By using a diet softdrink as the wet ingredients in the cake, you cut a lot of calories! It gives you a very moist, yummy cake. I like to make this cake in mini-muffin cups to have ready-to-go servings on hand when I want a sweet treat.

10 oz pepsi max (or other diet cola)
1 box devil's food cake
1 egg white

Steps:

  • 1. Preheat oven to 350 degrees. Spray mini-muffin cups with non-stick spray.
  • 2. Mix all ingredients on medium speed until well blended.
  • 3. Use a small ice-cream type scoop to fill muffin cups. This makes 48 cupcakes.
  • 4. Bake at 350 degrees for 20 minutes or until center of cupcakes is done.
  • 5. These are excellent served with a small dollop of whipped cream and a couple slices of banana! Yum!

1 cup butter, softened
2 cups all purpose flour
1 1/3 cups sugar
5 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon vanilla
2 eggs
1/2 cup buttermilk
1 cup Pepsi
1 1/2 cups miniature marshmallows

Steps:

  • Combine all ingredients except Pepsi and marshmallows.
  • Mix at low speed.
  • Add Pepsi and blend well.
  • Stir in marshmallows.
  • Pour batter into greased 9x13 cake pan.
  • Bake in preheated 350 degree oven for 35-40 minutes or until toothpick inserted comes out clean.
  • Cool and ice with Pepsi Icing. Icing:1. Combine 1/2 cup softened butter, 3 tablespoons cocoa powder and 1/3 cup of Pepsi.2. Beat until smooth.3. Add 4 cups of powdered sugar, a little at a time, beating well until icing is smooth.

1 c. Pepsi
1/2 c. vegetable oil
1 stick butter
3 heaping tbsp. unsweetened cocoa powder
2 c. sugar
2 c. flour
4 oz. Bakers Chocolate, melted
1 tbsp.vanilla extract
1 tsp. baking soda
1/2 c. buttermilk
2 large eggs
FROSTING
1 stick butter
3 tbsp. unsweetened cocoa powder.
6 tbsp.milk
1 tsp. vanilla extract
4 c. powdered sugar
pinch of salt

Steps:

  • Preheat oven to 350 Degrees and spray a 9X13 pan and set aside.
  • In a large bowl, whisk together the flour and sugar. In a large saucepan, melt the oil, butter, and add Pepsi and cocoa powder and bring to a boil. Once the mixture has begun to boil remove from heat and using a handheld or standing mixer, slowly pour into flour/sugar mixture. Allow batter to cool for about 5 minutes. Next, add Bakers Chocolate, vanilla extract, and buttermilk. Add eggs one at a time and finally baking soda. Pour into prepared pan and bake for 20-25 minute or until a toothpick can be inserted and comes out clean
  • Allow cake to cool and begin to prepare the frosting. Bring the butter, cocoa powder, and milk to a boil and remove from heat. Whisk in the powdered sugar and add vanilla extract. Pour on top of the cake and set in the refrigerator and/or cover at room temperature until ready to serve.
  • * Note: the original recipe mentioned to pour the frosting on top of the cake while the cake is still warm. I allowed my cake to cool for about 20-30 minutes before I poured over the frosting and my cake came out fine.

I am a fan of soda cakes anyway, so I thought it would be fun to make one with a few new twists. Applesauce replaces half of the fat in the cake, while ketchup and maple syrup add a nice kick to a delicious cake. The English Toffee pieces add a wonderful texture and crunch. Very easy to make and tastes just as delicious (if not more so!) the next day.

1 (15 1/2 ounce) yellow cake mix (I used Duncan Hines without pudding in the mix)
1/2 cup butter, melted
1/4 cup cocoa powder
1/4 cup applesauce
1/4 cup ketchup
1 teaspoon vanilla extract
1 cup Pepsi
2 large eggs, beaten
1/2 cup buttermilk
1 teaspoon baking soda
1 1/2 cups mini marshmallows
1/4 cup cocoa powder
1/2 cup butter, melted
1/3 cup Pepsi
1 teaspoon vanilla extract
1/8 cup maple syrup
1/4 cup ketchup
3 1/2 cups powdered sugar (to get desired consistency, adjust as needed)
1 cup english toffee pieces

Steps:

  • Pour cake mix in large mixing bowl. Melt butter and add cocoa powder. Mix until smooth. Add applesauce, ketchup, vanilla extract and Pepsi Cola to cocoa mixture. Blend well. Pour mixture into cake and stir by hand until batter is a liquid consistency (there will be small lumps). Mix buttermilk and baking soda together in a small bowl. Add beaten eggs to buttermilk mixture. Pour buttermilk and eggs into the cake batter and blend well. Fold mini marshmallows into batter. Pour cake batter into a greased 13" x 9" baking pan. Bake at 350 degrees Fahrenheit for 40-45 minutes, until a toothpick inserted in center of cake comes out clean. Cool cake on a wire rack for about 15 minutes.
  • While cake is cooling make your icing. Melt butter in medium saucepan. Add cocoa powder and stir until mixture is smooth. Add Pepsi Cola, vanilla extract, maple syrup and ketchup. Bring to a slow boil over medium-low heat, stirring constantly. When mixture reaches a boil, remove from heat and add powdered sugar until desired consistency is achieved. Fold in English Toffee pieces. Icing will be a little bit runny at this point. Pour over cake and spread out evenly to coat. Let cake stand for at least 30 minutes before.
  • Prep Time: Cake - 10 minutes.
  • Icing 5 minutes.
  • Cook time: Cake - 40-45 minutes.
  • Icing - 10 minutes.

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Combine the cake mix and cola in a large bowl. Use a hand whisk to mix ingredients until light and smooth, about 3 minutes. Pour batter into prepared baking dish.
