PEPPERMINT CRUNCH CHRISTMAS COOKIES
Several years ago, I took a basic shortbread recipe and turned it into a much more festive Christmas cookie. These gems are now a family favorite and are among the best Christmas cookies of the holiday season. -Heather Carter, Wasilla, Alaska

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in extracts. Gradually beat in flour. Divide dough in half; tint 1 portion red and the other green. Wrap each in waxed paper; refrigerate 2 hours or until easy to handle., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 1-1/2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake 8-10 minutes or until firm. Remove from pans to wire racks to cool completely., Dip half of each cookie into melted candy coating; allow excess to drip off. Sprinkle with crushed candies. Place on waxed paper; let stand until set.

PEPPERMINT CHRISTMAS COOKIES
This recipe is a great one to make for Christmas Cookie Exchanges. These colorful cookies add a real festive treat to any holiday platter. I made these for the first time for a cookie exchange and I made a double batch of green and a double batch of red.

Steps:
- Cream together butter, sugar, egg, vanilla, and salt.
- Add coloring and mix well to distribute color evenly.
- Stir in flour.
- Shape in 1 inch balls.
- Place 2 inches apart on ungreased cookie sheet.
- Flatten each by pressing a chocolate in each center.
- Bake at 350 degrees for 10 minutes, or until bottom starts to brown.
TRADITIONAL CHRISTMAS COOKIES W/ CRUSHED PEPPERMINT CANDY ICING
Steps:
- COOKIE DOUGH Cream butter, sugar, eggs and vanilla together with a mixer until smooth and creamy. Add flour, baking soda and salt to butter mixture. Continue to mix on medium speed until dough is soft, scraping the bowl at least once. Divide dough into two parts and chill for a couple of hours. Bake at 375 degrees for 8-10 min. Makes 2 dozen cookies. BUTTER CREAM FROSTING 1/4 cup butter, softened 1 tsp vanilla 1 cup or more Powdered Sugar 1 to 3 tbsp Milk Beat on medium until smooth and creamy. Add more powdered sugar/milk if necessary to achieve a light, smooth frosting. Crush candy canes and sprinkle on frosted cookies.
PEPPERMINT FUDGE CHRISTMAS KISS COOKIES
These beautiful little cookies are just right for Christmas. Picture a dense, dark fudgy chocolate base topped with a peppermint-striped Hershey kiss. The red and white of the kiss contrasts beautifully with the chocolate. I'd never seen these cookies anywhere before, but I certainly plan to make them for Christmas. They were submitted by a reader to the LA Times 2010 cookie contest.

- Preheat oven to 350 degrees F.
- In a large microwaveable bowl, microwave the butter and chocolate on high one minute. Stir. Microwave one minute longer until both are melted and can be stirred smooth. Stir condensed milk into chocolate mixture. Stir in cookie mix and cinnamon until well blended.
- Using 1 level tablespoon for each cookie, shape into 60 balls. Place balls 2 inches apart on ungreased cookie sheets. Bake in preheated oven 6-7 minutes until edges lose their shiny look. (Do NOT overbake.).
- Immediately press 1 candy kiss into center of each cookie. Cool on cookie sheets 5 minutes. Remove from sheets to cooling racks. Tap top of candy lightly with finger to moosh it down a bit. Cool completely. Store at room temperature.

PEPPERMINT-TOPPED CHOCOLATE CHRISTMAS COOKIES

- In large bowl, beat 1 cup butter and egg yolk with electric mixer on medium speed, or mix with spoon. Stir in flour, cornstarch, 1/2 cup powdered sugar, the cocoa and salt. Cover; refrigerate about 1 hour or until firm.
- Heat oven to 375°F. Shape dough into 1-inch balls. On ungreased cookie sheet, place balls about 2 inches apart.
- Bake 10 to 12 minutes or until set but not brown. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
- In small bowl, mix all frosting ingredients except candy canes with spoon until smooth and spreadable. Frost cookies; sprinkle with crushed candy canes.
