CUMIN CRUSTED CHICKEN WITH COTIJA AND MANGO-GARLIC SAUCE WITH GREEN ONION PESTO MASHED POTATOES
Steps:
- Whisk together the whole cumin, lemon juice, 1/2 cup olive oil, honey, and pepper in a medium baking dish. Add the chicken and turn to coat. Cover, and marinate for 1 hour in the refrigerator.
- Preheat oven to 400 degrees F.
- Heat a large ovenproof saute pan over medium high heat. Remove chicken from marinade and wipe off any excess. Combine the ground cumin, cotija, salt, and pepper in a small bowl. Dust the chicken on the skin side with the mixture.
- Heat 3 tablespoons olive oil in a large skillet. Place the chicken, skin side down, in the pan and cook until golden brown, about 3 to 4 minutes. Turn over and place in the oven. Bake for 8 to 10 minutes, or until just cooked through.
- Serve drizzled with the Mango Garlic Sauce and with the Green Onion Pesto Mashed Potatoes.
- Combine chicken stock, peppercorns, and garlic in a medium saucepan and cook until reduced to 3 cups. Strain into a bowl.
- Place both vinegars in a separate medium saucepan and cook until reduced by 1/2. Add the sugar and mango puree, and reduce until the sauce coats the back of a spoon thickly.
- Add the reduced chicken stock and cook for 10 minutes over medium heat until thickened, stirring occasionally. Season with salt and pepper.
- Place potatoes in a large pot of salted water and bring to a boil. Cook until soft, about 25 to 30 minutes. Drain well and run through a food mill into a large bowl. Stir in the butter and cream and mix until combined. Swirl in the Green Onion Pesto and season with salt and pepper, to taste.
- Combine pumpkin seeds, garlic, spinach, and cilantro in food processor and process until smooth. Add green onions and lime juice, and process until smooth.
- With the motor running, slowly add the oil. Add the Parmesan, honey, salt, and pepper, and pulse several times until combined.
ROAST CHICKEN WITH PESTO AND POTATOES
Steps:
- Preheat oven to 400°F. Stir pesto and garlic in medium bowl to blend. Transfer 1 tablespoon pesto mixture to small bowl and reserve for sauce.
- Spread 1/4 cup pesto mixture over outside and 1 tablespoon inside main cavity of chicken. Place potatoes in large roasting pan and toss with remaining pesto mixture. Push potatoes to sides of pan; place chicken in center. Sprinkle chicken and potatoes with salt and pepper. Roast until thermometer inserted into thickest part of chicken thigh registers 180°F and potatoes are brown and tender, about 1 hour 20 minutes.
- Transfer chicken and potatoes to platter. Add broth and reserved 1 tablespoon pesto to roasting pan. Place pan over heat; bring broth to boil, scraping up browned bits. Season sauce with salt and pepper. Serve chicken and potatoes with sauce.

- Mix 3 Tbsp pesto with potatoes and onions.
- Place into casserole dish.
- Top with chicken.
- Evenly rub 1 Tbsp pesto on top of the chicken breasts.
- Season with salt, pepper, garlic and Italian seasonings.
- Top with cheese.
- Bake at 400°F for 40 minutes. If the cheese begins to brown too fast, loosely cover w/foil then remove foil during the last 5-10 minutes.
- Serve with garlic bread and a salad.
- Enjoy!

- Preheat the oven to 400 degrees F (200 degrees C).

- Preheat the oven to 400 degrees F (200 degrees C).
- Slice potato very thinly, about 1/8-inch thick. Place slices in a bowl of water to prevent browning.
- Fold parchment paper in half to create two 15x12-inch rectangles. Drain potatoes and arrange 1/2 of the slices on the inside fold of the parchment paper in an overlapping semicircle. Season with salt and pepper. Top with 5 basil leaves and 1/2 of the onion slices. Repeat with the second piece of parchment paper.

