⅓ cup olive oil, or as needed
1 bunch fresh parsley, chopped

Steps:

  • Place Parmesan cheese in the bowl of a food processor; process into small crumbs. Add walnuts and process into small crumbs.
  • Heat olive oil in a large skillet over medium-high heat until hot. Stir in parsley and garlic and remove from heat. Toss zucchini noodles with the hot oil mixture and Parmesan-walnut mixture. Top with cherry tomatoes and olives to serve.

8 slices turkey bacon
½ cup basil pesto (such as Classico® Traditional)
3 large zucchini, ends trimmed
1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
2 tablespoons freshly grated Parmigiano-Reggiano cheese
1 cup fresh arugula
1 pinch sea salt and freshly ground black pepper to taste

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Lay bacon slices on a large baking tray.
  • Broil in the preheated oven until crispy, 9 to 12 minutes. Transfer to a large plate lined with absorbent kitchen paper and allow to cool and harden.
  • Crumble the cooled bacon into smaller pieces and combine with pesto sauce.
  • Use a spiralizer or julienne peeler to cut zucchini into noodles, snipping midway to prevent them from getting too long.
  • Heat olive oil in a saute pan over medium heat. Add zucchini and garlic and cook until tender, 3 to 4 minutes. Add pesto-bacon mixture and heat for 2 minutes longer. Toss well so the noodles are evenly coated. Taste and season with salt if needed.
  • Top with freshly grated Parmiggiano-Reggiano cheese so it can melt while the dish is still warm. Season with freshly ground black pepper. Top with arugula, but do not mix it in. Serve immediately.

1/4 cup olive oil
1 large onion, chopped
3 garlic cloves, chopped

8 cups broccoli florets (from about 4 large stalks)

  • Cook noodles in large pot of boiling salted water until just tender but still firm to bite. Drain noodles, reserving 1 cup cooking liquid.

Toss until noodles are evenly coated, adding remaining reserved liquid by tablespoonfuls if mixture is dry. Season to taste with salt and pepper. Transfer mixture to large bowl.   • Rinse and drain tofu noodles very well.
  • Microwave on high for 1 minute and rinse and drain again.
  • You may want to pat dry with a paper towel.

Freshly ground pepper
3 tablespoons pine nuts
8 ounces wide rice noodles or fresh or dried fettuccine

Steps:

  • Bring a large saucepan of generously salted water to a boil. Combine cilantro, lime juice, olive oil, 1 tablespoon butter, 2 teaspoons salt, and pepper to taste in the bowl of a food processor, and puree. Remove from the food processor, transfer to a small bowl, and set cilantro pesto aside.
  • Melt remaining teaspoon butter in a small saute pan over medium-high heat. Add pine nuts; cook, tossing until golden brown, about 1 minute. Sprinkle with salt, and transfer to a paper towel to drain. Set aside.
  • Cook noodles until al dente, about 2 minutes. Drain in a colander. Transfer to a large bowl. Add the cilantro pesto; toss, and garnish with pine nuts.

  • Bring a medium pot of well-salted water to a boil. Cook broccoli florets and stems until bright green and just tender, about 2 minutes. Remove with a slotted spoon and let cool slightly. small pack basil
small pack coriander
75g peanut
1 red chilli , deseeded and chopped
zest and juice 1 lime , plus wedges to serve
2 tbsp sesame oil

400g king prawn , halved lengthways

  • Put the noodles in a large bowl, then pour over enough boiling water to cover. Set aside and wait for the noodles to reach an al dente texture. Meanwhile, put the basil, coriander, peanuts, chilli, lime zest and juice, sesame oil, 1 tbsp of olive oil, 2 tbsp of water and a pinch of salt in a food processor and whizz into a pesto.
  • Heat the remaining oil in a large non-stick pan and quickly stir-fry the prawns for 3-4 mins, then stir in the pesto. Drain and add the noodles, season with black pepper and mix well, so that the noodles are completely coated in the pesto - if it looks a little dry, add a splash of hot water. Spoon into bowls, squeeze over extra lime juice and sprinkle over more coriander, if you like.

1 yellow squash

2 watermelon radishes

Steps:

  • Finely dice the shallot and add it to a medium bowl.
  • Mince the garlic and add it to the bowl with the shallot.
  • Chiffonade the basil, chop the parsley, and add to the bowl.
  • Quarter the cherry tomatoes and add them to the bowl with the herbs, along with the chili flakes, a pinch of salt and pepper, the juice of one lemon, and the olive oil. Stir to combine.
  • Heat a bit of oil in a medium skillet over medium heat.
  • Season the salmon fillets with salt and pepper. When the oil is shimmering, sear the salmon on one side until golden brown. Flip and cook until the other side is golden brown and the fish is cooked through. Remove the salmon from the heat and wipe out the skillet.
  • Cut the squash, zucchini, carrots, and watermelon radishes in half, if needed, then spiralize.
  • Heat a bit of oil in the pan over medium heat until simmering.

