1 pound small pasta (we used fusilli)
15 ounce black beans (drained)
1 pint grape or cherry tomatoes (halved)
1 cup frozen corn (thawed)
1 red bell pepper (seeded and chopped)
½ cup chopped red onion
½ cup chopped cilantro
3 ounce sliced black olives (drained)
1 jalapeno (seeded and diced (optional))
1 cup thick creamy ranch dressing
2 tablespoons fresh lime juice
½ teaspoon chili powder
¼ teaspoon ground cumin
Salt and pepper

Steps:

  • Place a large pot of salted water over high heat. Cook the pasta according to the package instructions, then drain and set aside to cool.
  • Meanwhile chop all necessary ingredients.
  • Set out a large salad bowl. Add in the cooked pasta, black beans, tomatoes, corn, chopped bell pepper, onion, cilantro, olives, and jalapeno.
  • In a separate bowl (or measuring pitcher) combine the ranch dressing, lime juice, chili powder, and cumin. Mix well. Then taste, and salt and pepper to taste.
  • Mix the dressing into the pasta salad and gently stir until well coated.
  • Cover and chill for at least 1 hour. (Allowing the pasta salad ingredients to rest with the dressing longer creates a better overall flavor.)

Simple and delicious. Came up with this recipe when trying to duplicate a local pizza restaurant's peppercorn ranch dressing that we love. This dressing goes great with Romaine lettuce, sliced cherry tomatoes, and red onion with fresh bacon crumbled on top. Refrigerate overnight for best taste.

⅔ cup buttermilk
½ cup sour cream
½ cup mayonnaise
1 tablespoon ground peppercorns
½ teaspoon dried chives
½ teaspoon dried dill

Dressing:
1 lb. pasta (colored rotini or whole wheat bowties are nice)
2 Cups broccoli florets
1 15-oz. can artichoke hearts, drained and quartered
1 Cup fresh peas or thawed frozen peas
1 Cup hard salami, thinly sliced into strips
1 15-oz. can black olives, drained and halved (leave whole if desired)
2 TB. CREAMY PEPPERCORN DRESSING MIX
3 TB. water
1 Cup sour cream
1 Cup mayonnaise (regular or low fat)
2-3 TB. vinegar or water

Steps:

  • Cook the pasta according to package directions. While the pasta cooks, bring a pot of water to a boil. Add the broccoli and cook for 2 minutes. Rinse under cold water, drain and set aside. Drain the pasta and place in a serving bowl. Add the broccoli, artichokes, peas, salami and olives and toss gently to combine. In a small bowl, combine the CREAMY PEPPERCORN DRESSING MIX and the water. Let stand for 5 minutes. Add the sour cream and mayonnaise and mix well. Add vinegar or water to reach the desired consistency. Pour the dressing over the pasta and veggies, mix well, serve or chill before serving. Prep. time: 10 minutes Cooking time: 12 minutes Serves: 10-12
