1 teaspoon minced garlic

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Mix together ground turkey, pesto, garlic, feta cheese, 1 1/2 teaspoons seasoned salt, and breadcrumbs in a bowl until evenly blended. Form into 4 patties.
  • Grill pesto burgers until no longer pink in the center, about 5 minutes per side. Sprinkle with seasoned salt halfway through cooking.

1 teaspoon sugar
1 Asian pear, peeled and cut into thin matchsticks
1 medium carrot, peeled and cut into thin matchsticks
1/2 cup roasted and salted peanuts
1/2 cup fresh basil leaves
1/4 cup fresh cilantro leaves
2 tablespoons unsweetened shredded coconut
2 tablespoons roasted peanut oil
1/4 teaspoon sea salt
1/3 cup quartered cherry tomatoes
1 (14-ounce) can unsweetened coconut milk
1 lime, zest grated
1 tablespoon fresh lime juice
1 teaspoon Thai red curry paste
2 pounds coarsely ground chicken thighs
1/2 cup chopped fresh basil leaves
1/2 cup panko (Japanese bread crumbs)
2 teaspoons sea salt
Vegetable oil, for brushing on the grill rack
6 seeded hamburger buns, split

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • For the slaw: Whisk together the lime juice and sugar in a medium-sized bowl to dissolve the sugar. Add the pear and carrot and toss to coat. Cover and chill until serving time.
  • For the pesto: Place all of the ingredients except the tomatoes in a small food processor; process briefly until the mixture forms a coarse paste. Transfer to a small bowl and gently stir in the tomatoes. Cover and set aside.
  • For the patties: Combine the coconut milk, lime zest, and lime juice in a 10-inch fire-proof skillet. Place the skillet on the grill rack and bring the mixture to a simmer. Continue cooking, stirring occasionally, until the mixture is thickened and reduced to 2/3 cup, about 15 minutes. Add the curry paste to the mixture and whisk until smooth. Transfer to a small bowl to cool.
  • Place the chicken in a large mixing bowl. Add the cooled coconut milk mixture, basil, panko and salt. Using a large fork, mix the ingredients together gently but thoroughly. Divide the mixture into 6 equal portions and form the portions into patties to fit the buns, making a slight indentation in the center of each patty.
  • When the grill is ready, brush the grill rack with oil. Place the patties on the rack, cover, and cook for 4 minutes. Flip the patties, cover, and cook an additional 4 minutes, or until the juices run clear from the center of the patties when pierced. During the last few minutes of cooking, arrange the buns, cut side down, around the edges of the grill to toast lightly.
  • To assemble the burgers: Distribute an equal amount of the slaw on the bottom buns. Top each with a patty and a dollop of the pesto. Add the bun tops and serve.

Steps:

  • In a food processor, puree basil, spinach, garlic, walnuts, oil, and 1 tablespoon water. Season pesto with salt and pepper.

4 large portobello mushrooms (about 1 1/4 to 1 1/2 pounds)
3 tablespoons extra virgin olive oil (1 tablespoon for the pan)
1 garlic clove, crushed
2 tablespoons finely chopped basil
4 heaped tablespoons pesto
Salt
Freshly ground pepper
Hamburger buns for serving (optional)

Steps:

  • Carefully remove the stems from the portobellos and scoop out the gills using a spoon. In a large bowl, toss the portobellos with 2 tablespoons olive oil, salt, pepper, crushed garlic and chopped basil. Marinate for 30 minutes.
  • Heat remaining oil in a large, heavy skillet over medium-high heat. Add the portobellos (in batches if necessary), rounded side down, and cook 7 minutes. Flip the mushrooms over and cook another 5 to 7 minutes. The mushrooms should be releasing liquid. Flip over again so the cavity is up, and spread a heaped tablespoon of pesto in each cavity. Cook another 2 minutes, until the mushrooms are tender and juicy and the pesto is warm. The mushrooms will release more liquid into the pan, then the liquid will evaporate. Serve on hamburger buns if desired.

1 1/4 pounds ground chicken
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
3 tablespoons sliced almonds
2 medium tomatoes (1 whole, 1 thickly sliced)
4 cups loosely packed fresh basil (about 1 bunch)
2 tablespoons grated parmesan cheese
1 5-ounce package baby arugula
Juice of 1/2 lemon

  • Toss the cut-up bun with 3 tablespoons water in a large bowl; set aside 1 minute. Add the chicken, 3/4 teaspoon salt, and pepper to taste; mix with your hands until combined. Form into four 3/4-inch-thick patties. Heat the olive oil in a large nonstick skillet over medium heat. Add the almonds and cook, stirring, until lightly toasted, about 2 minutes. 1/4 to 1/2 cup extra-virgin olive oil

Steps:

  • Drizzle 1 tablespoon grapeseed oil into a large skillet over medium-high heat. Add onion and sauté until tender and lightly browned. About 5 minutes. Add garlic, mushrooms, thyme, and tamari. Cook until tender and fragrant, about 5 to 8 minutes. Remove veggies from heat and set aside to cool for about 5 minutes. Lightly wipe down the pan since you'll be using it again. 1 1/2 lbs lean ground beef
1 (1/2 ounce) package dry pesto sauce mix
1 cup shredded provolone cheese or 1 cup mozzarella cheese, and more if desired
3 kaiser rolls
3 slices tomatoes
3 lettuce leaves
3 slices red onions
3 tablespoons mayonnaise
1 teaspoon prepared basil pesto (in the jar)

Steps:

  • Mix dry pesto mix into hamburger well.
  • Shape into 6 THIN patties, (they will be large).
  • (Make sure edges are nice, not cracked).
  • Top 3 patties with the provolone cheese evenly, in the center.
  • Top each with the remaining patties and seal edges well.
  • In very small bowl, mix mayo and jarred pesto sauce for spreading later.
  • Grill burgers, approximately 12-13 minutes total, turning once, or til burgers are done, over medium-high grill.

