Sausage and Cheese-Stuffed Poblano Peppers with Quick-Pickled Red Onions and Radishes image

Get ready for a new take on stuffed peppers! Stuffed with spiced ground pork, topped with melty cheese and garnished with quick pickles and cilantro, these poblano peppers are as beautiful to look at as they are delicious! You can swap out the pork for any protein you'd like and use the extra pickles for sandwiches or salads.

1/3 cup plus 1 tablespoon white vinegar
1/2 teaspoon granulated sugar
Kosher salt
1 small red onion, thinly sliced lengthwise
2 small radishes, thinly sliced
1 tablespoon olive oil
4 large poblano peppers, stemmed, halved lengthwise and seeded
1 pound ground pork
2 cloves garlic, grated
1 tablespoon smoked paprika
2 teaspoons chili powder
2 teaspoons ground cumin
6 ounces shredded jack cheese
Cilantro leaves and tender stems, for garnish

Steps:

  • Position a rack on the top of the oven and preheat to broil.
  • Combine the vinegar, sugar, 1 teaspoon salt and 1/3 cup warm water in a mason jar. Cover and shake to combine until the sugar and salt dissolve. Add the onions and radishes and set aside.
  • Drizzle the oil over the peppers, season with 1 teaspoon salt and arrange on a baking sheet cut-side up. Broil on the upper rack of the oven until blistered and softened, 4 to 6 minutes.
  • Mix together the pork, garlic, paprika, chili powder, cumin and 2 teaspoons salt in a large bowl. Transfer to a large skillet over medium-high heat and cook, breaking up the pork into small pieces with a wooden spoon, until browned and cooked through, 5 to 6 minutes. Remove from the heat, drain the excess fat and set aside to cool.
  • Stir half of the cheese into the pork. Distribute the mixture evenly in the cavities of the peppers. Top with remaining cheese and broil until melted and bubbly, 2 to 3 minutes.
  • Top with the pickled onions and radishes. Garnish with cilantro and enjoy!

1 1/2 cups distilled white vinegar or apple-cider vinegar
2 teaspoons sugar
1/2 teaspoon whole black peppercorns
1/2 teaspoon coriander seeds
3 whole allspice berries
2 dried bay leaves
Coarse salt
2 small red onions (8 ounces), cut into rings
8 baby bell peppers (8 ounces), cut into rings
1 small jalapeno, cut into rings

Steps:

  • Combine vinegar, 3/4 cup water, sugar, spices, and 2 tablespoons salt in a saucepan. Bring to a boil, stirring until sugar is dissolved. Fill clean containers tightly with vegetables. Add boiling brine to cover completely. Let cool completely. Cover, label, and refrigerate at least 1 week before serving, or up to 3 months.

Sunny says, "Some of my first memories of grilling - and hot dogs to be specific - were in Germany using bratwursts and shoving them in chewy, crusty bread called 'brotchen.' Currywurst is a famed dish there served with cooked and sliced bratwurst covered with a spicy-sweet curry ketchup sauce. This is my version of the dish that's summer- and grill-ready!"

6 links fresh, pork bratwurst
4 cups your favorite beer, such as Corona
1 tablespoon liquid smoke
2 teaspoons red pepper flakes
1/2 teaspoon whole black peppercorns
2 cloves garlic, smashed
1 medium red onion, halved and sliced
1 green bell pepper, seeded, halved and sliced
1 red bell pepper, seeded, halved and sliced
1 yellow bell pepper, seeded, halved and sliced
Kosher salt
Vegetable oil, for brushing
3/4 cup sugar
3/4 cup apple cider vinegar
6 hot dog buns, demi-baguettes or any bratwurst-length crusty bread, sliced like hot dog buns
Sunny's Curry Ketchup, for serving, recipe follows
3 pounds Roma tomatoes, quartered (10 to 12 tomatoes)
4 cloves garlic, smashed
1 medium red onion, quartered
One 3-inch-long cinnamon stick
One 1/4-inch-thick disc fresh ginger
1 star anise pod
1 cup sugar
1/4 cup mild yellow curry powder
1/2 teaspoon ground allspice
1/4 teaspoon whole black peppercorns
Kosher salt
1/4 cup light corn syrup
2 tablespoons apple cider vinegar, plus more if needed

