I was born and raised in Philadelphia and this was my favorite lunch at the luncheonettes (sandwich shops). Places throughout the rest of the Country that claim to make Philly Cheese Steaks just do not get them to taste the same, and one of the reasons is that they do not use extra-virgin olive oil. Anyone who says that Pat's and Gino's in South Philly uses Cheez Wiz, is talking about the way they make it now. The old authentic way uses Provolone Cheese. Also, using deli roast beef is the same as using top round sliced wafer thin or frozen Rib-Eye roast shaved on an electric slicer. I was born in 1942 and this is the way they were made way back then. We are talking about authentic, not the way they are made now. If you make any changes with the ingredients or the directions, it will not be the same. Make it EXACTLY as written here.

2 large hoagie rolls or 2 large sub rolls
1/2 lb deli roast beef (very rare, sliced wafer thin, or you can use a frozen Rib-Eye roast shaved on an electric slicer, wh)
1 white onion (thinly sliced)
1 green bell pepper (thinly sliced) (optional)
2 teaspoons garlic (minced)
1/2 lb provolone cheese (thinly sliced)
extra virgin olive oil (for grilling)
salt and pepper
marinara sauce (optional topping) or ketchup (optional topping)

Steps:

  • Heat a griddle or a large saute pan over medium-high heat.
  • When hot, cover bottom with olive oil.
  • Add the onions and bell pepper and cook, stirring, until carmelized, which will take about 6 to 8 minutes.
  • Add the garlic, salt and pepper, and cook for about 30 seconds.
  • Then, push the mixture off to one side of the griddle.
  • Add the meat to the hot part of the griddle.
  • Cook, continuously flipping the meat over and slightly chopping the meat into slightly smaller pieces with 2 spatulas, until the meat is not pink, which should take about 2 minutes.
  • Mix the meat and the carmelized onions and bell pepper together.
  • Divide into 2 portions, and top both portions with the cheese to melt.
  • If using Italian or French bread, cut the bread in half, crosswise, and slice lengthwise to open for the 2 sandwiches.
  • Hollow out some of the soft white bread part from inside and place face down on top of the meat and cheese.
  • When the cheese is melted, and with 1 or 2 spatulas, flip the sandwiches over and add topping, such as marinara sauce or ketchup, if desired, and serve immediately.

300g steaks
2tbsp sunflower oil
1 onion , sliced
1 red pepper , sliced
1 green pepper , sliced
2tbsp white wine vinegar
8 cheese slices
50g grated mozzarella
4 soft white sub rolls
American mustard and ketchup, to serve

Steps:

  • Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
  • Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
  • Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.

1 cup barbeque sauce (such as Bull's-Eye® Texas-Style Bold Barbeque Sauce)

2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat a skillet over medium heat; cook and stir beef until browned, 5 to 7 minutes. Add onions and green bell peppers to beef; cook and stir until softened, 5 to 10 minutes. Pour barbeque sauce over beef mixture and simmer until sauce is slightly reduced, about 10 minutes.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Stand peppers up in a single layer in a 9x13-inch baking pan.

  • In a large skillet, cook green peppers and onion in oil over medium-high heat until tender, 8-10 minutes. Steps:

  • Place the steak in the freezer about 30 minutes before it is needed.
  • Melt butter in a large skillet over medium-high heat. Add onion, season with salt, and saute, stirring frequently, for 4 minutes. Add 1 tablespoon oil to the skillet along with bell pepper and mushrooms. Saute until mushrooms and bell pepper are tender, about 8 minutes. Remove vegetables from the skillet and set aside. 1 tablespoon butter, for toasting buns
provolone cheese (sliced) or Cheez Whiz
1 tablespoon butter
1 tablespoon flour
1 cup milk
1 cup provolone cheese (shredded)

Steps:

  • Add the oil to a large skillet over medium-high heat. Add the ground beef and cook 5-6 minutes or until no longer pink. Add the onion and bell pepper and continue to cook 2-3 minutes or until crisp tender. Drain off any fat. Stir in the steak sauce and beef broth (and Worcestershire, if using). Season with salt and pepper. Cook until liquid is gone.
  • Butter the cut sides of the buns. Toast the buttered sides in a hot skillet on medium-high heat. Set aside.
  • To make the cheese sauce, melt the butter in a 1-quart saucepan over medium-high heat. Whisk in the flour and cook about 1 minute. Whisk in milk, bring up to a bubble and cook until thickened. Remove from heat and stir in the cheese. Season with salt and pepper, if desired.

