Aah! The gardens bounty at it's end! Green tomatoes from cherries to plum to whatever you grew. Some red mostly green. This is a nice way to save and savory those garden goodies.

Number Of Ingredients 11

2 lbs onions, thinly sliced
4 -5 lbs tomatoes or 4 -5 lbs cherry tomatoes, left whole just poke a couple holes into them, large do slice into 1/8
1 bulb of garlic, peeled
6 -8 chili peppers
4 cups sugar
3 tablespoons coarse salt
4 cups vinegar
1 tablespoon turmeric
1 tablespoon celery seed
1 tablespoon mustard seeds
1 tablespoon peppercorn

Steps:

  • In a large bowl, combine onion, and tomatoes.
  • Pack mixture into 3 (1-quart) or 6 (1-pint) canning jars. Place a garlic clove and a chili or two in each jar, and set aside.
  • In a large saucepan, combine sugar, salt, vinegar, turmeric, celery seed, mustard seeds.and peppercorn. Bring to a boil over medium-high heat; stir until sugar dissolves.
  • Pour mixture over produce, leaving a 1/2-inch space at the top of each jar.
  • Wipe rims of excess; screw on lids.
  • Bring a large stock pot of water to a boil. Using canning tongs, gently place jars in boiling water, making sure the water covers the jars (if not, add additional water to cover).
  • Let jars sit in gently simmering water for 10 minutes.
  • Remove; let cool slightly.
  • Check seal by pressing in center of lid. If it doesn't pop back, it is properly sealed. If it does, return jars to water for 10 more minutes.
  • Let sealed jars cool completely.
  • Let pickled tomatoes stand until flavors have melded, at least 2 weeks. Store unopened jars in a cool, dark place up to 6 months. Once opened, jars will keep in the refrigerator for up to 1 month.

4 cups green cherry tomatoes
1 (1 quart) sterilized canning jar with lid and ring
1 cup distilled white vinegar
1 cup water
3 tablespoons kosher salt
1 tablespoon sriracha sauce
1 tablespoon pickling spice

Steps:

  • Pack tomatoes into the 1-quart jar.
  • Combine vinegar, water, salt, sriracha sauce, and pickling spice in a glass measuring cup. Heat in the microwave until boiling and salt dissolves, 1 1/2 to 3 minutes. Pour over tomatoes in the jar; seal.
  • Refrigerate until pickled, 1 to 2 weeks.

6 quarts green cherry tomatoes
6 sprigs fresh dill
18 peppercorns
6 small hot red peppers
2 quarts water
2 cups white vinegar
4 tablespoons pickling spices
3/4 cup pickling salt

Steps:

  • Wash tomatoes and pack in clean, hot quart jars.
  • Add 1 dill head, 3 peppercorns and 1 red pepper to each jar.
  • Place the pickling spice in the center of a coffee filter or cheesecloth and tie.
  • Bring water, vinegar, bag of spices and salt to boil.
  • Remove bag.
  • Cover tomatoes with brine, leaving 1/2-in. headspace.
  • Process in boiling water bath 10 minutes.
  • Let set 6 weeks to mellow.

1 1/2 cups distilled white vinegar or apple-cider vinegar
2 teaspoons sugar
1/2 teaspoon whole black peppercorns
1/2 teaspoon coriander seeds
3 whole allspice berries
2 dried bay leaves
Coarse salt
4 cups very small cherry or grape tomatoes
2 small sprigs rosemary

Steps:

  • Combine vinegar, 3/4 cup water, sugar, spices, and 2 tablespoons salt in a saucepan. Bring to a boil, stirring until sugar is dissolved. Fill clean containers tightly with tomatoes. Add boiling brine to cover completely. Let cool completely. Cover, label, and refrigerate at least 1 week before serving, or up to 3 months.

