I got this recipe from a Conservative Mennonite friend in Indiana - Very Traditional and VERY yummy!

1 cup margarine
1 1/2 cups granulated sugar
2 eggs
2 tablespoons light corn syrup (Karo)
2 teaspoons baking soda
3 3/4 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon powdered ginger
1/2 teaspoon ground cloves
1 tablespoon anise flavoring

Steps:

  • Mix and store in refrigerator overnight.
  • Make into 3/8 inch rope and cut into small slices about the width of a pencil.
  • Bake at 375 degrees for about 7 minutes.

Yield 1 loaf (16 slices) and 1/2 cup spread.

Number Of Ingredients 15

2-1/2 cups chopped dates
1-1/2 cups boiling water
1-1/2 teaspoons baking soda
1-3/4 cups all-purpose flour
1/4 teaspoon each ground cloves, cinnamon, ginger and nutmeg
2 tablespoons butter, softened
1-1/4 cups sugar
1 large egg
2 teaspoons vanilla extract
1-1/2 cups coarsely chopped pecans
SPREAD:
3 ounces cream cheese, softened
2 tablespoons chopped dates
2 tablespoons coarsely chopped pecans
1 tablespoon 2% milk

Steps:

  • Place dates in a large bowl. Combine boiling water and baking soda; pour over dates. In a small bowl, combine the flour, cloves, cinnamon, ginger and nutmeg; set aside. , In another large bowl, beat butter and sugar until crumbly. Beat in egg and vanilla. Add flour mixture alternately with date mixture. Stir in pecans. , Pour into a greased and floured 9x5-in. loaf pan. Bake at 350° for 65-75 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to wire rack to cool completely. , In a small bowl, combine spread ingredients. Cover and refrigerate for 1 hour. Serve with bread.

1 cup margarine
1 1/2 cups sugar
2 eggs
2 tablespoons dark molasses
3 3/4-4 1/4 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon clove
1 teaspoon ginger
1 teaspoon anise extract

Steps:

  • Cream margarine & sugar, add molasses & eggs and beat well. Add anise extract and mix well. Add dry ingredients-then work with hands until you have a very stiff dough. Form into balls & chill. Roll in long rolls about the size of your finger & cut in small pieces. Pick these up & roll into balls. About the size of a small marble. Bake for 8-10 minutes at 375 degrees.

2 1/4 cups all-purpose flour (reserve 1/4 cup of this for flouring the cherries)
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups sweet cherries in juice, drained
8 tablespoons unsalted butter, softened
3/4 cup sugar
1/4 cup honey
2 large eggs

Steps:

  • Preheat oven to 350°F.
  • Sift the 2 cups flour (set aside reserved 1/4 cup for cherries), baking powder, baking soda, and salt together into a bowl.
  • In a second bowl, toss the cherries with the reserved 1/4 cup flour.
  • In the bowl of an electric mixer, cream the butter until it is light and fluffy; add the sugar and honey gradually, beating the mixture until it is very light.
  • Add the eggs, one at a time.
  • With mixer at lowest speed, add the flour mixture.
  • Fold the floured cherries into the batter.
  • Turn the batter into a buttered and floured loaf pan, approximately 9 x 5 x 3 inches.
  • Bake the bread in the center of the oven for 1 hour.
  • Cool the loaf for 15 minutes in the pan; unmold the bread on a rack to cool completely.
  • Wrap the cherry bread loaf in plastic wrap and keep for a day before serving for best flavor.
