1 (8 ounce) package cream cheese, softened
½ cup white sugar
2 (15 ounce) cans crushed pineapple, drained
1 ¾ cups frozen whipped topping, thawed
1 (9 inch) prepared graham cracker crust

Steps:

  • In a large bowl, mix cream cheese and sugar together. Stir in 1 can of pineapple and whipped topping to cream cheese mixture. Mix until smooth.
  • Pour mixture into crust and top with other can of pineapple. Cover and chill for 2 hours.

1/2 box graham crackers
1/4 pound butter
1 pint whipping cream or 1 can Carnation milk refrigerated for 1 day
1 #2 can pineapple
1 large cake Philadelphia cream cheese
1 cup sugar
1 teaspoon vanilla
1 tablespoon powdered sugar
1 package lemon JELL-O

Steps:

  • Crush graham crackers fine
  • Add melted butter and 1/2 of the powered sugar
  • Drain the pineapple juice
  • Heat pineapple juice and add JELL-O then cool
  • Mixed crushed pineapple with sugar and cream cheese
  • Beat thoroughly with mixer and add vanilla
  • Add to the cooled JELL-O mixture
  • Beat milk till stiff and fold into mixture
  • Spread 1/2 the crackers in a long pan
  • Pour mixture over the crackers
  • Put remaining crackers over the top and sprinkle with remaining powdered sugar
  • Refrigerate for at least 12 hours before serving

2 cups all-purpose flour
½ cup confectioners' sugar
½ cup sliced almonds
⅔ cup butter
2 (8 ounce) packages cream cheese, room temperature
½ cup white sugar
2 eggs
⅔ cup unsweetened pineapple juice
¼ cup all-purpose flour
¼ cup white sugar
1 (20 ounce) can crushed pineapple, drained with juice reserved
½ cup heavy cream, whipped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine 2 cups flour, confectioners' sugar, and almonds. Cut in butter until mixture resembles coarse crumbs. Press crust mixture into the bottom of an ungreased 9x13-inch pan. Bake in preheated oven for 15 to 20 minutes, until lightly browned. Set crust aside, and leave the oven on.
  • While the crust is baking, prepare the cream cheese layer. In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in 2/3 cup unsweetened pineapple juice. Pour over hot crust and bake until filling is set, about 20 minutes more. Allow to cool completely.
  • Make the topping: In a saucepan, combine 1/4 cup flour, 1/4 cup sugar and 1 cup reserved pineapple juice. Bring to a boil and stir for 1 minute. Remove from heat and stir in crushed pineapple. Cool completely. When cool, fold in whipped cream. Spread topping over cream cheese layer. Refrigerate 4 hours before serving.

1/2 cup sugar
1 can (20 ounces) crushed pineapple, drained
1 carton (8 ounces) frozen whipped topping, thawed
2 packages (3 ounces each) ladyfingers (about 48)
1 pint fresh strawberries, sliced

Steps:

  • In a large bowl, beat the cream cheese and sugar until smooth. Stir in pineapple. Fold in whipped topping. , Place ladyfingers around the sides and on the bottom of a greased 9-in. springform pan. Pour filling into pan. Cover and refrigerate for 8 hours or overnight. Carefully remove sides of pan. Top with strawberries.

I came up with this recipe because a brother from church wanted me to try my no bake cheesecake with pineapple. It was a hit and has been requested at every get together ever since. This recipe makes 2 cheesecakes. (trust me in a group, you'll need both!)

2 graham cracker pie crusts
1 (16 ounce) container whipped cream
2 (8 ounce) packages cream cheese
2 cups sugar
1 (20 ounce) can crushed pineapple (drain ALL of the juice!)

Steps:

  • In a large mixing bowl mix together the whipped cream, cream cheese and sugar.
  • Drain as much of the pineapple juice as you can from the can of crushed pineapple. This step is very important because too much juice left in the pineapple will prevent the cheesecake from setting properly.
  • Once the pineapple has been drained, add the pineapple to the rest of the ingredients and mix well.
  • Pour the mixture into the prepared graham cracker crusts.
  • Refrigerate for at least an hour.
  • Enjoy!