4 lbs cherry tomatoes (Firm)
3 1/2 lbs sugar
4 cups water
1 fresh gingerroot, Grated
2 lemons (Use only the juice and grated zest of the 2 lemons.)
1 teaspoon pickling salt

Steps:

  • Wash the tomatoes and prick each one in several places with the tines of a fork.
  • Dissolve the sugar in the water, bring to a boil and boil rapidly for 5 minutes.
  • Add the tomatoes and cook for 10 minutes.
  • Remove the tomatoes and to the syrup add the ginger root, lemon juice and rind, and salt.
  • Simmer the syrup for 15 minutes, return the tomatoes to the syrup and cook about 30 minutes longer, or till the syrup is thick and the tomatoes are transparent.
  • Turn into hot jars and seal.

Overwhelmed by all the green cherry tomatoes your garden is giving you? Try this recipe. Green cherry (or grape) tomatoes well seasoned with rosemary lots and lots of garlic and heat from Serrano's! I used most green with a few almost red and red ones for color. The red may burst because of the ripe softer fruit. I choose Serrano's for the heat but if you milder go for jalapenos or spicier go for a habanero. Garnish a bloody Mary or a vodka martini with a couple of these! ;)

10 cups green tomatoes or 10 cups red cherry tomatoes, washed
1 large sweet onion, 2 cups diced
2 serrano chilies, seeded and minced
10 -12 garlic cloves, sliced paper thin
1 tablespoon minced fresh rosemary
1 teaspoon black peppercorns
1 teaspoon pink peppercorns
1/4 cup canning salt
3 bay leaves
1 cup sugar
3 cups vinegar
1 cup water

Steps:

  • Place the veggie mix in a large pot.
  • In an other pot place all the Vinegar ingredients bring to a boil and simmer 5 minutes. Strain and divide the herbs in to the jars.
  • Pack veggie mix into hot sterilized jars leaving 1/4 inch head space.
  • Ladle hot vinegar over the veggies leaving 1/4 inch head space.
  • Remove air bubbles. Add more liquid if needed.
  • Wipe jars adjust caps and process for 15 minutes in a hot water bath.
  • remove and let sit in a draft free spot till cool.
  • Place a cool, dark cupboard.
  • Ready to eat in 3 weeks. Or save for Christmas gift giving.

3/4 cup apple cider vinegar
3/4 cup water
4 teaspoons coarse kosher salt
2 teaspoons sugar
1 3 x 1/2-inch strip lemon peel (yellow part only, removed with vegetable peeler)
12 ounces cherry tomatoes, grape tomatoes, and/or pear tomatoes
1/4 cup coarsely chopped fresh dill
2 garlic cloves, thinly sliced
1/4 teaspoon dried crushed red pepper

Steps:

  • Pour vinegar and 3/4 cup water into small saucepan. Add salt, sugar, and lemon peel. Bring to boil, stirring to dissolve sugar and salt. Remove from heat. Let cool 20 minutes.

This are delicious and easy! I think the recipe came from Gourmet but I'm not sure. They're like cherry tomatoes but to a higher degree! Easily doubled.

3/4 cup cider vinegar
3/4 cup water
4 teaspoons kosher salt
2 teaspoons sugar
1 strip lemon peel, 3-inchx1/2-inch (I used more)
12 ounces cherry tomatoes or 12 ounces grape tomatoes
1/4 cup fresh dill, coarsely chojpped
2 garlic cloves, thinly sliced
1/4 teaspoon crushed red pepper flakes

Steps:

  • Pour vinegar and water in small saucepan. Add salt, sugar and lemon peel. Bring to a boil, stirring to dissolve sugar and salt. Remove from heat. Let cool 20 minutes.
  • Pierce each tomato 2 times with a slender wooden skewer. (I interpreted this as take a toothpick and run it through.) Toss tomatoes, dill, garlic and red pepper in a large bowl. Add cooled vinegar mixture. Let stand at room temp at least two hours and up to eight hours.
