- Accompaniments: trimmed baby carrots and sugar snap peas, blanched raw, trimmed baby radishes.
- Grate cucumber and drain in fine mesh sieve. Combine cucumber, cream cheese, onion, salt, mayo, sour cream and food coloring in a food processor. Transfer to a bowl and add chopped dill. Taste for seasoning.

BABY CARROTS WITH SPRING ONIONS
Baby carrots are glazed in a white-wine-and-butter sauce and served with spring onions in this delicious side.

Steps:
- Melt 2 tablespoons butter in a large skillet over medium-high. Add onions, cut-side down; cook until golden brown, about 4 minutes. Transfer to a plate. Add wine and cook, stirring and scraping up browned bits, until liquid is reduced to about 2 tablespoons, 2 to 3 minutes.
- Add remaining 2 tablespoons butter, 1/2 cup water, carrots, and 1/2 teaspoon salt. Bring to a boil, then reduce to a simmer and cook, covered, until carrots are just tender, about 12 minutes. Uncover; return onions to pan and simmer until liquid has evaporated and carrots are glazed and tender, 5 to 6 minutes more.
- Add thyme; season with salt and pepper. Transfer to a platter; serve, garnished with parsley.

- Spray two 8 or 9-inch round cake pans with nonstick cooking spray.
- Melt margarine in large saucepan over medium heat.
- Add marshmallows; cook and stir until melted.
- Remove from heat.
- Add cereal; stir until well coated.
- Divide mixture evenly into sprayed pans; press firmly with buttered rubber scraper.
- Cool 20 minutes.
- Turn cereal rounds out of pans; cut each round into 12 wedges.
- Use fingers to round curved end slightly to resemble carrot.
- Place frosting in microwave-safe measuring cup with pouring spout.
- Microwave on HIGH for 30 to 40 seconds or until pourable.
- DO NOT BOIL.
- Add red and yellow food color 1 drop at a time, mixing until frosting is of desired orange color.
- Pour frosting over carrot shapes, covering tops completely and allowing some to drizzle down sides.
- Reheat frosting as necessary to keep it pourable.
- On sugared surface, flatten gumdrop leaves with rolling pin until 1/4 inch thick.
- With knife or scissors, cut each leaf into 6 strips, keeping them attached at bottom.
- Place leaf at top of each carrot.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Place radishes and onion in a medium bowl. Sprinkle with lemon zest, thyme, dill, garlic powder, salt, and pepper. Drizzle with olive oil and toss to coat. Spread on the baking sheet in an even layer.
- Roast in the preheated oven, stirring every 5 to 10 minutes, until edges are beginning to brown and radishes are fork-tender, 20 to 25 minutes. Taste and season with additional salt, if desired.

- In a small bowl, beat cream cheese and butter until smooth; stir in the radishes, onion, parsley and seasoned salt. Chill for at least 1 hour. , To make a cabbage serving bowl, hollow out the head of cabbage, keeping the core at the bottom intact and removing enough interior leaves so that a 1-in. shell remains. Add dip; serve with vegetables or crackers.

- MAKE DIP:.
- Stir together all the dip ingredients in a large bowl, Cover and chill for anywhere from l hour to 2 days.
- MAKE DIPPING BOW:.
- Place the cabbage, stem side down, on a counter top. Push aside (but do not remove) the larger outer leaves and cut of the top of the cabbage. Using a paring knife, carefully carve out the inner portion of the cabbage to form a bowl. Reserve the carved-out portion for another recipe. Scrub the carrots and radishes, but do not peel.
- Line a flat basket with kale leaves. Spoon the dip into the cabbage and place it in the center of the basket. Surround the cabbage with the carrots and radishes.
- Serve at once.