24 1/2 ounces Steak-ums or 24 1/2 ounces shaved rib eye steaks
4 -5 split fresh hoagie rolls or 4 -5 French bread
1/2 lb sliced provolone cheese or 1/2 lb melted cheddar cheese, spread
8 ounces sliced fresh button mushrooms (optional)
1/2 green pepper, thinly sliced (optional)
1/2 large sweet vidalia onion, thinly sliced (optional)
2 tablespoons olive oil
1 pinch kosher salt
1 pinch black pepper
1/2 cup sliced banana pepper
mayonnaise or yellow mustard

Steps:

  • In a large skillet, heat olive oil and add sliced mushrooms, green pepper, onion, salt and pepper (if using).
  • Cook over medium heat 8-10 minutes or until tender and onions begin to caramelize.
  • If slicing your own bread, it works best if the bread is not sliced all the way through, but sort of hinged at one side.
  • Place 5-6 ounces frozen steak-umms on a heated griddle or frypan and cook until nicely browned, shredding meat with forks or a spatula as it thaws and cooks, and shaping meat into a bun-shaped pile.
  • Drain off any fat as it accumulates in the pan.
  • Place some of the cooked vegetable mixture on the pile of cooking meat.
  • When meat is done to your liking, place opened hoagie roll over meat and use a long spatula to lift sandwich and turn it over.
  • Put any dropped filling into the bun.
  • Add sliced banana peppers to sandwich and any condiments (mustard or mayo).
  • Place 2 (1-ounce each) slices provolone cheese over filling (or you may add melted cheddar spread at this point).
  • Microwave sandwich for 30-45 seconds or until bun has softened and cheese is melted, if desired.
  • Slice in half and serve hot.
  • Repeat with remaining sandwiches.

8 ounces thinly sliced roast beef
8 slices provolone cheese
2 large green bell peppers
1 medium sweet onion
1 (6 ounce) package baby bella mushrooms
2 tablespoons butter
2 tablespoons olive oil
1 tablespoon garlic, minced

Steps:

  • Slice peppers in half lengthwise, remove ribs and seeds.
  • Slice onions and mushrooms. Saute over medium heat with butter, olive oil, minced garlic and a little salt and pepper. Saute until onions and mushroom are nice and caramelized. About 25-30 minutes.
  • Preheat oven to 400*.
  • Slice roast beef into thin strips and add to the onion/mushroom mixture. Allow to cook 5-10 minutes.
  • Line the inside of each pepper with a slice of provolone cheese.
  • Fill each pepper with meat mixture until they are nearly overflowing.
  • Top each pepper with another slice of provolone cheese.
  • Bake for 15-20 minutes until the cheese on top is golden brown.

1 lb uncooked elbow macaroni or 1 lb campanelle pasta
2 tablespoons extra virgin olive oil
2 softball-sized onions, chopped
1 teaspoon salt
1 teaspoon pepper
1/2 cup beef broth
1 lb sliced deli roast beef, roughly chopped
2 tablespoons flour
2 tablespoons butter
2 cups milk
2 cups shredded provolone cheese
fresh parsley

Steps:

  • Cook pasta according to package directions.
  • In a large skillet, heat olive oil.
  • Cook onions with salt and pepper for 6-8 minutes.
  • Add beef broth and roast beef.
  • When noodles are cooked, drain and combine with onions.
  • Cook for 5-7 minutes.
  • In a medium saucepan, heat butter and add flour to thicken.
  • Add milk, bring to boil.
  • Add cheese, mix well.
  • Once melted, pour over noodles and onions.
  • Add parsley and mix together.
  • Pour into a 9x13 baking dish or lasagna pan.
  • Cover with aluminum foil and bake in a 350-degree oven for 10 minutes.

1 (12 ounce) package hawaiian rolls
1/4 cup mayonnaise
1 tablespoon olive oil
1 green pepper, diced
1 onion, diced
1 lb steak, thinly sliced
12 slices provolone cheese
3 tablespoons butter, melted

Steps:

  • 1) Preheat oven to 375 degrees Fahrenheit.
  • 2) Cut the sheet of Hawaiian rolls horizontally with a serrated knife. Place bottoms in a parchment-lined, oven-safe baking dish. You want the parchment to hang over a bit. Spread mayonnaise on rolls.
  • 3) Heat olive oil in a skillet over medium-high heat. Add onions and green peppers. Cook for 5 minutes until tender. Add steak. Season with salt and pepper. Cook steak until tender. Remove from heat.
  • 4) Top rolls with 6 slices of provolone cheese, cooked steak, green peppers, onions and 6 more slices of provolone cheese. Place roll tops over steak and brush with melted butter.
  • 5) Bake for 20 minutes, or until top has browned and cheese has fully melted.

