PICKLED KNACKWURST

2 1/2 cups water
1 3/4 cups white vinegar
2 tablespoons sugar
1 1/2 teaspoons salt
20 peppercorns
16 whole allspice
1 medium bermuda onion
1 1/2 lbs knackwurst of frankfurters

Steps:

  • Bring mixture to a boil, then simmer for 10 minutes. Cool.
  • Slice 1-1/2 pounds of knackwurst on a angle in ½-inch pieces. Cut onion into thin slices.
  • In a 2 quart jar, alternate sausage and onion. Pour juice over it. Refrigerate for 3 days. Then you're ready to eat. Keep in refrigerator.

BRATWURST AND KNOCKWURST WITH RYE TOAST POINTS

Water
1 teaspoon sea salt
4 bratwurst (recommended: Usingers' brand)
4 knockwurst (recommended: Usingers' brand)
8 to 10 red potatoes
2 tablespoons butter
1 tablespoon chives, minced
Salt and pepper
4 slices rye toast
1 tablespoon herb butter
8 ounces sauerkraut
4 ounces German mustard

Steps:

  • In a medium sized pan, bring a pot of water to a boil, add 1 teaspoon of sea salt. Add potatoes and cook for 10 minutes, or until tender. Remove from water and keep warm, keeping the water hot.
  • Preheat a grill.
  • Poach bratwurst and knockwurst in salted water until cooked through, about 10 minutes. Drain and grill until golden brown and cooked thoroughly, about 10 more minutes.
  • Cut the potatoes in halves. In a saute pan, add butter and melt. Add the potatoes and chives and cook until the potatoes are well coated. Season with salt and pepper, to taste.
  • Cut crust off rye slices and brush on herb butter. Grill until toasted. Cut into "points" (diagonal slices, like an "M". To assemble plate, place 2 ounces of sauerkraut in center of a plate. Place 4 halved potatoes around and slice bratwurst/knockwurst, arranging with toast points. Serve with mustard.

1 3/4 cups white vinegar
2 tablespoons sugar
1 1/2 teaspoons salt
20 peppercorns
16 whole allspice
1 1/2 lbs knockwurst, sliced on a angle into 1/2 inch slices
1 medium bermuda onion, sliced into thin rings

Steps:

  • .In a saucepan combine water, vinegar, sugar, salt, pepper corns, and allspice. Bring mixture to a boil, then reduce heat and let simmer for 10 minutes.
  • Cool the mixture down to lukewarm, then arrange the knockwurst and onion in a 2 quart jar, alternating layers. Pour marinade over.
  • Cover the jar and let marinate for 3 days in your refrigerator.

340 g pork fatback
34 g salt
6 g pink salt
9 g ground black pepper
28 g artificial sweetener, Dexterose
9 g garlic powder
9 g sweet smoked paprika
6 g ground allspice
1 (12 ounce) can beer

Steps:

  • Grind shoulder and fatback using medium sized grinding plate (3mm or 1/8").
  • Mix with beer and spices (all ground) until meat sticks to the sides of bowl (for myosin development).
  • Stuff into hog casing and smoke for two hours at 144 degrees. Rotate every hour.
  • Finish cooking in C-VAP (steam cooker) until 155 degrees internal temperature.
  • Then, grill on a grill to get them grill marks.
  • Finally, serve on a bun with caramelized onions, pickled carrots, shaved fennel, toasted almonds, and garnish with chopped herbs (equal parts: parsley, dill, and chives).

1 (32 ounce) package sauerkraut, drained
5 large red potatoes, sliced
1 1/2 lbs knockwurst, chunked
caraway seed, to taste
1/4 cup brown sugar (to 1/2 cup)
1 cup chicken broth
5 large granny smith apples, cored, diced

Steps:

  • Layer in either a Dutch oven for stove top cooking, or in a crockpot.
  • Begin with potatoes, then sauerkraut, then a sprinkling of caraway seeds and half the brown sugar, then the apples, then the knockwurst, then the chicken broth, then the rest of the brown sugar.
  • Cover and cook on low for stove top, for 2 hours.
  • If using the crockpot, cover and cook on LOW for 7 hours.
