GRILLED PESTO CHICKEN COUSCOUS BOWLS



Grilled Pesto Chicken Couscous Bowls image

Juicy grilled chicken, zucchini and tomatoes topped with a light spinach-arugula basil pesto served over couscous.

1 cup couscous
1 1/3 cups boiling water
Kosher salt and Black Pepper
2 medium zucchini (diagonally sliced 1/4 inch thick)
6 medium Campari tomatoes (halved)
Olive Oil Cooking Spray
4 Organic Chicken Breasts (6 ounces each)
1/2 cup fresh packed basil leaves
1/2 cup fresh packed SimplyNature Organic Baby Spinach & Arugula Mix
1 clove garlic
1/4 cup grated Parmesan
salt
Black Pepper (to taste)
3 tablespoons Extra Virgin Olive Oil

Steps:

  • To make the pesto: In a food processor, pulse basil, spinach and arugula mix, garlic, parmesan cheese, salt and pepper until smooth. Slowly add the olive oil while pulsing.
  • Place couscous in a medium, heat-proof bowl. Add boiling water and 1/4 teaspoon salt. Cover.
  • Let stand for 5 minutes or until liquid has been absorbed. Fluff couscous with a fork to separate grains.
  • Add 2 tablespoons of the pesto. Toss to combine and set aside.
  • Pound the thicker end of the chicken to make both sides leveled out so they cook evenly.
  • Spritz with oil and season with 1/2 teaspoon salt and black pepper.
  • Heat a grill or grill pan on medium-high heat.
  • Spritz the zucchini and tomato all over with olive oil, season with salt and pepper.
  • Cook zucchini, in batches, for 2 to 3 minutes each side or until tender. Transfer to a baking sheet. Cover to keep warm.
  • Add tomato to the grill. Cook, turning, for 1 to 2 minutes or until softened.
  • Cook the chicken 3 to 4 minutes each side or until browned and cooked through. Slice.
  • Divide couscous between 4 plates, 3/4 cup each.
  • Top with vegetables and chicken. Drizzle with remaining pesto. Serve.

4 tablespoons (1/2 stick) unsalted butter
3/4 cup chopped shallots
3 cups Homemade Chicken Stock, recipe follows, or canned broth
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 1/2 cups couscous
1/2 cup pignoli nuts, toasted
1/4 cup currants
3 (5-pound) chickens
3 large onions, unpeeled and quartered
6 carrots, unpeeled and halved
4 celery stalks with leaves, cut in thirds
4 parsnips, unpeeled and cut in 1/2, optional
20 sprigs fresh flat-leaf parsley
15 sprigs fresh thyme
20 sprigs fresh dill
1 head garlic, unpeeled and cut in 1/2 crosswise
2 tablespoons kosher salt
2 teaspoons whole black peppercorns

Steps:

  • Melt the butter in a large saute pan, add the shallots and cook for 3 minutes over medium heat. Add the chicken stock, salt and pepper, raise the heat to high and bring the stock to a boil. Off the heat and add the couscous. Cover the pan and let it sit for 10 minutes.
  • Add the pignoli nuts and currants to the couscous, stir and serve.
  • Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, salt, and peppercorns in a 16 to 20-quart stockpot with 7 quarts of water and bring to a boil. Skim the surface as needed. Simmer uncovered for 4 hours. Strain the entire contents of the pot through a colander, discarding the chicken and vegetables, and chill. Discard the hardened fat, and then pack the broth in quart containers.

2 cups couscous (I used Near East brand)
6 boneless skinless chicken breasts
2 cups carrots, shredded
2 cups pesto sauce, store bought
1 teaspoon salt

Steps:

  • Preheat oven to 350.
  • Combine 2 cups of water and salt in a large saucepan; bring to a boil.
  • Add couscous and carrots; stir, and remove from the heat.
  • Cover and let sit for 5 minutes.
  • Uncover and stir in 2 tbsp pesto.
  • Tear off 6 12-inch lengths of aluminum foil.
  • Put 1/6th of couscous mixture on one half of each piece of foil.
  • Top each with chicken breast.
  • Spread a bit of pesto over each piece of chicken.
  • Fold up the foil and seal.
  • Place packets on baking sheet and bake for 25-30 minutes.

½ cup prepared basil pesto, divided
4 thin slices prosciutto, or more if needed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish.
  • Spread about 2 tablespoons of pesto per chicken breast over the top of each breast, and wrap each breast in prosciutto slices to cover the entire breast. Place the wrapped chicken breasts into the prepared baking dish.

50g couscous
2 tbsp pesto
2 tbsp fat-free yogurt
2 cooked skinless chicken breasts , shredded, or 200g leftover roast chicken, shredded
½ small bunch of basil , leaves picked and torn, plus a few small leaves to serve
½ cucumber , chopped
2 sundried tomatoes in oil, drained and sliced
2 Little Gem lettuces , leaves separated
2 tsp toasted pine nuts

Steps:

  • Put the couscous in a large heatproof bowl and cover with 100ml boiling water. Stir in 1 tbsp pesto. Cover and leave for 8 mins.
  • Fluff the couscous with a fork, then stir in the rest of the pesto, the yogurt and some seasoning. Toss in the chicken, basil, cucumber and tomatoes.
  • Spoon the couscous mix into the lettuce leaves and eat with your fingers, or serve over the lettuce like a salad. Scatter over the pine nuts and more basil before serving.
