FLANK STEAK STIR-FRY WITH ASPARAGUS AND RED PEPPER image

Number Of Ingredients 11

3 Tbsp vegetable oil
1/2 lb asparagus, trimmed, cut on the diagonal into 1 1/2 inch lengths (about 1 1/2 cups)
1 lb of flank steak, sliced in half lengthwise (along the grain) and then cut into thin strips, 2 inches long and 1/4 inch wide (put the steak in the freezer for 15 minutes before slicing to make it easier to slice)
1 red bell pepper, seeded, de-ribbed, and cut into thin strips 2 inches long and 1/4 inch wide
2 teaspoons of cornstarch dissolved into 3 Tablespoons of water
All Purpose Stir Fry Sauce
3 Tbsp soy sauce (use gluten-free soy sauce for gluten-free version)
1 tsp finely chopped, peeled, fresh ginger
1 small clove garlic, minced
1 green onion, including green tops, chopped
1/2 tsp chili oil

Steps:

  • Method 1 While you are chopping the ingredients in preparation, bring a small saucepan of water to boil. Parboil the asparagus pieces for 2 minutes, drain, rinse in cold water, drain, and set aside. If you are planning to serve this dish with rice, in a separate pan, prepare 2 cups of white rice, following the instructions on the rice package. 2 Prepare the All Purpose Stir Fry Sauce by combining the ingredients in a small dish, and set aside. 3 Stir-fry the asparagus in a wok (or a thick-bottomed pan with at least 2" sides that can take high heat) in 1 Tbsp of oil, on high heat, for about 2 minutes until lightly browned. Remove asparagus from pan and set aside. 4 Add another 1 Tbsp of oil to the pan and stir fry the beef strips, in 2 batches, for 2-3 minutes until browned but still pink inside. Return the first batch of beef to the pan and add the bell pepper. Stir and toss over high heat until just beginning to wilt, 1-2 minutes. 5 Quickly stir the cornstarch liquid and add it to the pan along with the stir fry sauce. Cook until sauce thickens, 1-2 minutes. Return the asparagus to the pan, toss to evenly coat and serve with steamed white rice (unless you are going low-carb, in which case, leave out the rice). Serves 4.

This pepper steak stir-fry is how I remember it was at a Chinese restaurant that I worked at while in college. Just onion and green pepper, but I've been known to add fresh mushrooms. Serve on a bed of rice.

1 pound beef tenderloin, sliced across the grain
¼ cup hoisin sauce, or to taste
2 tablespoons sesame oil
1 tablespoon minced fresh ginger root
1 teaspoon minced garlic
1 green bell pepper, sliced into strips
1 medium onion, sliced into strips
½ (8 ounce) package sliced fresh mushrooms
1 tablespoon cornstarch
½ cup beef stock, divided
1 teaspoon toasted sesame seeds

Steps:

  • Paint beef strips with hoisin sauce; let marinate at least 1 hour, or overnight.
  • Heat a wok or large skillet over medium-high heat. Add oil. Saute ginger and garlic for 5 seconds. Add bell pepper, onion, and mushroom. Cook and stir until vegetables are lightly tender, 3 to 5 minutes. Set aside in a bowl.
  • Add beef strips to the hot wok. Saute to desired doneness; for rare, cook until browned on the outside and red in the center, about 2 minutes per side.
  • Mix cornstarch with 1/2 of the stock in a small bowl.
  • Add the vegetables to the steak in the wok; pour in remaining stock. Stir for a few minutes and add the cornstarch mixture. Cook and stir until thickened and bubbly, 3 to 5 minutes. Sprinkle sesame seeds on top to serve.

1 medium onion, halved, sliced
2 medium red bell peppers, cut into
4 green onions, chopped
1/2 cup chopped fresh cilantro

Steps:

  • Preheat oven to 375°F. Whisk chili sauce, soy sauce, balsamic vinegar, and ginger in medium bowl; add steaks and turn to coat. Let marinate at room temperature 15 minutes, turning occasionally.

1 cup white rice, uncooked
1 lb steak, cut into stir-fry strips
3 tablespoons sugar
1 1/2 teaspoons black pepper
1 1/2 cups vegetable oil
1/2 onion, chopped
1 -2 egg
2 tablespoons thick soy sauce
4 tablespoons soy sauce
1 (15 ounce) can stir fry vegetables
1/4 teaspoon ginger
1 teaspoon garlic, chopped
2 tablespoons cornstarch
2 cups water
2 tablespoons oyster sauce
1 teaspoon salt

Steps:

  • Cook rice according to package directions. While rice is cooking, marinade steak in mixture of: 1 T. sugar, 1 T. thick soy sauce, 2 T. regular soy sauce, and 1-1/2 t. pepper. When rice is done, remove lid to cool.
  • Heat 3/4°C of oil in wok on high heat. When oil is hot, add 2/3 of the chopped onions and brown until they begin to wilt.
  • Push onions to one side of wok. Break egg(s) into oil and use spatula to break up as it cooks. When almost done (looks like scrambled eggs), mix together with onions.
  • Add rice in about 1°C portions to onion mixture, turning well to coat with oil and work into mixture. Add 1 T. thick soy sauce and 2 T. sugar, and work through by turning rice as it "fries." Remove rice to serving dish and keep warm.
  • Add remaining oil (3/4 C.) and onions to wok. Add ginger, then garlic, then meat. Use spatula to break up meat and stir fry in oil. When meat is about half-done, cover and let cook for a few minutes while you gather your remaining ingredients.
  • Mix cornstarch with 1°C water. Drain vegetables and add to wok, along with oyster flavored sauce (2 T.) and salt (1 t.), stirring into meat.
  • Add 1°C water and bring mixture to boil. When boiling, add cornstarch mixture and cook to desired thickness.

1/2 cup water
2 tablespoons cornstarch
2 teaspoons beef bouillon granules
2 tablespoons dry white wine (optional)

1 large bell pepper, cut into thin strips (yellow, red, or green)

Steps:

  • Trim fat from beef. Partially freeze beef for 30 minutes. Thinly slice across the grain into bite-size strips.
  • For sauce, in a small bowl stir together the water, white wine, cornstarch, bouillon granules, Italian seasoning and 1/8 teaspoon pepper. Set aside.

1 1/4 lbs sirloin steaks (1 inch thick)
1 tablespoon cornstarch
1/4 cup water
5 ounces diluted beef broth (we use homemade)
1/4 cup soy sauce
1/4 cup vegetable oil
1 garlic clove, minced
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon pepper
3 cups frozen peppers and onions
4 green onions, cut into 1-inch slices

Steps:

  • Partially freeze steak; slice diagonally across the grain into 1-1/2" x 1/8" thick strips. Set aside.
  • Combine cornstarch and water in a small bowl, stirring until smooth; add beef broth and soy sauce. Set aside.