Steps:

  • In a large pan with straight sides, or in a pot, add the bratwurst links, beer, liquid smoke, red pepper flakes, whole black peppercorns, garlic, onion, all of the bell peppers and a nice pinch of salt. Bring to a boil, and then lower to a simmer for 15 minutes. Flip and nudge the bratwursts if they stick out above the liquid as they cook.
  • Brush a grill with oil, then heat the grill to medium-high. Remove the bratwursts from the liquid and place on the grill. Cook 15 minutes, turning every 5 minutes to brown and blacken all sides (don't worry about the concave side). Remove from the grill and allow to rest under aluminum foil for 10 minutes.
  • Preheat the oven to 150 degrees F.
  • Meanwhile, add the sugar and vinegar to the pan with the cooked peppers and onions. Stir into the beer mixture until the sugar dissolves. Simmer for 15 minutes.
  • Warm the buns or bread in the oven for 5 to 10 minutes, depending on the bread.
  • Slice each bratwurst into 1/2-inch discs and place inside the warmed bread. Using tongs, grab and shake any excess liquid off the quick-pickled peppers and onions, then top each bratwurst with an equal amount. Top that with a nice and hefty dollop or two of Sunny's Curry Ketchup.
  • Place the tomatoes, garlic, onion, cinnamon stick, ginger, star anise, sugar, curry powder, allspice, peppercorns, a pinch of salt, corn syrup and vinegar in a stock pot over medium heat. Bring to a boil, and then lower to a light simmer. Use a potato masher or wooden spoon to mash down and break up the tomatoes as it heats up.
  • Cover and simmer on low for 45 minutes, stirring occasionally. Uncover and cook 45 minutes more to evaporate and thicken while stirring occasionally. Remove the cinnamon stick, anise pod and ginger. Using an immersion blender or a stand blender (slightly cool?), blend until smooth. Pour into an airtight container and refrigerate overnight or until cool. Taste and if needed, add vinegar 1/2 teaspoon at a time to balance the sweetness.

3 red bell peppers
3 yellow bell peppers
8 ounces pearl onions
3 garlic cloves
3 cups water
3/4 cup rice vinegar
3/4 cup white-wine vinegar (not seasoned)
8 whole juniper berries*
1/2 cup sugar
1 tablespoon salt
*available in spice section

Steps:

  • Halve bell peppers and discard seeds, ribs, and blossom ends. Cut peppers lengthwise into 1/2-inch-wide irregular pieces and transfer to a large heatproof bowl. Trim and peel onions. Halve garlic cloves. Add onions and garlic to peppers. In a saucepan bring water and vinegars to a boil and add juniper berries, sugar, and salt. Simmer mixture, stirring occasionally, 3 minutes, or until sugar is dissolved. Pour vinegar mixture over peppers and onions, covering them completely, and cool. Chill peppers and onions in an airtight container at least 12 hours and up to 5 days.

1 cup ricotta, preferably fresh
3/4 cup finely grated Parmesan
1 cup grated Monterey Jack
1 tablespoon minced garlic
2 tablespoons extra-virgin olive oil, plus more for baking sheet and drizzling
Coarse salt and freshly ground pepper
Quick Basic Pizza Dough, or 1 pound store-bought dough
1 1/2 cups Pickled Onions and Peppers
2 ounces soppressata, very thinly sliced
Fresh flat-leaf parsley leaves, for serving (optional)

Steps:

  • Preheat oven to 500 degrees. Stir together cheeses, garlic, and oil in a small bowl; season with salt and pepper.
  • Divide dough in half; let rest 10 minutes. Brush a baking sheet with oil. Stretch one piece of dough into a 10-inch round on sheet. Dot with half of cheese mixture, then top with half of pickles and half of soppressata.
  • Bake until crust is golden brown and cheese is bubbling, 10 to 12 minutes. Drizzle with oil, top with parsley, and serve. Repeat with remaining dough and toppings.

