1 cup white sugar
1/2 cup light corn syrup
1 cup salted peanuts
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • Grease your cookie sheet with butter.
  • In a 2 quart glass bowl, combine sugar and corn syrup. Microwave for 4 minutes on high.
  • Stir in peanuts and microwave on high for another 3 ½ minutes. Stir in butter and vanilla. Microwave for 1 minute and 30 seconds.
  • Stir in baking soda until the batter becomes light and foamy. Pour batter onto the cookie sheet. Spread so that it's even and thin.
  • Cool completely and break into pieces.
  • Enjoy!

Steps:

  • Butter a cookie sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.
  • Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.

cooking spray
1 cup white sugar
½ cup light corn syrup
1 ½ cups peanuts, or more to taste
1 tablespoon butter
1 teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Spray a baking sheet and a wooden spoon with cooking spray.
  • Mix sugar and corn syrup together in a microwaveable bowl safe for high temperatures.
  • Heat sugar mixture in microwave on high for 5 minutes.
  • Stir peanuts and butter into sugar mixture. Heat in microwave until mixture becomes a caramel color, 3 to 4 minutes.
  • Mix baking soda and vanilla extract into syrup until smooth and foam has dissipated. Spread candy onto the prepared baking sheet using the sprayed wooden spoon. Work quickly; candy hardens fast. Let stand until cool. Break into pieces to serve.

Bravo to Love2Eat's Peanut Brittle in a Jiffy #58383 - it got me started, but with the adjustments for my higher powered microwave and some flavor changes I thought I should write my own recipe. I can not say how much Love2Eat's note about having everything measured out and ready to go was a life saver. I use an 8 cup pyrex measuring bowl with a handle as this mixture bubbles up and gets very hot (bowl gets very hot too) - it is MOLTEN SUGAR- if your work area is not right next to your sink - have a bowl of ice water in case of burns. THIS RECIPE IS FOR A 1200 WATT MICROWAVE. Oh yeah, I sorta faked it on how many this will serve - it is habit forming.

1 cup white sugar
1 tablespoon molasses (unsulphured)
1/2 cup less 1 tablespoon corn syrup
2 cups salted peanuts
1 teaspoon vanilla
1 tablespoon butter
1 teaspoon baking soda

Steps:

  • Line a baking/cookie sheet with foil or parchment paper and spray with cooking spray or grease with butter.
  • Put 1 tablespoon molasses in a ½ cup measuring cup and then fill with corn syrup (spray cup with cooking spray first, so corn syrup will come out easier).
  • Put corn syrup mixture and white sugar in an eight cup bowl and mix well then microwave on high for 2 minutes, remove and stir and then microwave for 1 more minute.
  • Remove from microwave and add peanuts, stir into bubbling sugar mixture and microwave for 2 minutes.
  • Remove from microwave and then stir in butter and vanilla and microwave for 1 minute.
  • Remove from microwave and quickly stir in baking soda - it will get somewhat white and foamy - spread out onto baking sheet - you can let it cool at room temperature or cool in the fridge. Put mixing bowl cup in sink under hot running water to aid in cleanup.
  • * I add the molasses because it gives the brittle a beautiful color - it is not required to make the recipe - if you don't want to use it, just use a full ½ cup of corn syrup. Watch out with sampling - this stuff is habit forming - if you want to bump it up a notch - add 1 teaspoon cinnamon to sugars at begining (my daughter and I like) or if you really want to kick up it up - add the cinnamon and 1/3 teaspoon caynne pepper - hot stuff. I love the sweet and spicy.

I usually make brittle with cashews and for a change and less money I decided to make some with dry roasted peanuts..I even tried making brittle with Puffed Wheat Cereal and was happy with the result....Since my recipe book will be called SOUP TO NUTS I have to make several candy recipes and now have a stsrter.

1 1/4 c peanuts, dry roasted [salted}
1 1/2 tsp hot pepper sauce
1/4 tsp ground allspice
1 c sugar
1/2 c light cornsyrup
1 tsp butter no substitute
1 1/2 tsp baking soda
1 tsp vanilla extract

  • 1. This peanut can be made in the microwave. I find it quicker and easier but can also be made the usual way you make it if you have made brittle before.
  • 2. Using 15x10x1 inch metal cookie sheet,,butter the sheet and also butter a spatula. you can also use buttery cooking spray...Toss the peanuts, hot pepper sauce and allspice until well coated.
  • 3. In a 2 quart microwave safe glass bowl combine sugar and corn syrup, microwave, uncovered, on high cook for 4 minutes, stir, add peanut mixture, stir until blended...heat on high for another 4 minutes longer and mix turns light amber color. check with thermomete and if it reached th hard cracked stage,stir in butter micro 45 seconds longer, quickly stir in the baking soda and vanilla mixter should foam.. BE CAREFUL AS MIX WILL BE VERY HOT AND CAN A SERIOUS BURN..I use oven mitts to remove from micro.
  • 4. Pour mixture onto pan and spread out with buttered spatula..spread as thin as possible,,you will have to work quickly..chill and break into pieces when chilled and set...My micro is an 850 watt micro. If you happen to get any hot mix on arm or hand immediately place an ice cube on area to avoid blistering Happy crunching.

I have been making this since microwaves first came out, it's so easy and really a no-fail recipe, you may use other kinds of nuts if desired --- *warning* this is very habit-forming :)

1 cup sugar
1/2 cup corn syrup
1 1/2 cups dry roasted salted peanuts (use dry roasted peanuts only!)
1 tablespoon butter
1 1/2 teaspoons vanilla
1/2 teaspoon maple extract or 2 teaspoons vanilla
1 teaspoon baking soda

Steps:

  • Combine sugar and corn syrup in a 3-qt heat-resistant plastic microsafe bowl.
  • Microwave on high for 5 minutes.
  • Stir in peanuts; microwave on high for 2-3 mins longer, or until peanuts and syrup are lightly browned.
  • Add butter, vanilla and baking soda.
  • Mix until light and foamy (be careful, syrup is HOT!).
  • Pour quickly onto a buttered cookie sheet, and spread to desired thickness.
  • When cool, break into pieces.
