PERUVIAN AJI-STYLE SAUCE

Peruvian Aji-Style Sauce image

I got this recipe from a restaurant in California 10 years ago. It's been a staple in my refrigerator ever since. It's excellent with rotisserie chicken. You can lower the calories if you stream in olive oil in replace of the mayo.

PERUVIAN GREEN CHILE SAUCE (AJI VERDE)

Peruvian Green Chile Sauce (Aji Verde) image

This is one of my favorite dips for bread. I also use it as a condiment for grilled steaks and pork chops. It's smooth, spicy, and very addictive! If you want even more spice, add additional jalapeno peppers.

PERUVIAN AJI AMARILLO CHEESE SAUCE

Peruvian Aji Amarillo Cheese Sauce image

A cheese sauce that goes well with Peruvian/Latin American foods. I learned the recipe from an elderly Peruvian woman! Especially good with Peruvian 'Lomos Saltado,' or as a topping for baked potatoes and hard-boiled eggs. If you want it spicier, leave a few of the seeds with the peppers.

PERUVIAN AJI SAUCE

Peruvian Aji Sauce image

This is the bright green spicy sauce served in Peruvian restaurants that is delicious as a bread dip but can be used on meats or fish.

Provided by Cremon

Categories     Spreads

Time 15m

Yield 10-14 serving(s)

Number Of Ingredients 11

2 heads washed romaine lettuce
2 bunches of fresh washed fresh cilantro
1/2 bunch fresh parsley
5 fresh jalapenos or 5 serrano chilies
1/2 cup mayonnaise
1/4 cup vegetables
1/3 of an onion
3 garlic cloves
1 tablespoon lime juice
1 tablespoon kosher salt
1/8 teaspoon finely ground black pepper

Steps:

  • Chop everything up as needed to fit into a blender.
  • Remove the thick stems from the Cilantro and Parsley bunches. Cut the hard stem/hearts out of the romaine lettuce.
  • Combine ingredients in the blender and blend thoroughly until smooth. Add small amounts of water if it sticks and gets too thick to blend. It will be a bright teal to sea green in color when complete.
  • Spread it on any kind of bread either by itself, or on top of butter, margarine or hydrolyzed vegetable oil spreads. It is very tasty and really wakes up bread or can be used as a dip with chips.
  • Store up to a week in the refrigerator. This stuff is awesome but very perishable, so I would use it within 5 days.

AJI VERDE (PERUVIAN GREEN CHILI SAUCE)

Aji Verde (Peruvian Green Chili Sauce) image

Make and share this Aji Verde (Peruvian Green Chili Sauce) recipe from Food.com.

Provided by Karina A

Categories     Sauces

Time 20m

Yield 1 bowl, 1 serving(s)

Number Of Ingredients 8

1 bunch cilantro
3 jalapenos
1 garlic clove
1/2 teaspoon salt, to start
1/4 cup olive oil, to start
mayonnaise, about 3 tblsp to start (Substitute with oil and blend until it becomes creamy if you want to keep this more authentic.)
1/4 cup water
fresh lemon juice or white wine vinegar

Steps:

  • Some recipes call for cilantro leaves only, but I threw in the stems as well to add some liquid to the sauce. I know cilantro is an acquired taste, so substitute with iceberg or romaine lettuce if you want a neutral taste but want to retain the green color.
  • Halve and de-seed the chili peppers. Make sure you wear gloves or thoroughly wash your hands afterward. And don't rub your eyes!
  • Puree all the ingredients in a blender, food processor, or hand immersion blender. It's like making pesto, start with the basic portions and adjust according to your taste. What worked for me was roughly those amounts. Add mayonnaise for creaminess. You can add water too if the sauce appears too thick. I've seen some recipes that called for white cheese or nuts, but felt those were too strong in taste since the versions of aji sauce that I've liked were light in flavor, with just an undertone of spiciness.
  • Serve with bread for dipping.

PERUVIAN QUINOA SHRIMP CHICHARRONES WITH GREEN AJI SAUCE

PERUVIAN QUINOA SHRIMP CHICHARRONES WITH GREEN AJI SAUCE image

Yield 4 servings

Number Of Ingredients 13

1 large jalapeño, seeded
2 cloves garlic
1 bunch cilantro, cleaned and stemmed (2 cups leaves)
2 tablespoons lime juice
1/4 teaspoon salt
1/4 cup extra virgin olive oil
1/2 cup red or regular quinoa, rinsed
16 jumbo shrimp or prawns, tails on, deveined
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon cayenne
1/2 cup unbleached white flour
2 large eggs, lightly beaten

Steps:

  • 1. Make the sauce first. In a food processor or blender, finely mince the jalapeño, garlic, and cilantro. Add the lime juice and purée. Drizzle in the olive oil to make a smooth sauce. Reserve. 2. Bring a large pot of water to a boil. After rinsing the quinoa, add it to the boiling water and cook for 10 minutes, then drain. Spread the quinoa out on a baking sheet lined with paper towels to dry. It should be quite dry to the touch; pat it with towels if necessary. 3. Pat the shrimp dry, if damp, and put it in a medium bowl. Mix the oregano, cumin, and cayenne and sprinkle over the shrimp; toss to coat. 4. Preheat the oven to 425°F. Prepare 2 pie pans, one with the flour, one with the beaten eggs. Dip the shrimp in the flour, then the egg, then the quinoa. Place 2 heavy baking pans in the hot oven for 5 minutes. Take each out, spray liberally with oil, then quickly place the shrimp on the hot pans, keeping them from touching. Spray the coated shrimp with oil, and bake for 5 minutes. Flip the shrimp with tongs, then bake for 5 minutes more. Cut one through the thickest part to make sure they are cooked through. The baking time will vary with the size of the shrimp. 5. Serve the shrimp hot with the aji sauce.

PERUVIAN AJI SAUCE

Peruvian Aji Sauce image

After eating at many a Peruvian restaurant, I became hooked on the green dipping sauce. Here now is SoCalTed's Peruvian Aji Sauce!

Provided by SOCALTED

Categories     Side Dish     Sauces and Condiments Recipes     Sauce Recipes

Time 15m

Yield 8

Number Of Ingredients 4

1 head iceberg lettuce
½ cup mayonnaise
3 fresh jalapeno peppers
1 cup white bread cubes without crusts

Steps:

  • Remove the stems from your jalapenos. Using tongs, hold the peppers over a stove burner and rotate until roasted, about 1 minute. Delicious, but not necessary.
  • Slam your head of lettuce down on the counter stem side down. Pull on the stem to remove the heart and discard. Rip the head of lettuce apart - don't be gentle!
  • Place lettuce and one or two of the roasted jalapenos into a blender or large food processor. Blend on low speed until jalapenos are pleasantly ground up. Add the mayonnaise, and pulse until blended in. Gradually blend in bread cubes until you get a nice thick but still pourable consistency. If it gets too thick add more mayonnaise. Taste, and blend in more peppers if desired.
  • Put in a squeeze bottle and serve with your favorite dishes, like Saltado de Pollo, or simply dip your bread in it.
