SWEET PICKLED BANANA PEPPERS



Sweet Pickled Banana Peppers image

I love these peppers on hot dogs, hamburgers or what ever. They are so easy to make. You can double the recipe with no problem. I have never water bathed these pickles the jars have always sealed securely and I have used them a year or so later, Just be sure that the top has sealed and you have heard it POP. If the jar does not seal fully store in the fridge and use within a couple of months. As you can see from the picture, I often mix hot Jalapeno, Anaheim, Banana and any other peppers on hand - the result is medium hot pickled peppers. If you are at all concerned about food safety and would feel better water-bathing them, by all means do so - Just follow the instructions is any canning book - I recommend 15 minutes in the water-bath.

1/2 lb banana pepper, seeded and sliced crossways into rings
2 cups white vinegar
2/3 cup white sugar
1/2 teaspoon mustard seeds
1/2 teaspoon celery seed

Steps:

  • Sterilize 2- 1/2 pint jars.
  • Bring the vinegar, sugar, mustard seed and celery seed to a rolling boil.
  • Place peppers in the 1/2 pint jars.
  • Pour on the hot pickling juice and bring liquid to within 1/2" of the top.
  • Be sure the edge of the jar has no juice on it.
  • Place lids and screw on bands finger-tip tight.
  • Seal jar and leave for 2 weeks.**.
  • **This is an heirloom recipe that uses a method no longer recommended by the USDA/NCHFP (National Center for Home Food Preservation). Current guidelines recommend processing in a boiling water bath at least 10 minutes at sea level to 1000 feet in elevation (more time at higher elevations) and left to cool, upright and undisturbed, on a cloth-protected counter for 24 hours. Check for seal; if the jar hasn't sealed, either re-process the jars within the 24 hours or refrigerate and use first.

5 large sweet red peppers
8 banana peppers (about 1 pound)
1 medium onion, thinly sliced
8 garlic cloves, peeled
4 teaspoons canola oil
2-1/2 cups water
2-1/2 cups white vinegar
1-1/4 cups sugar
2 teaspoons canning salt

Steps:

  • Cut red and banana peppers into strips, discarding seeds. Pack peppers into 5 hot 1-pint jars to within 1/2 in. of the top. Divide the onion, garlic and oil among jars., In a large saucepan, bring water, vinegar, sugar and salt to a boil. Carefully ladle hot liquid over pepper mixture, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

My own recipe. My wife and i love these sweet peppers. They are great on hot dogs,hamburgers,sub sandwiches or just about anything you wanna put them on or in.

1/2 lb banana pepper, seeded and slicded across, so you have rings
2 cups white vinegar
2/3 cup white sugar
1 tablespoon black peppercorns
1/2 teaspoon mustard seeds
1/2 teaspoon celery seed
1 teaspoon sea salt
1 large onion, halved and cut into 1-inch slices
6 bay leaves

Steps:

  • Sterilize 2- 1/2 pint jars.
  • Bring the peppers corns,vinegar, sugar, mustard seed, celery seed, and remaining ingredients to a rolling boil.
  • Remove bay leaves unless you prefer to leave in for appearance.
  • Place peppers in the 1/2 pint jars.
  • Pour on the pickling juice.
  • Bring brine to within 1/2" of the top.
  • Be sure the edge of the jar has no juice on it.

4 ounces guanciale, speck, pancetta or bacon, 1/4-inch dice
3 to 4 cloves garlic, chopped or sliced
2 medium or 1 large red bell pepper, seeded and chopped
2 cubanelle peppers, seeded and chopped
1 red onion, chopped
1 Fresno pepper, seeded and chopped
About 3 tablespoons hot pickled Italian cherry peppers, chopped, plus 2 tablespoons of their pickle juice
One 28- to 32-ounce can D.O.P. San Marzano tomatoes
2 cups passata or tomato puree or tomato sauce
A few fresh leaves basil, torn
A handful of fresh flat-leaf parsley leaves, chopped
Salt and freshly ground black pepper

1 pound bucatini pasta (hollow spaghetti)
2 tablespoons butter
Pecorino cheese, to pass at table

Steps:

  • Heat a deep skillet or Dutch oven with the EVOO, 2 turns of the pan, over medium-high heat. Add the guanciale and brown until lightly crisp. Add the garlic, bell pepper, cubanelles, onions and fresno peppers, and cook until tender, 7 to 8 minutes. Add the pickled peppers and a big splash of their juice, about 2 tablespoons, and deglaze the pan - hold your head back or you'll really clean out your sinuses. Add the tomatoes and crush up a bit, then stir in the passata and basil. Simmer to thicken 30 minutes or so. Add the parsley, season with salt and pepper. Cool and store for a make-ahead meal. Reheat over medium flame.
  • To serve: While the sauce heats, bring a large pot of water to a boil. Salt the water and cook the pasta to al dente. Reserve a ladle of the starchy cooking water and drain. Toss the pasta with the butter and half the sauce. Add a little starchy water if too thick. Serve the pasta in shallow bowls, topped with the remaining sauce and pecorino cheese.

This is a recipe for preserving sweet bell peppers after roasting them and some garlic. I like to serve mine chopped on toasted baguette slices with some crumbled feta---yummy and easy appetizer. It makes a smaller batch so you may want to double it if you have a lot of peppers. Recipe from Small-Batch Preserving. (Please use appropriate canning methods.) 6 -8 small sweet red peppers (about 2 pounds)
1 large garlic clove, unpeeled
1/2 cup dry white wine
1/2 cup white vinegar
1/4 cup cider vinegar
1/2 cup onion, chopped
2 tablespoons granulated sugar
1/2 tablespoon dried oregano (or 1T fresh)
1 teaspoon pickling salt

Steps:

  • Roast peppers and garlic on a rack under the broiler until skins are blistered and starting to blacken. Place peppers in a paper bag until cool enough to handle; set garlic aside. When peppers are cool, remove skins, cores and seeds. Cut lenghwise into strips about 1 inch wide; set aside.
  • Combine wine, vinegars, onion, sugar, oregano and salt in a small suacepan. Squeeze roasted garlic to remove from skin, mash and add to saucepan. Bring mixture to a boil over high heat, reduce heat and boil gently for 5 minutes.
  • Remove hot jars from canner and pack peppers into jars to within 3/4 inch of top rim, being careful not to pack too tightly. Pour boiling vinegar mixture including onions to within 1/2 inch to rim. Process 15 mintues for half-pint jars.

3/4 lb bell pepper (it looks better if you use a mix of red, green, yellow and orange)
1/2 onion, halved and thinly sliced
1 cup sugar
1 cup water
3/4 cup distilled white vinegar
1/2 cup cider vinegar
1 teaspoon celery seed
1 teaspoon black peppercorns
1/4 teaspoon yellow mustard seeds
1 garlic clove, smashed
1 bay leaf
1/2 teaspoon salt

Steps:

  • Remove stem end and seeds from the peppers; slice in long, thin strips and place in a bowl with the onions.
  • In a large saucepan, combine sugar, water, vinegars, celery seeds, peppercorns, mustard seeds, garlic, bay leaf, and salt; bring to a boil, stirring to dissolve the sugar.
  • Reduce heat to low and simmer, covered, for 15 to 20 minutes.
  • Pack pepper and onion in a hot, sterilized pint jar; pour hot vinegar mix over top and let cool.

3 to 4 red peppers, quartered and seeded
1 cup white distilled vinegar
3/4 cup sugar
3/4 cup water
1/2 teaspoon pickling spices

Steps:

  • Preheat a broiler.
  • Broil the peppers until the skin has blistered and peppers are cooked through, 7 to 9 minutes. Place in a paper or plastic bag and seal immediately. Let stand for 15 minutes, or until cool enough to handle, this will make them easier to peel. Peel peppers, discard skins.
  • Place the peeled peppers in a sterilized, heatproof jar with a sterilized, tight fitting lid. In a medium, non-reactive saucepan, bring the vinegar, sugar, water, and pickling spices to a boil. Pour hot mixture over peppers. Place lid on jar and let stand at room temperature for 2 days.