1/4 cup Dijon mustard
1/2 cup balsamic vinegar
2 cloves garlic, chopped
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
1 (2 pound) flank steak
1 red bell pepper, halved and seeded
1 red onion, cut into 1/4-inch slices
BBQ sauce
1 loaf French bread
1 pound fresh mozzarella cheese, sliced

Steps:

  • Combine the mustard and balsamic vinegar in a small bowl. Add the garlic and drizzle in olive oil while stirring. Season with salt and pepper, to taste.
  • Put the steak in a resealable plastic bag. Pour in 3/4 of the marinade and seal the bag. (Reserve the remaining marinade for the bread.) Let the steak marinate at room temperature for at least 30 minutes.
  • Put the peppers and onions on the grill. Coat the onions with BBQ sauce. Once the peppers and onions are charred, move them to the top rack to keep them warm.
  • Remove the steak from the marinade and put on the grill. After 5 minutes turn the steak over to sear the other side, about 12 minutes total cooking time, for medium-rare. Transfer the steak to a cutting board and let rest for 10 minutes before slicing.
  • Cut the bread lengthwise and toast on the grill.
  • Brush the remaining reserved marinade on both sides of the bread. Arrange the steak on the bottom half of the bread, then cover with the peppers and onions. Top with the cheese and cover with the other half of the bread. Cut into 4 pieces and serve.

2 ounces cream cheese, softened
½ teaspoon parsley flakes
2 (1.9 ounce) packages mini phyllo tart shells
½ cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place phyllo shells on a baking sheet.
  • Melt butter in a large skillet over medium-high heat. Add mushrooms, onion, and bell pepper. Cook until onion is translucent and mushrooms have softened, about 5 minutes. Add steak, Worcestershire sauce, and soy sauce; cook for 5 minutes.

2 cups uncooked elbow macaroni
1 pound lean ground beef
1 medium onion, chopped
2 green bell pepper, seeded and chopped
salt and pepper to taste
1 (8 ounce) package processed cheese food, cubed
1 (10.75 ounce) can condensed cream of mushroom soup
¼ cup milk, or as needed

Steps:

  • Bring a pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain.
  • Meanwhile, place the ground beef and onion into a large skillet, and cook, stirring to crumble, until meat is no longer pink, and onion is tender. Just before the beef is done, add the bell peppers, and cook until tender, but still green. Season with salt and pepper. Stir in the cheese food, condensed soup and milk to make a thick sauce.
  • Remove from the heat, and stir in the macaroni noodles. Serve and enjoy!

But with this baked slider method, your average home cook can achieve something very close to the original. Plus, the small rolls make me feel like a big man. Speaking of feeling like a giant, football season is upon us, and I can't think of a better sandwich to make for your buddies coming over to watch the game! Garnish with chives.

1 tablespoon olive oil
1 pound beef top sirloin steaks
1 pinch salt and freshly ground black pepper to taste
1 pinch cayenne pepper to taste
½ cup diced onion
10 mini sandwich rolls
½ cup chopped pickled peppers
½ cup cream cheese, softened
2 ½ cups freshly shredded provolone cheese
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Steps:

  • Heat olive oil in a skillet over medium-high heat. Season steak generously with salt, black pepper, and cayenne. Sear steaks for 5 to 6 minutes. Flip; add diced onions to the sides. Cook until steaks begin to firm and are hot and slightly pink in the center, 5 to 6 minutes more. Push onions under the steaks and cook until browned but still crunchy, 2 to 3 minutes more. Remove steaks to a plate.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place rolls on a baking pan lined with foil. Hollow out the top of each roll by cutting in at a 45-degree angle. Pinch off some of the bread inside to make room for the filling.
  • Slice steaks into thin strips, then across into 1/2-inch pieces. Transfer to a mixing bowl. Add the sauteed onions and accumulated juices. Toss in pickled peppers, cream cheese, 1 1/2 cups provolone, 1 teaspoon salt, and 1/4 teaspoon pepper. Mix until thoroughly combined. Taste and season with salt as needed. Spoon filling into the rolls and top with remaining provolone cheese.
  • Bake in the preheated oven until cheese is melted and edges of the rolls are starting to brown, about 15 minutes.
