I double this recipe and put it in a heart-shaped silicone baking mold for Valentine's Day! I prefer using silicone baking molds as it is easier to pop right out of the mold without having to use a cooking/baking spray.

3 cups semisweet chocolate chips (such as Hershey's® Special Dark)
1 (14 ounce) can sweetened condensed milk
¼ cup butter
1 ½ teaspoons pure peppermint extract
1 pinch salt
½ cup crushed peppermint candies, or more to taste

Steps:

  • Combine chocolate chips, sweetened condensed milk, butter, peppermint extract, and salt in a large microwave-safe bowl.
  • Heat in the microwave on medium-high until chips are melted, 5 to 6 minutes, stirring every 2 minutes.
  • Pour chocolate mixture into an 8x8-inch silicone baking dish; top with crushed peppermint candies. Lightly press candies, using the back of a spoon, into chocolate mixture. Refrigerate until set, 1 hour.

1-1/2 teaspoons plus 1/4 cup butter, softened, divided
2 cups sugar
1/2 cup sour cream
12 squares (1 ounce each) white baking chocolate, chopped
1 jar (7 ounces) marshmallow cream
1/2 cup crushed peppermint candy
1/2 teaspoon peppermint extract

Steps:

  • Line a 9-in. square pan with foil. Grease the foil with 1-1/2 teaspoons butter; set aside. , In a large heavy saucepan, combine the sugar, sour cream and remaining butter. Cook and stir over medium heat until sugar is dissolved. Bring to a rapid boil; cook and stir until a candy thermometer reads 234° (soft-ball stage), about 5 minutes., Remove from the heat; stir in white chocolate and marshmallow creme until melted. Fold in peppermint candy and extract. Pour into prepared pan. Chill until firm. , Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares. Store in the refrigerator.

1 box Betty Crocker™ Super Moist™ chocolate fudge cake mix
1/2 cup butter, softened
2 oz cream cheese, softened
4 cups powdered sugar
2 teaspoons vanilla extract
1 teaspoon peppermint extract
A few drops of red food color
14 peppermint candies (7 crushed)

Steps:

  • Make cake as directed on box for two 9-inch rounds; cool completely.
  • Beat butter and cream cheese on medium speed until smooth and fluffy. Reduce speed to low; gradually add sugar, beating until smooth. Add vanilla, peppermint extract and food color, a drop at a time, beating until desired color is obtained.
  • Split each cake horizontally to make 2 layers. Place 1 layer on serving plate; spread top with thin coat frosting. Repeat with remaining layers. Frost side and top of cake with thin coat frosting; refrigerate 10 minutes to allow frosting to firm up. Frost side and top of cake with remaining frosting. Arrange whole peppermints then sprinkle crushed peppermint around side and top of cake.

1 tablespoon cold unsalted butter, plus more, softened, for pan
1 1/2 cups heavy cream
3 cups sugar
3 ounces unsweetened chocolate, finely chopped (2/3 cup)
2 tablespoons unsweetened Dutch-process cocoa powder
1/4 cup light corn syrup
1/2 teaspoon coarse salt
1 teaspoon pure peppermint extract
16 striped peppermint candies, coarsely crushed (1/2 cup)
8 ounces white chocolate, melted

Steps:

  • Butter an 8-inch square cake pan; line with parchment, leaving a 1-inch overhang on two sides. Butter parchment. Place butter in a large heatproof glass bowl set on a wire rack.
  • Heat cream, sugar, unsweetened chocolate, cocoa powder, corn syrup, and salt in a heavy saucepan over medium, stirring, until sugar is dissolved and chocolate is melted, about 10 minutes. Attach a candy thermometer to pan; bring mixture to a boil, washing down sides of pan with a wet pastry brush to prevent crystals from forming. Boil, without stirring, until mixture reaches 238 degrees, about 15 minutes.

  • Pour mixture into prepared cake pan (do not scrape bowl); press evenly with your hands, then smooth top with a spatula. Sprinkle evenly with candies, pressing to adhere. Let cool 1 hour. Spread white chocolate over candies. Refrigerate until firm, at least 15 minutes and up to 3 days.
  • Run a sharp knife around edges of fudge to loosen; remove using parchment. Cut into 1-inch squares. Fudge can be stored in refrigerator, between layers of parchment, up to 1 week; bring to room temperature before serving.

  • LINE 8- or 9-inch square pan with wax paper.

Steps:

  • Line 8-inch square pan with foil, leaving 1 inch of foil overhanging at two opposite sides of pan. Grease foil with butter.
  • Place white chocolate and butter in medium microwavable bowl. Microwave uncovered on 70% power 1 minute 30 seconds to 2 minutes, stirring after 1 minute, or until chocolate is almost melted. Stir until chocolate is completely melted and mixture is smooth. Stir in 2 cups of the crushed cereal until completed coated; press in pan. Set aside.

Generally my response to non-chocolate candy is "what's the point?" This, however, has become my favorite Christmas candy! My daughter found it in one of those Pillsbury/Betty Crocker booklets they tempt you with at the checkout stands. Prep time does not include cooling time.

1/2 cup margarine
1 (5 ounce) can evaporated milk
1 (7 ounce) jar marshmallow creme (2 cups)

red food coloring

  • Line 9-inch square pan with foil so that foil extends over sides of pan.
  • Butter the foil.
  • In large saucepan, combine sugar, margarine, and milk.
  • Bring to a boil, stirring constantly.
  • Continue boiling 5 minutes over medium heat, stirring constantly.
  • Remove from heat.
  • Add marshmallow creme, vanilla chips, and desired amount of food coloring.
  • Blend until smooth.
  • Stir in crushed peppermint.

  • Sprinkle top with additional crushed peppermint candy.

1 small can (5 oz.) evaporated milk (about 2/3 cup) (Do not use sweetened condensed milk.)
3 pkg. (4 oz. each) BAKER'S White Chocolate, chopped
1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1/4 tsp. peppermint extract
1 cup JET-PUFFED Peppermint MALLOW Bits
1/2 cup chopped hard peppermint candies

Steps:

  • Line 9-inch square pan with foil, with ends of foil extending over sides. Bring sugar, butter and evaporated milk to full rolling boil in 3-qt. saucepan on medium heat, stirring constantly. Cook 4 min. or until candy thermometer reaches 234°F, stirring constantly. Remove from heat.
  • Add chocolate and marshmallow creme; stir until melted. Add peppermint extract; mix well.
  • Pour into prepared pan; spread to cover bottom of pan. Cool 5 min. Sprinkle with MALLOW Bits and candies; gently press into fudge with back of spoon. Cool completely. Use foil handles to lift fudge from pan before cutting into squares.
