RACLETTE (MELTED CHEESE WITH POTATOES AND PICKLES)

1/2 pound imported Swiss raclette cheese, cut into 16 slices approximately 1/8-inch thick, 5-inches long and 2-inches wide
4 freshly boiled small new potatoes, peeled and kept hot
4 to 8 small sour gherkins, preferably imported cornichons
4 to 8 pickled onions

Steps:

  • Preheat the oven to 500 degrees. Heat four 10-inch oven-proof dinner plates in the oven for 3 to 5 minutes. To ensure the success of the raclettes, the plates must be very hot.
  • When ready to serve, remove the plates from the oven. Working as quickly as possible, arrange four slices of cheese in the center of each plate, overlapping them slightly. The cheese should begin to sizzle once it comes into contact with the plate. At once, place the four plates on the floor of the oven. Let cheese melt in the oven for about 2 minutes, being careful not to let it brown. Remove from the oven, place a potato and one or two gherkins and pickled onions on the side of each plate and serve at once. Serve each plate on a service plate to prevent scorching the table.

Fried Chicken Sandwich with Cabbage Slaw, Pickles, American Cheese and Maple Mustard Sauce image

1/4 head purple cabbage, thinly sliced (about 2 cups)
Kosher salt
1/4 cup distilled white vinegar
2 carrots, peeled and grated
1/2 red onion, thinly sliced
1 garlic clove, minced
1/4 cup mayonnaise
1 cup apple cider vinegar
2 tablespoons kosher salt
1 tablespoon granulated sugar
A few dashes hot sauce
2 Persian cucumbers, thinly sliced on a mandoline
Canola oil, for frying
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon plus 1 teaspoon chipotle chile powder
1 tablespoon mustard powder
2 cups buttermilk
2 boneless, skinless chicken breasts, sliced in half on a bias
2 cups all-purpose flour
2 tablespoons kosher salt
1 tablespoon baking soda
4 seeded buns, split
8 slices American cheese
1/4 cup Dijon mustard
2 tablespoons maple syrup

Steps:

  • For the slaw: To a large bowl, add the cabbage, a generous pinch of salt, vinegar, carrots, onion and garlic. Toss to combine, then set aside to sit for 15 to 20 minutes. Add the mayonnaise and mix to combine.
  • For the quick pickles: To a bowl or container, add the vinegar, 1 cup water, the salt, sugar and hot sauce. Stir well to combine. Add the cucumbers, then allow to sit for 20 minutes.
  • For the chicken: Fill a deep fryer or large heavy-bottomed pot with 2 inches of canola oil. Heat to 350 degrees F. Set a rack inside a rimmed sheet pan.
  • To a large bowl, add 1 tablespoon of the garlic powder, 1 tablespoon of the onion powder, 1 tablespoon of the chipotle powder, mustard powder and buttermilk. Add the chicken and submerge, ensuring the chicken is fully coated. Allow to marinate for 15 minutes. To another large bowl, add the flour, the remaining 1 tablespoon garlic powder, the remaining 1 tablespoon onion powder, 1 tablespoon of the salt and the baking soda. In a small bowl, combine 1 tablespoon salt and the remaining 1 teaspoon chipotle powder.
  • Preheat the oven to 400 degrees F. Remove the chicken from the buttermilk mixture and place into the seasoned flour. Toss until the chicken is fully coated, then transfer it back into the buttermilk, and then back into the seasoned flour so the chicken is double coated. Dust off any excess flour, and gently place the chicken into the hot oil. Fry the chicken in batches until the crust is golden brown and crispy and the chicken reaches an internal temperature of 160 degrees F, 4 to 5 minutes. Place on the prepared sheet pan and season the chicken immediately with the chipotle salt. Transfer to the oven and continue to cook for another 5 minutes or until the chicken reaches an internal temperature of 165 degrees F.
  • For the maple mustard sauce: Mix the Dijon and maple syrup in a small bowl to combine.
  • To assemble: Spread some of the maple mustard sauce followed by a slice of cheese on the top and bottom of each bun. Add the fried chicken, then the slaw and finally the pickles. Serve with more maple mustard sauce on the side for dipping.

