BLACK PEPPER BOURSIN BRUSCHETTA

One day, while carrying some Boursin cheese around, I accidentally bumped into a freind of mine and she said 'hey, you put your boursin in my bruschetta', and I said, 'hey, you put your bruschetta in my Boursin'. The rest is history.

1 baguette
1/3 cup olive oil
1 teaspoon dried basil
3 medium tomatoes, chopped into 1/2 inch cubes
2 tablespoons basil chiffonade
1/4 teaspoon black pepper, fresh ground
1 teaspoon sea salt
3 garlic cloves
3 tablespoons balsamic vinaigrette
1 (5 ounce) package black pepper boursin cheese

Steps:

  • Cut Tomatoes into 1/2 inch cubes and put into medium size bowl.
  • Roll up fresh basil leaves together, slice into very thin strips and add these to the bowl. Should be 2 Tbsp, more or less, of shredded basil.
  • Place garlic cloves on cutting board. Top with the sea salt. Use side of knife to smear the salt into the garlic. Smear the garlic until it is well pulverized, then use the blade to chop very fine. Scrape up with the back of the knife, and add to the bowl.
  • Grind in ~1/4 tsp black pepper.
  • Add 1/4 cup of Basalmic Vinagrette dressing. Newmans or Kens brand work well for this, or make your own.
  • Mix everything together with a spoon, cover and put the mixture in the fridge for later.
  • Preheat oven to 350 degrees farenheit.
  • Slice bread on the bias, into 3/4 inch slices. Pour extra virgin olive oil onto a dipping plate. Dip both sides of each slice in olive oil and place on baking sheet. sprinkle top of each slice lightly with dried basil, and fresh ground pepper.
  • Bake bread slices for ~10 minutes, or until golden brown on the bottom. Remove from oven and let cool slightly.
  • Spread each warm bread slice with Black pepper Boursin Cheese. and arrange around on the serving platter. Top each slice with some of the tomato mixture.
  • Serve.

4 skinless
boneless chicken breasts
1 package boursin cheese with herbs
2 red peppers
2 tsp. garlic powder
2 tsp. parsley
2 tsp. black pepper
olive oil

Steps:

  • Prepare the roasted red pepper sauce first by lightly coating the peppers in olive oil. Place in a 475 degree oven for 20-30 minutes. Allow to cool and remove skins. Puree in a blender until smooth (add a little olive oil for consistency). Next, butterfly the chicken breasts. In a small bowl, mix together the cheese, garlic powder, parsley, and black pepper. Spread over the entire chicken breast. Fold over and secure with string. Place in a pan and brown both sides. Once brown, take the chicken breasts out of the pan and place in a non-stick roasting pan. Cover with the roasted red pepper sauce. Bake at 375 degrees for 25 minutes until the chicken is thoroughly cooked. I serve this with smashed garlic mashed potatoes. Enjoy!

This version of homemade boursin reminds me of the black pepper boursin you can buy mixed with the flavor of the regular, although the pepper in their boursin is even stronger. If you prefer, you can increase the black pepper from 1 tsp to 1 1/2-2 tsps. for a more bold flavor. Enjoy!

4 ounces butter, room temperature
1 -2 teaspoon fresh coarse ground black pepper or 1 -2 teaspoon cracked black pepper
1 teaspoon dried parsley
1 teaspoon garlic powder
1/2 teaspoon dill weed
1/2 teaspoon dried marjoram
1/2 teaspoon salt (optional)
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon onion powder
1/2 teaspoon dried basil

Steps:

  • Mix until smooth, then chill several hours before serving to blend flavors.

2 red bell peppers, quartered lengthwise, seeded, and thinly sliced crosswise
1 tablespoon olive oil
1 (17 1/4-ounce) package frozen puff pastry sheets, thawed
1/4 cup herbed Boursin cheese (2 ounces), softened
1/4 teaspoon fresh thyme leaves
1/8 teaspoon kosher salt

Steps:

  • Preheat oven to 450°F.
  • Cook bell peppers in oil in a large nonstick skillet over moderate heat, stirring, until softened, about 8 minutes, then cool.
  • Unfold pastry sheets on a lightly floured surface and cut out an 8-inch round from each. Transfer rounds to a buttered large baking sheet and prick all over with a fork, leaving a 1/2-inch border around edges.
  • Spread 2 tablespoons cheese evenly over each round, then scatter with peppers and sprinkle with thyme, kosher salt, and pepper to taste.
  • Bake tarts in middle of oven until puffed and golden brown, about 15 minutes, then transfer to a rack to cool slightly.

12 ounces Boursin cheese
8 slices cooked bacon
8 slices cracked pepper bread or any rustic country bread
1 tablespoon softened lightly salted butter

Steps:

  • Spread each of 4 slices of bread with 3 ounces of Boursin cheese.
  • Cut each bacon slice in half lengthwise. Place 2 pieces of bacon (4 halves) on top of each of the Boursin-prepared slices of bread.
  • Cover each prepared half with another slice of bread.
  • Evenly butter the top of each sandwich. Place each sandwich butter side down in a frying pan over medium heat. While the first side is grilling, butter the second side of bread. Cook until golden and crusty, about 1-2 minutes. Carefully turn and cook until second side is golden, about 1-2 minutes more.

BOURSIN-STUFFED DATES WITH PEPPER JELLY



Boursin-Stuffed Dates With Pepper Jelly image

36 whole pitted dates
1 (5 ounce) package boursin cheese with pepper, softened
3 tablespoons red pepper jelly or 3 tablespoons green pepper jelly

Steps:

  • Slit each date lengthwise, but do not cut in half. Spread each date to open slightly.
  • Spoon about 1/2 teaspoon of boursin into each date, spreading evenly.
  • Arrange dates in a single layer on a serving dish. May be prepared to this point and refrigerated for up to 24 hours. Just before serving, top each stuffed date with 1/4 teaspoon pepper jelly.