8 whole black peppercorns
2 teaspoons dried Mexican oregano, toasted (page 161)
2 bay leaves
2 whole cloves
3 cloves garlic
2 cups water
2 cups distilled white vinegar
2 1/2 teaspoons kosher salt
1 1/2 tablespoons sugar
2 red onions, very thinly sliced
1 sweet red bell pepper, cored, seeded, and thinly sliced
1 sweet yellow bell pepper, cored, seeded, and thinly sliced

Steps:

  • To prepare the pickling liquid, place the peppercorns, oregano, bay leaves, cloves, and garlic in cheesecloth and tie into a pouch. In a saucepan, place the seasoning bundle, the 2 cups water, vinegar, salt, and sugar and simmer over medium-low heat for 30 minutes. Remove and discard the seasoning pouch. Add the onions and bell peppers to the pickling liquid and bring to a boil over medium-high heat. Remove from the heat when the liquid comes to a boil. Transfer to a container.
  • The vegetables will keep in the liquid for about 1 month in the refrigerator.

MALTA-BRAISED SHORT RIBS WITH PICKLED SWEET PEPPERS AND YUCCA MASH



Malta-Braised Short Ribs with Pickled Sweet Peppers and Yucca Mash image

This recipe is my Spanglish version of classic American beef stew and potatoes. I love unctuous short ribs braised in malta, topped with bright pickled peppers and plated with mashed yucca instead of potatoes. If you're not familiar with it, malta is a popular Puerto Rican non-alcoholic beverage brewed from barley and hops. I grew up drinking it on the island, and it's perfect for a long braise of short ribs, as its light carbonation helps tenderize while its earthy molasses notes complement the beef. In addition, buttery, nutty yucca is an ideal canvas for gravy, while quick-pickled peppers add much-needed acidity.

1 yellow onion, chopped
1 green bell pepper, seeded and chopped
1 bunch cilantro, leaves and stems roughly chopped, plus more for garnish
8 garlic cloves, peeled
2 tablespoons olive oil, plus more if needed
2 tablespoons canola oil
1 1/2 teaspoons sazon seasoning with culantro and achiote, such as Goya
8 English-cut beef short ribs (about 5 pounds)
Kosher salt and freshly ground black pepper
1 1/2 cups chicken stock
1 teaspoon dried oregano
2 dried bay leaves
1 tablespoon tomato paste
1 tablespoon distilled white vinegar
One 12-ounce bottle malta
Yucca Mash, recipe follows, for serving
Pickled Sweet Peppers, recipe follows, for serving
1 pound frozen yucca, thawed
Kosher salt
1/2 cup heavy cream
4 tablespoons salted butter, cut into pieces
1/2 cup thinly sliced multi-colored small sweet peppers (use a mandoline)
2 cloves garlic, halved
1/4 cup distilled white vinegar
1 teaspoon honey
Pinch of kosher salt

Steps:

  • Preheat the oven to 325 degrees F.
  • To make the green paste, add the onion, green pepper, cilantro leaves and stems, garlic and olive oil to a blender and process until a paste forms. If necessary, add a little extra olive oil to help move the paste along.
  • Set a large cast-iron skillet over medium-high heat and add the canola oil and sazon.
  • While the oil heats up, dry the short ribs with a paper towel and cover them in a generous amount of salt and pepper. Working in batches, sear the short ribs on all sides, about 4 minutes per side. Remove the ribs to a plate. Add 1/2 cup of the chicken stock to the skillet, stir to deglaze and then set aside.
  • Place a large Dutch oven over medium heat. Add the green paste and cook until fragrant, about 1 minute. Pour in the chicken stock from the skillet, then add the oregano, bay leaves, tomato paste, vinegar, malta and remaining 1 cup chicken stock. Bring to a simmer and add the seared ribs to the Dutch oven.
  • Cover the pot, transfer to the oven and cook until the ribs are very tender, about 2 1/2 hours. To serve, spoon the Yucca Mash into a shallow bowl, top with the ribs and spoon over the sauce. Garnish with Pickled Sweet Peppers and cilantro leaves.
  • Bring a large saucepan of water to a boil. Add the yucca to the boiling water and enough salt so the water tastes like the sea. Cook until the yucca is fork-tender, 15 to 20 minutes. Drain and set aside.
  • Add the cream and butter to a medium pan set over medium heat. As soon as it starts to simmer, add the yucca and mash with a fork or potato masher until just incorporated. Do not overmix as it will make the yucca gluey. Add salt to taste.
  • Put the peppers and garlic in a 12- to 16-ounce mason jar.
  • In a small pot, bring the vinegar, honey, salt and 1/4 cup water to a boil.
  • Add the pickling liquid to the mason jar almost to the tippy top. Let it cool, then put on the lid. Set it aside until serving.