8 ounces uncooked elbow macaroni
2 dill pickles, chopped
6 ounces Colby-Jack cheese, cubed
1 (5 ounce) can albacore tuna in water, drained and flaked
½ cup light mayonnaise
½ teaspoon prepared yellow mustard
1 teaspoon dill pickle juice

Steps:

  • Bring a saucepan of lightly salted water to a boil. Add the macaroni, and cook until tender, about 7 minutes. Rinse under cold running water, then drain well and pat lightly with paper towels.
  • In a large bowl, stir together the macaroni, pickles, cheese, tuna, mayonnaise and mustard. Season with a splash of pickle juice, salt and pepper. Cover, and refrigerate for at least 30 minutes before serving.

  • When ready to serve, remove the plates from the oven, grasping them with potholders, and, as quickly as possible, arrange four slices of cheese in the center of each plate, overlapping them slightly. The cheese should begin to sizzle as soon as it comes in contact with the plate.
  • At once, place the four plates on the rack lowest to the source of heat.
  • In about 5 to 6 minutes the cheese should melt to a creamy, bubbly mass; do not let it turn the slightest bit brown.
  • Remove from the oven, place a potato and one or two gherkins and pickled onions on the side of each plate and serve at once, setting each plate on a service plate to prevent it from scorching the table.

Steps:

  • Lay slices of ham on paper towel, place another towel on top and blot gently,spread cream cheese on ham slices. Take a pickle in a paper towel and squeeze gently to remove most of the juice. Lay on the ham slice and roll up tightly.
  • When the pickles are all rolled take a very sharp knife and slice into pinwheels cut the ends off and set aside. Lay the slices on serving platter.
  • I can't keep anyone watching to keep from eating as I'm cutting, so I tell them the ends are fair game!
  • When I buy my pickles, I look for the ones that are long,straight and slender, it makes rolling them up easier.

I love cucumbers, and the next step in keeping cucumbers year round is to pickle them. There is nothing more glorious in nature then opening a processed and canned dill pickle from the summer months. Just biting into one sets off a whole memory of the previous garden and all the treasures it yielded. The second part of the recipe really is based on the typical and very heart warming grilled cheese sandwich. Talk about memories! Remember when you were a youngster, and the rain was pouring sheets outside? You were chilled to the bone from trouping around in it and Mom met you at the front door, helped you out of your wet clothes and gathered the old cast iron skillet out of the cupboard. She then buttered two slices of homemade bread with real butter and put two wonderful slices of cheddar cheese between the bread and grilled away until the sides of the bread became crusty and brown? The inside oozed the cheese out, as it was ready to be devoured alongside potato chips and a pickle. Since I saw this recipe from "Rachel Ray" I have adapted this for the use of my summer pickles and pumpernickel or rye bread. But really you get your pickle, get your bread, some great cheese slices and there you go. Stay in from the rain of the day, and use your cast iron skillet for a trip down memory lane.

4 tablespoons butter, softened
8 slices pumpernickel bread (or use a bread of your choice)
8 teaspoons Dijon mustard
2 large dill pickles, thinly sliced lengthwise
8 slices swiss cheese, folded in 1/2

Steps:

  • Heat a skillet over medium heat.
  • Spread butter on 1 side of all 8 slices of bread. Spread Dijon mustard on the opposite side of 4 slices of bread.
  • Top the mustard coated bread slices with a folded slice of Emmentaler.
  • Top cheese with slices of pickle and set tops in place with the buttered side facing up.
  • Place the sandwiches in hot skillet and cook 3 to 4 minutes on each side, toasting and crisping the bread.
  • Cut the sandwiches corner to corner and serve.