Not only do they pack a great punch to any Mexican type dish { hot or cold } but any dish that needs just a wee bit more "hmmmm something " to it...also sometimes I'll drain the vegetables and add them to a salad, WOW! Let your imagination...

2 red onions { sliced into ¼ inch pieces }
1 red pepper { cut into ¼ inch strips }
2 good size jalapeño pepper { sliced thin }
1 tablespoon fine sea salt
¼ cup pure cane sugar
2 cups water
6 fresh limes { juiced about 1 & ¼ cups }

Steps:

  • 1. Bring the sugar and water to a boil, then turn down and continue to simmer till the sugar has dissolved. Once that is done, turn the water off and let it come to room temperature. Make sure the sugar/water liquid is completely cooled; otherwise you'll end up cooking the onions and peppers.
  • 2. While the water is simmering, slice the onions and put them in a colander in the sink, and sprinkle with the salt, toss the onions so they are all covered with the salt and let them sit 15 minutes, and then rinse really well and drain. This will take out some of the bite of the raw onions, and will aid in keeping them crisp.
  • 3. Once the sugar water has cooled add the red onions and the jalapeño peppers let them sit 30 minutes, stirring occasionally.
  • 4. While the onions and peppers are soaking, slice the red pepper and juice the limes.
  • 5. After the 30 minutes are up, drain the onions/peppers COMPLEATLY from the sugar water but DO NOT RINSE THEM, put them in a Mason type jar along with the red pepper and pour the lime juice over them. Take a knife and go around the inside of the jar to remove any air bubbles, and wipe the rim before putting the lid and ring on.
  • 6. Leave the jar { upside down } on the counter for 2 hours, then refrigerate for several days { turning it over several times } then use them in any number of dishes.
  • 7. WHAT IS PURE CANE SUGAR? Pure cane sugar is sugar which has been produced from sugar cane, as opposed to sugar which has been produced from sugar beets or a mixture of beet and cane sugar. Some people believe that cane sugar is of higher quality, and as a result, it is highly prized in some areas. It can be more expensive than beet or mixed sugars, and it is usually prominently labeled.
  • 8. Sugar cane is a tropical crop which has been used as a sweetener for centuries. It is processed by crushing the cane so that it releases its sweet juices, and then evaporating the juices to create a concentrated crumble. This crumble can be refined and processed in a variety of ways to generate an assortment of sugar products, including white sugar, brown sugar, and molasses. In the case of pure cane sugar, the cane is processed in a facility which only handles cane, and it is kept isolated from beet sugar products so that the two do not become mixed.
  • 9. There are some trace differences between cane and beet sugar which cause the two to perform slightly differently. Some people claim to be able to detect taste and scent differences, and the two also work differently in the kitchen. Recipes can become problematic when the wrong kind of sugar is used, which is why some specifically call for pure cane sugar, to ensure that they come out as expected. Generic sugar may contain varying proportions of beet and cane sugar, leading to irregular performance in the kitchen.

I love this mix served on top of barbecue sandwiches, as a side to fried fish, and also with hotdogs!! Chilling and resting time is not included in prep time. There is a one hour resting time and a 24 hour chilling time.

1/2 small red onion, cut into 1/4 inch thick slices
- ice water
1/2 - red bell pepper, cut lengthwise into 1/4 inch wide strips
1/2 - yellow bell pepper, cut lengthwise into 1/4 inch wide strips
1/2 - green bell pepper, cut lengthwise into 1/4 inch wide strips
1 cup(s) white vinegar
6 tablespoon(s) sugar
2 tablespoon(s) kosher salt
1/2 teaspoon(s) dried crushed red pepper

Steps:

  • Soak onion slices in ice water to cover in a small bowl 10 minutes; drain. Place the onion slices and bell pepper strips in one 1-quart canning jar.
  • Bring vinegar, next 3 ingredients, and 1 cup water to a boil in a small nonaluminum saucepan over medium-high heat, stirring occasionally, until the sugar is dissolved.
  • Pour the hot vinegar mixture over the vegetables in the jar. Let stand, uncovered, for 1 hour. Cover and chill 24 hours. Store in an airtight container in the refrigerator up to 1 week.