4 boneless skinless chicken breasts
1 tablespoon olive oil
1 teaspoon pepper
3/4 teaspoon salt
1/4 cup pine nuts, toasted
3 cloves garlic
1/4 teaspoon salt
3 cups fresh basil leaves
1/4 cup olive oil
6 medium zucchini
2 tablespoons lemon juice

Steps:

  • Heat oven to 325°F. In large bowl, toss chicken breasts with 1 tablespoon olive oil, pepper and 3/4 teaspoon salt. Heat 10-inch ovenproof skillet over medium-high heat until hot. Add chicken breasts and cook, without moving, 3 to 5 minutes or until brown. Turn breasts, and immediately transfer pan to oven.
  • Bake 20 to 35 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F).
  • Meanwhile, in food processor or blender, place pine nuts, garlic and 1/4 teaspoon salt. Cover; process until combined. Add basil; process to chop roughly. Scrape down sides of processor with spatula. With processor running, slowly add 1/4 cup olive oil, and continue to process until thoroughly combined. Set aside.
  • Cut ends off each zucchini. Using vegetable peeler, peel all 4 sides of the zucchini into long strips, looking like the pappardelle pasta shape. Turn zucchini to the next side when you reach the seeds. Discard the seedy core of the zucchini.
  • Remove chicken from oven; transfer chicken to a plate. Drizzle lemon juice evenly over chicken and allow to rest, covered with foil, 5 minutes.
  • Place pan with juices on stovetop over high heat (be careful of hot handle); heat juices to boiling. Add zucchini. Toss 4 to 5 minutes or until all liquid evaporates. Turn off heat; add pesto from food processor to pan, and toss to coat.

100 g of fresh pistachios
1 handful of chopped fresh parsley
280 g of edendum sliced porcini mushrooms

Steps:

  • Fill a pot with water and bring it to a boil.

  • In the meantime, chop the fresh pistachios and brown them in a pan with a little extra-virgin olive oil.

1/4 cup plus 2 tablespoons sliced toasted almonds, plus more for garnish
1/4 cup fresh basil leaves, plus small leaves for garnish
1 garlic clove, minced
2 tablespoons fresh lemon juice
1/4 cup plus 2 tablespoons extra-virgin olive oil
8 ounces medium rice noodles

Steps:

  • Blanch broccoli in a pot of boiling salted water until bright green and just tender, about 2 minutes. Remove with a slotted spoon, season with salt, and let cool slightly. Reserve water.
  • Coarsely chop 1 cup cooked florets. Puree remaining florets with the almonds, basil, garlic, and lemon juice in a food processor. Add olive oil and puree to combine. Season with salt and pepper.
  • Return water to a boil and cook rice noodles until tender according to package instructions. Reserve 1 cup cooking water, drain noodles, and return to pot. Toss with pesto, adding enough reserved pasta water to create a creamy sauce. Top each bowl with chopped florets, small basil leaves, and sliced almonds. Season with pepper and serve.

ZUCCHINI NOODLES WITH PISTACHIO KALE PESTO & CHERRIES



Zucchini Noodles with Pistachio Kale Pesto & Cherries image

Number Of Ingredients 9

3 medium-sized lacinato kale leaves, torn from the stem
1 clove small garlic
1/2 cup packed basil leaves
1/2 cup roasted shelled pistachios
1/2 lemon, zested
2 teaspoon lemon juice
1/3+ cup extra virgin olive oil
4 medium zucchini
1 cup pitted and chopped/sliced cherries

Steps:

  • Place a few inches of water in a large pot and bring to a boil. Just before boiling prepare an ice bath [water + ice] in a mixing bowl. Once boiling place kale leaves in the water for 30 seconds - 1 minute. Remove and immediately place in the ice bath to halt cooking. Remove kale and pat dry.
  • Place the garlic in your large food processor and turn on to mince. Scrape the sides. Add in the dried kale, basil, pistachios [cooled if you just roasted them], lemon zest, and lemon juice. Pulse about 20 times until well chopped.
  • Turn the processor on and slowly stream in the olive oil through the top. Scrape the sides as needed and stream in more oil to reach your desired pesto consistency. Add salt and pepper to taste and pulse a few more times. Scrape into a bowl and set aside.
  • Place zucchini over a large bowl and use a julienne peeler [regular peeler for wide noodles, spiralizer, mandolin, etc.] to create the noodles. Drizzle a small amount of olive oil on top and toss to coat. Spoon pesto over the noodles and toss with your fingers or two forks to coat. Add more pesto as needed.
  • Top with chopped pistachios, halved cherries, and a bit of lemon zest. Serve immediately. Best eaten right away [the noodles release a bit of liquid and soften] but it can be stored for about 1 day. Leave cherries and pistachios off until just before eating.
