This turkey marinade is a combination of olive oil, fresh herbs, spices and citrus, all blended together to make the most tender and juicy turkey ever! A quick and easy way to infuse flavor into your holiday turkey with minimal effort.

1 cup olive oil
1/3 cup soy sauce
1/4 cup lemon juice
1/4 cup orange juice
1 teaspoon lemon zest
1 teaspoon orange zest
1/2 cup parsley leaves (finely chopped)
1/4 cup chives (thinly sliced)
1/4 cup sage leaves (finely chopped)
2 tablespoons rosemary leaves (finely chopped)
1/4 cup thyme leaves (chopped)
1 tablespoon garlic (minced)
2 teaspoons smoked paprika
1 teaspoon sweet paprika
2 teaspoons salt
1 teaspoon black pepper

Steps:

  • Place all of the ingredients in a medium bowl. Whisk until well combined.
  • Pour the marinade over a whole thawed turkey. Rub the marinade to coat all over the outside, then loosen the skin and rub some of the marinade under the skin.
  • Let the turkey sit in the marinade for 12-24 hours.
  • Scrape any large pieces of herbs and garlic off the marinated turkey so that they won't burn when cooked.
  • Roast, smoke or grill the turkey as desired, then serve and enjoy.

4 turkey drumsticks (1-1/2 pounds each)
2/3 cup Louisiana-style hot sauce
1/3 cup canola oil
1 tablespoon reduced-sodium soy sauce
1 tablespoon chili powder
2 teaspoons ground mustard
1 teaspoon garlic powder
1 teaspoon poultry seasoning
1 teaspoon onion powder
1 teaspoon celery salt
1/2 teaspoon white pepper
1/2 teaspoon hot pepper sauce, optional

Steps:

  • Divide drumsticks between 2 large bowls or shallow dishes. In a smaller bowl, whisk remaining ingredients until blended. Add 3/4 cup marinade to drumsticks, dividing evenly between the bowls. Turn to coat. Cover and refrigerate 8 hours or overnight. Cover and refrigerate remaining marinade., Preheat oven to 375°. Remove drumsticks from marinade to a foil-lined 15x10x1-in. baking pan; discard marinade in bowls., Bake, covered, 45 minutes. Uncover; bake 45-60 minutes longer or until a thermometer reads 175°, basting occasionally with reserved marinade.

1/3 cup all-purpose flour
2 egg whites
1 egg
3 tablespoons honey Dijon mustard
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
2/3 cup dry bread crumbs
2/3 cup ground pecans
1 package (17.6 ounces) turkey breast cutlets
1/4 cup canola oil

Steps:

  • Place flour in a shallow bowl. In another shallow bowl, whisk the egg whites, egg, mustard, cayenne and salt. In another shallow bowl, combine bread crumbs and pecans. Coat cutlets with flour, then dip in egg mixture and coat with bread crumb mixture., In a large skillet, cook turkey in oil in batches over medium heat for 2-3 minutes on each side or until juices run clear.

When I first fixed this, we were living on a ranch along a river with lots of game. Wild turkey can be dry, but not prepared this way! Of course, it's just as tasty with store-bought turkey. And the gravy it makes is out of this world. I'm a widow with two children, five grandchildren and a great-grandchild.

Number Of Ingredients 11

1 cup soy sauce
1 cup canola oil
1/4 cup honey
4 teaspoons Worcestershire sauce
2 teaspoons ground ginger
2 teaspoons ground mustard
2 teaspoons lemon juice
4 garlic cloves, minced
6 to 7 pounds fresh turkey parts
1/4 cup all-purpose flour, optional
Salt and pepper, optional

Steps:

  • In a small bowl, combine the first eight ingredients. Place turkey in a large heavy-duty plastic bag; add half of marinade. Close the bag; refrigerate overnight, turning bag occasionally. Cover and refrigerate remaining marinade., Drain and discard marinade from turkey; arrange turkey in a single layer in large shallow roasting pan. Pour reserved marinade over turkey. Bake, uncovered, at 325° for 1-1/2 to 2 hours or until tender, basting occasionally if desired. Remove turkey to serving platter and keep warm. , If desired, make gravy: Strain pan juices into a large measuring cup. Skim fat and reserve 1/4 cup in a medium saucepan; discard remaining fat. Blend flour into saucepan. Add water to pan juices to make 2 cups. Add to saucepan; cook and stir until thickened and bubbly. Cook and stir 1 minute longer. Season with salt and pepper. Serve with turkey.