- Use a 6 quart slow cooker.
- Blend or food process the first seven ingredients. (If you get to the chicken, you've gone too far.).
- Take a small taste to double check the flavor of your pesto and adjust as needed.
- Arrange the chicken in the bottom of your slow cooker. Chicken may be used frozen.
- Layer on the mozzarella cheese.
- Pour on the pesto.
- Cover with aluminum foil or parchment paper.
- Scrub sweet potatoes well and prick with a fork or other puncturing object.
- Lay them on top of the foil or parchment, of course.
- Cover and cook on low for 6-7 hours or on high for 4-5.
- If your chicken is frozen, it will take longer.
- When done, carefully remove the sweet potatoes with tongs.
- Watch out for steam. [As a side note, I am the queen of steam burns. Oops, forgot the mitt again.].
- Enjoy!

- Heat grill to medium heat.
- Process first 4 ingredients in food processor until smooth. Spoon half into small bowl. Add shredded cheese; mix well.
- Cut lengthwise slit in thickest side of each chicken breast, being careful to not cut through to opposite side. Stuff pockets with shredded cheese mixture; close pockets and secure with wooden toothpicks. Spray chicken with cooking spray. Grill, covered, 4 min. on each side or until done (165°F).

- 1. For the Roast Potatoes, slice 3 medium potatoes, skin on, and 6 medium sized mushrooms into a large bowl with a lid. Add 3 tbsp olive oil, and dried parsley, oregano, salt, and italian seasoning mix to taste. Shake vigorously until potatoes are coated.
- 2. Transfer to microwave safe container, and microwave for 3 minutes.
- 3. Bake for 20 minutes in 350 degree oven, in an open top baking dish.
- 4. For the Pesto Pasta, begin with a roux. Whisk together 1 1/2 cups milk and 2 tbsp flour in a small saucepan. Add 2 tbsp butter as you stir. Add approx 3 tbsp shredded mozzarella cheese, stirring constantly. Remove from heat once the sauce thickens.
- 5. Prepare two Knorr brand Pesto Sauce Mixes according to directions, set aside.
- 6. Slice two colorful bell peppers into strips, use two different colors of your choosing. Slice up 1 red onion, and mince 4 cloves of garlic.
- 7. In a large saucepan or a wok, sautee the garlic until they begin to become translucent. Add the peppers and onions, sautee for at least five minutes, stirring occasionally.
- 8. Add white sauce and pesto and salt to taste. Cook for another 5 mins, remove from heat.
- 9. Boil a box of whole wheat pasta, any variety of your choosing.
- 10. For the Chicken, slice 2.5 lbs of boneless chicken breasts into thin strips. Sautee 2 cloves minced garlic in 2 tbsp olive oil, then fry the chicken until the outside is cooked but not all the way through (about halfway).
- 11. Take chicken off heat and transfer to bowl. Rub the chicken in either chili powder or paprika (your preference) to taste, approx 2 tbsp brown sugar, and salt to taste.
- 12. Transfer back to frying pan, add 1/2 c red wine, finish cooking until chicken is cooked through, wine has reduced, and chicken has taken on a slight purple hue.

PESTO CHICKEN & POTATOES
This was wonderful. It used up the leftover pesto I had, and the partial bags of frozen spinach and tri-colored bell peppers, and the mushrooms that would have gone bad. I love dinners that use up what I already have. It is easy to prepare, you just have to give it time to cook, which can be agonizing when you are home from a long day of work and are starving. But I think it was worth it.

- Pre heat the oven to 450. Peel and cut the each potato into 8 wedges. Place on a lined & sprayed cookie sheet. Bake for 40 minutes.
- After you put the potatoes in the oven, Heat up a saute pan to medium. Spread the pesto on the chicken thighs.
- Place chicken, frozen spinach, peppers, mushrooms, salt & pepper in the pan and cover. Cook for about 10 minutes and flip the chicken. You will want to cook the chicken until the juices run clear (about 10-15 more minutes).
- When the chicken is done, you should only have a few more minutes until the potatoes are done. Turn off the heat under the chicken but keep it covered until you are ready to serve.

- Preheat oven to 400 degrees F (200 degrees C).
- In a saucepan, bring the vinegar to a boil. Reduce heat, and simmer 15 minutes, stirring frequently, until thickened.
- Cut a pocket in each chicken breast. Fill each pocket with an equal amount of mozzarella cheese, and season with salt and pepper. Wrap each chicken breast with a slice of ham. Arrange the wrapped chicken breasts in a baking dish. Place the tomatoes around the chicken, sprinkle all with olive oil, and season with salt and pepper.
- Bake 25 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
