These are our favorite campfire potato dish. So easy to put together and just let them cook. The melted pepper jack cheese just adds another level to these potatoes. These can be made in the oven as well. Simply use an oven safe dish and cook at 375 for specified time

Number Of Ingredients 6

3 russet potatoes, scrubbed and cubed
1 medium yellow onion, diced
3 -4 garlic cloves, coarsley minced
1/2 cup bacon, pieces not bits (I use pre-packaged)
6 slices monterey jack pepper cheese
4 tablespoons butter

Steps:

  • In a foil pan, add half of the butter.
  • Add potatoes, onions, garlic, bacon, and remaining butter to foil pan.
  • Cover with aluminum foil and put on campfire.
  • Let potatoes cook for 30 minutes, stirring occasionally.
  • Top with cheese and cook additional 15 minutes, or until potatoes are soft throughout.

1 package (30 ounces) frozen shredded hash brown potatoes, thawed
1 can (10-1/2 ounces) condensed cream of chicken soup, undiluted
2 cups shredded pepper jack cheese
1-1/2 cups heavy whipping cream
1/2 cup butter, melted
1/2 cup sour cream
1/4 cup shredded Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper
TOPPING:
1 cup crushed potato chips
5 bacon strips, cooked and crumbled
3/4 cup shredded Parmesan cheese
1 teaspoon paprika

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 11 ingredients. Transfer to a greased 13x9-in. baking dish. For topping, combine the potato chips, bacon and Parmesan; sprinkle over casserole. Top with paprika., Bake, uncovered, until edges are bubbly and topping is golden brown, 25-30 minutes.

Cheesy, creamy and smoky, this not a traditional macaroni and cheese recipe. We really loved the bits of bacon throughout the mac and cheese. The jalapeno adds a mild spice, but it's not overwhelming. When looking for a special treat for the family, make sure to add this recipe to your menu. Creamy and delicious!

Number Of Ingredients 12

12 oz dried pasta (I use medium shells or cavatappi)
10 slice bacon
1 Tbsp butter
1 medium onion, small dice
1 small jalapeno, seeded and minced
2 clove garlic, pressed or minced
3 Tbsp all-purpose flour
3/4 c chicken broth
1/2 c half and half or heavy cream (I use a mix)
1/4 c softened cream cheese
8 oz brick pepper jack, grated
salt and pepper

Steps:

  • 1. Cook the bacon in a large skillet until crispy. Set aside on a paper lined plate to cool, then chop.
  • 2. While bacon is cooking, bring a large pot of water to a boil, salt generously. Add the pasta and cook until al dente. Drain. Rinse so it doesn't stick together and set aside.
  • 3. Add the butter to the bacon drippings. When the butter melts, add in the onion and jalapeno. Cook until soft.
  • 4. Add the minced garlic and cook another minute or so, being careful not to burn the garlic.
  • 5. Add the flour to the skillet. Stir and cook just for a minute. Add in the chicken broth and half/half or cream. Bring up to a simmer, stirring until sauce thickens.
  • 6. Once sauce thickens, add in the cream cheese and pepper jack. Stir until melted.
  • 7. Add in the cooked pasta and stir to coat all the pasta. Add in the chopped bacon and stir. Adjust seasonings with the salt and pepper and serve.

3 large russet potatoes, peeled and coarsely diced (about 2 pounds or 5 cups total)
Kosher salt
2/3 cup sour cream
4 ounces cream cheese
4 ounces pepper Jack cheese, grated
Coarsely ground black pepper
1/2 bunch green onions, greens sliced

Steps:

  • Place the potatoes in a large saucepan set over medium-high heat, then cover with cold water and season with salt. Bring to a boil and cook until the potatoes are tender, 10 minutes. Drain and place the potatoes in the bowl of a stand mixer fitted with the paddle attachment. Add the sour cream, cream cheese, pepper Jack and some salt and pepper, and mix until fluffy. Taste and adjust the seasoning as needed. Fold in the green onions and enjoy!

1 pouch (4.7 oz) Betty Crocker™ homestyle creamy butter or roasted garlic mashed potatoes
1/2 cup shredded pepper Jack cheese (2 oz)
1/4 cup crumbled cooked bacon
1 tablespoon chopped fresh parsley, if desired
1 tablespoon crumbled cooked bacon, if desired

Steps:

  • In 2-quart saucepan, heat milk, water and butter to boiling. Stir in potatoes just until moistened; let stand 1 minute. Stir with fork until smooth. Stir in cheese and bacon.
  • Spoon potatoes into serving dish; top with parsley and additional bacon, if desired.
