This recipe is from an old cookbook from about 1960. You can add almond extract or Kirsch to the filling if you like almond flavoring. I usually add about a tablespoon of Kirsch. This makes 2- 9" pies. You could half the recipe.

6 -6 1/2 cups thawed frozen dark sweet cherries, and juice
1/8 teaspoon salt
1/2-1 cup sugar (I only use 1/2 cup, we don't like our pies too sweet)
4 -5 tablespoons cornstarch
2 tablespoons lemon juice, fresh or bottled

Steps:

  • Reserve about 1/2 cup juice and mix the cornstarch in it.(4-5 tbsp, depending on how thick you like your filling)
  • Mix sugar with cherries and juices and cook till bubbling.
  • Stir constantly if cooking on stove stop.
  • In the microwave I cook at 5 minute intervals and stir in between.
  • Add the reserved juice/cornstarch mixture and stir to mix.
  • Cook for about 3 minutes until thickened.
  • Cool and use in your favorite pie crust.

4 cups pitted tart red cherries
1 cup white sugar
¼ cup cornstarch

Steps:

  • Place cherries into a saucepan over medium heat, and cover the pan; heat cherries until they release their juice and come to a simmer, 10 to 15 minutes. Stir often.
  • In a bowl, whisk the sugar with cornstarch until smooth; pour the mixture into the hot cherries and juice, and thoroughly combine. Return to low heat, bring to a simmer, and cook until the filling has thickened, about 2 minutes; remove from heat, let cool, and use as pie filling.

double crust pie crust (to fit an 8-inch pie pan, see my Kittencal's No-Fail Buttery Flaky Pie Pastry/Crust or use your own favorite pastry recipe)
1 (12 ounce) bag frozen unsweetened cherries (thawed and very well drained)
3/4 cup sugar
1 tablespoon cornstarch, plus
1 1/2 teaspoons cornstarch
1 tablespoon quick-cooking tapioca, plus
2 teaspoons quick-cooking tapioca
1 teaspoon half-and-half cream
2 -3 teaspoons sugar

Steps:

  • Set oven to 425 degrees.
  • Prepare a glass 8-inch pie plate.
  • Roll out one pastry into about a 9-1/2-inch circle.
  • Gently fit into bottom of the pie plate.
  • In a bowl combine the well-drained cherries, 3/4 cup sugar, cornstarch and tapioca; toss gently to combine.
  • Spoon the cherry mixture into the pie crust.
  • Top with remaining pastry.
  • Press edges of bottom and top pastry together, then trim and flute.
  • Cut a couple of steam vents in the top pastry.
  • Brush the top of the crust with half and half cream, then sprinkle with 2-3 teaspoons sugar.
  • Place the pie on a baking sheet to catch spills.
  • Bake at 425 degrees for 10 minutes.
  • Reduce heat to 375 degrees, continue to bake for about 45-50 minutes longer or until crust is golden and the pie is bubbly (cover edges with foil if necessary to prevent browning).
  • Cool pie on a rack, before slicing.

½ cup all-purpose flour
⅓ cup brown sugar
3 tablespoons white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon ground ginger
¼ teaspoon ground cloves
⅛ teaspoon salt
1 pinch ground nutmeg
3 tablespoons unsalted butter, cut into chunks, softened
⅓ cup rolled oats
2 ½ cups frozen pitted cherries
1 (9 inch) deep-dish pie crust
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, brown sugar, sugar, cinnamon, allspice, ginger, cloves, salt, and nutmeg for crumble topping in a food processor; process until thoroughly mixed, about 30 seconds. Add butter through the chute and process, scraping the sides as needed, until thoroughly mixed and mixture looks like wet sand.
  • Transfer to a large bowl and stir in oats until thoroughly combined.
  • Arrange frozen cherries in the pie crust in an even layer. Spread pie filling over top, then sprinkle with crumble topping. Place pie on a sheet pan.
  • Bake in the preheated oven for 1 hour. Remove from the oven and let cool for 2 to 3 hours before serving.