  • In bowl combine ground chicken, half of the pesto, the Parmesan, garlic, and salt. Shape into four 1/2-inch-thick oval patties (to fit bread). Halve ciabatta horizontally. Brush cut side of ciabatta or both sides of Italian bread with olive oil; set aside (reserving any extra oil). For a charcoal grill, place patties on greased rack directly over medium coals. Grill, uncovered, 10 to 13 minutes or until chicken is no longer pink (165 degrees), turning once halfway through grilling. Top each patty with a mozzarella slice. Cover grill; grill 1 to 2 minutes more or until cheese is melted. Add bread and grill for 1 to 2 minutes per side or until toasted. (For gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover; grill as above.) Arrange greens on toasted bread. Top with chicken patties and tomato slices. Stir any remaining olive oil into remaining pesto and drizzle over all. Sprinkle with coarsely ground black pepper. Makes 4 servings.

I think that we can officially declare that it is grilling season. With the warm weather and the 4th of July just around the corner I can't wait! My hubby claims to be the grill master. I do all of the cooking around here, but when it comes to the grill, that is his territory. But I have yet to find someone that can make chicken so juicy and tender and burgers that are cooked to perfection. He wasn't around for the last family barbecue, so I had to make something delicious and grill it. The pressure was on. I made these DE-licious Tuscan Garlic Burgers.

2 pound(s) ground beef
6 ounce(s) sliced pancetta, finely chopped
2 teaspoon(s) minced garlic
1/2 teaspoon(s) fresh ground pepper
1/2 teaspoon(s) salt
1/2 cup(s) hellmanns mayonnaise
1/2 cup(s) prepared pesto, divided
16 ounce(s) mozzarella cheese, cut into 8 slices
8 - italian rolls, split
2 cup(s) fresh arugula or baby spinach
1 medium red onion, sliced
3 - plum tomatoes, sliced

Steps:

  • In a small bowl combine mayonnaise and 2 tablespoons pesto. Chill until ready to use.
  • In a large sized mixing bowl combine ground beef, pancetta, minced garlic, salt, pepper, and remaining pesto. Mix well and shape into four patties.
  • Grill burgers over medium heat for about 5-7 minutes on each side or until a thermometer reads 160 degrees.
  • Top burgers with mozzarella cheese and grill until cheese is melted.
  • Spread cut sides with pesto mayo and top with red onion tomato, and arugula.

cup fresh basil leaves
1 cup baby spinach (1 ounce)
1 clove garlic, peeled
1/4 cup walnuts
4 tablespoons olive oil, plus more for grilling
Coarse salt and pepper
1 pound ground white-meat chicken
2 large tomatoes, cut into 1/2-inch slices
3 ounces fresh mozzarella, sliced
4 pieces focaccia, halved

Steps:

  • In a food processor, puree basil, spinach, garlic, walnuts, oil, and 1 tablespoon water. Season pesto with salt and pepper. Heat a grill or grill pan to medium-high. Combine 1 tablespoon pesto, 3/4 teaspoon salt, 1/4 teaspoon pepper, and chicken and form into 4 patties. Clean and lightly oil hot grill. Brush tomatoes with oil and season with salt and pepper. Grill patties, covered, 4 minutes. Flip patties and top with cheese. Add tomatoes to grill and cook, flipping once, until tomatoes are lightly charred and burgers are opaque throughout, 4 minutes. Assemble sandwiches in focaccia with pesto, burgers, and tomatoes.

1/2 Tablespoon gluten free Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 pounds lean ground turkey
1/2 Tablespoon grapeseed oil
¼ cup pesto * see prep guide
4 gluten free hamburger buns (or 8
slices fresh gluten free bakery bread)
1 cup baby spinach leaves
1 tomato, sliced to yield 4 slices

Steps:

  • 1. In a large bowl combine breadcrumbs, onion, parsley, shredded carrots, oregano, zest, garlic, Dijon, and salt & pepper and mix well. Add in the turkey and mix until just combined. 2. Form the turkey into 4 equal size patties for the burgers. 3. Cook the burgers for 8-10 minutes per side until they are cooked through and no longer pink in the middle. 4. Just before placing the burgers on the buns, spread 1 Tablespoon of pesto over the top of each burger. Garnish each burger with some fresh spinach leaves and a slice of tomato.

purchased pesto
mayonnaise
sourdough, whole grain, or ciabatta rolls, split horizontally
portobello mushrooms, stemmed, dark gills scraped out
Olive oil
Roasted red peppers from jar, drained
arugula (about 2 ounces)
slices provolone cheese

Steps:

  • Stir pesto and mayonnaise in small bowl to blend. Season with salt and pepper.
  • Prepare barbecue (medium-high heat). Grill rolls, cut side down, until lightly toasted. Transfer to plates. Spread grilled side of rolls with pesto mayonnaise.
  • Brush mushrooms on both sides with oil; sprinkle with salt and pepper. Grill, rounded side up, 4 minutes. Turn mushrooms over. Cover and grill until mushrooms are tender, about 4 minutes. Place 1 mushroom on each roll bottom. Top each with enough red pepper pieces to cover, then with arugula and cheese. Press roll tops over and serve.
