GRILLED STEAK SALAD WITH PICKLE PEPPER VINAIGRETTE



Grilled Steak Salad with Pickle Pepper Vinaigrette image

Can be prepared in 45 minutes or less.

Yield Serves 2 generously

Number Of Ingredients 11

3 tablespoons white-wine vinegar
2 tablespoons Dijon mustard
3 tablespoons olive oil
1 teaspoon sugar
1/4 cup finely diced red bell pepper
1/4 cup finely diced peeled and seeded cucumber
2 tablespoons finely diced dill pickle
2 tablespoons chopped shallot
2 tablespoons drained capers
1 bunch watercress
a 1 1/4-inch-thick boneless beef top loin (strip) steak (about 1 pound)

Steps:

  • Prepare grill.
  • In a bowl whisk together vinegar, mustard, oil, sugar, and salt to taste. Stir in remaining vinaigrette ingredients and season with pepper.
  • Discard tough stems from watercress. Season steak with salt and pepper and grill on an oiled rack set 5 to 6 inches over glowing coals about 3 minutes on each side for medium-rare. (Alternatively, grill steak in a hot well-seasoned ridged grill pan over moderately high heat.) Transfer steak to a cutting board and let stand 5 minutes. Holding a sharp knife at a 45° angle, cut steak into about 12 thin slices.
  • Spoon vinaigrette generously onto 2 large plates and mound watercress in center. Arrange steak slices on watercress.

4 (6oz) top/bottom round steaks
2 tsp strong mustard
Fresh Ground Black Pepper
8 slices of medium lean bacon
2 large dill pickles - halved lengthwise
salt
1-2 Tbsp Flour
2 Tbsp butter or oil
2 medium onions - finely chopped
1 - 1.5 cup beef stock
1 large carrot - diced
1 tsp corn starch

Steps:

  • Layout steaks and coat thinly with mustard; sprinkle with salt and pepper. Place two strips of bacon on each steak. Place a pickle on the steak and roll up. Secure with a pin or twine. Sprinkle lightly with salt and pepper and coat in flour. Heat fat in large stew pot; saute onions until translucent; add beef rolls and brown on all sides. Pour in 1 cup of beef stock, add carrots, cover and braise over moderate heat for 2 hours. (adding additional stock if needed). Remove rolls from broth; stir in corn starch to cold water to dissolve and add to broth. Bring to a boil to thicken gravy. Serve rolls with gravy.

12 dill pickle spears
1 large onion, sliced and halved
3 (1/4 inch thick) round steaks, cut into 4 pieces and pounded thin
toothpicks
¼ cup vegetable oil
½ cup all-purpose flour
2 eggs, beaten
3 (10.75 ounce) cans condensed cream of mushroom soup, undiluted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Place one pickle spear and an equal amount of halved onion slices on one side of each piece of steak. Roll, and secure with toothpicks.
  • Heat the oil in skillet over medium heat. Place the flour and eggs in two separate bowls. Dip rolled steak first in the eggs, then in the flour to coat. Fry coated steaks in the skillet until browned on all sides. Transfer to the baking dish. Pour cream of mushroom soup into the skillet, and scrape up browned bits. Pour evenly over the steaks in the baking dish.
  • Bake 45 minutes in the preheated oven, to a minimum temperature of 160 degrees F (72 degrees F).
