ounce) container cottage cheese
10 ounces Muenster cheese, cubed
¼ teaspoon dried dill weed
salt to taste
2 tablespoons butter
½ cup bread crumbs
¼ teaspoon paprika, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly crispy, about 10 minutes.
  • In the meantime, fill a large pot with lightly salted water and bring to a rolling boil. Cook kluski at a boil until nearly tender, about 7 minutes. Drain.
  • Drain bacon slices on paper towels. Add onion to the bacon drippings in the skillet. Cook and stir over medium heat until softened, about 5 minutes. Add cabbage; reduce heat to low and simmer for 15 minutes.
  • Stir cottage cheese, Muenster cheese, dill, and salt into noodles. Add bacon, onion, and cabbage and mix well. Turn all ingredients out into a 3-quart baking dish.

2 c double cheddar shredded cheese, divided

  • 1. Preheat oven to 375^. Spray a 9x13-inch baking dish and set aside. --- Cook noodles without salt until al dente. Drain. Rinse.

8 oz lasagna noodles, cooked, rinsed and drained
5 lb potatoes, peeled, chunked, cooked until tender
1/2 c sour cream
1 1/2 stick butter
1 large sweet onion, chopped
1 large jalapeno, minced ( optional )
4 - 5 clove garlic, minced
1 1/2 tsp salt
1 1/2 tsp pepper
1 - 8 oz ( 2 cups ) shredded, sharp cheddar cheese - divided
6 oz velveeta cheese, cubed
1/2 - 3/4 c half n half
1 tsp garlic powder
1 Tbsp dried parsley
3/4 lb bacon, cooked and crumbled
PREP TIME DOES NOT INCLUDE TIME FOR COOKING POTATOES AND NOODLES

Steps:

  • 1. First - boil potatoes till fork tender.
  • 2. While potatoes are boiling, prepare noodles; rinse and drain.
  • 3. In a skillet or dutch oven saute onions, jalapeno and garlic until onions are translucent. Reserve 1/2 cup of onion/butter mixture.
  • 4. When potatoes are finished, drain and place in large bowl with the Velveeta, 1 cup cheddar, 1/2 cup sour cream, salt, pepper, parsley, all but 1/2 cup butter / onion mixture, 1/2 - 3/4 cup half n half. Mix potatoes with hand mixer until smooth.
  • 5. Preheat oven to 350 degree F. Spray a 9 x 13 casserole dish with nonstick cooking spray.
  • 6. Evenly spread half lasagna noodles on the bottom of casserole dish. Spread 1/2 potato mixture. Sprinkle evenly with a hand full of cheese.
  • 7. Evenly spread the remainder of noodles over potatoes.
  • 8. Spread remainder of potatoes over the noodles. Sprinkle the crumbled bacon evenly. Spread remaining onion/butter mixture over potatoes. Sprinkle with remaining cheese.
  • 9. Place casserole in oven for 30 - 35 minutes or until browning and bubbly. Let set for at least 5 minutes before cutting. Now, enjoy this delicious, satisfying pierogi casserole.

1 jars cheez whiz
8 ounces cream cheese
9 units lasagna noodles

Steps:

  • Preheat oven to 350*. Saute the onions in the butter till golden. Mash the potatoes with the Cheez Whiz and cream cheese.
  • Then grease 9x13-inch pan and begin layering - casserole noodles first, then potato mixture, and finally onions.
  • Then bake for 40 minutes. After baking, brown under broiler for 5 minutes additional.

We love pierogis and this casserole is a modern rendition of the traditional meal. It really tastes like a pierogi. The layers of pasta and potatoes are cheesy and delicious. As if that wasn't decadent enough, buttered onions are mixed into the potatoes and baked on top. Oh my... This is a savory dish that's warm and comforting....

10-12 medium potatoes, peeled and mashed
2 bag(s) cheddar cheese, shredded; 8 oz each
2 1/2 stick butter or margarine
2 medium onions, diced
1 lb lasagna noodles, cooked

Steps:

  • 1. Cook noodles according to package.
  • 2. Cut potatoes into equal chunks.
  • 3. Add potatoes to boiling water and cook until tender.
  • 4. While your potatoes are boiling, saute onions in butter until soft.
  • 5. Mash your potatoes while hot.
  • 6. Add in cheese and beat with mixer.
  • 7. Add 1/3 of the onions/butter mixture to the potato mixture and salt and pepper to taste.
  • 8. Preheat oven at 350. Generously butter a 9x13" baking pan/dish. Place a layer of cooked noodles to cover bottom of pan.
  • 9. Then a layer of potato mixture.
  • 10. Repeat ending with noodles.
  • 11. Spoon the rest of the butter and onion over top.
  • 12. Cover with foil and place pan on a cookie sheet just in case the butter runs over the sides. Bake at 350 until heated through - approximately 30-40 min.
  • 13. Optional: I take off foil after 30-40 minutes and sprinkle more cheese on top and place back in oven until cheese is melted.
