Salt & Pepper Biscuits image

Baked in a cast iron skillet, pull-apart salt & pepper biscuits are flaky and buttery with a definite kick. They're best eaten warm from the oven.

Provided by Paige Adams

Number Of Ingredients 6

2-1/2 cups all-purpose flour plus more for dusting work surface
4 teaspoons baking powder
1 tablespoon black pepper
1 teaspoon kosher salt
10 tablespoons butter, cold, cut into cubes plus 1 tablespoon melted butter for brushing pan and biscuits
1-1/4 cups buttermilk

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, whisk together the flour, baking powder, black pepper and salt. Using a pastry blender or a fork, cut the cold cubed butter into the dry ingredients until it is the size of pebbles. Stir in the buttermilk.
  • Turn out the dough onto a lightly floured work surface and pat 1 inch thick. Using a 2-inch cutter, cut out the biscuits and place them in a buttered 12-inch cast-iron skillet, so they are just touching.
  • Bake for 40-45 minutes until light golden brown.
  • The biscuits are best served warm.
  • To revive the biscuits the day after they are baked, warm them in a 300-degree oven for 10 minutes.

Stuffed Jalapeno Pepper Monkey Bread image

A new, savory take on monkey bread, this version brims with spiced biscuits, crispy, cream cheese-stuffed jalapenos and what else but more creamy cheese. It's the perfect pull-apart recipe for the big game day.

Provided by Food Network Kitchen

Time 1h25m

Yield 12 servings

Number Of Ingredients 7

1 1/2 sticks (12 tablespoons) unsalted butter, melted
Two 16-ounce tubes refrigerated biscuit dough
2 teaspoons paprika
1/2 teaspoon garlic salt
One 18-ounce box frozen jalapeno poppers
4 ounces Monterey Jack cheese, grated (about 1 cup)
1/4 cup ranch dressing

Steps:

  • Preheat the oven to 375 degrees F. Brush a 10-inch nonstick bundt pan with butter to lightly coat, then put the remaining butter in a medium bowl.
  • Cut the biscuits into quarters. Combine the paprika and garlic salt in a large bowl.
  • Working in batches, toss the biscuit pieces in the butter, then transfer them with a slotted spoon to the bowl with the spices; do not stir. When all of the biscuit pieces have been added to the spice mixture, stir gently until evenly coated.
  • Build a ring of alternating biscuit pieces and jalapeno poppers in the bottom of the prepared bundt pan. Top the first layer with half of the remaining biscuit pieces and jalapeno poppers, pressing down gently so they stick together. Sprinkle the Monterey Jack in a ring over the top, making sure that none of it hits the sides or middle of the pan. Scatter the remaining dough pieces and jalapeno poppers over the top. Brush with any remaining butter.
  • Cover the pan tightly with foil and bake for 35 minutes. Remove the foil and continue to bake until the top is a deep golden brown and the dough is cooked through, about 30 minutes. Let cool in the pan for 10 minutes, then use an offset spatula to gently loosen any cheese that might have baked onto the sides of the pan. Flip out the monkey bread onto a serving platter. Serve with the ranch dressing for dipping.

SPICY CHEESY PULL-APART BREAD

Provided by Valerie Bertinelli

Categories     appetizer

Time 1h25m

Yield 6 to 8 servings

Number Of Ingredients 9

Canola oil spray
One 16-ounce tube refrigerated flaky biscuits (8 biscuits)
2 cups grated low-moisture mozzarella (about 1 pound)
4 tablespoons (1/2 stick) unsalted butter
2 tablespoons thinly sliced scallions, white and green parts
1 tablespoon minced garlic
1 teaspoon crushed red pepper
1/2 teaspoon kosher salt
1/2 tablespoon white wine vinegar

Steps:

  • Preheat the oven to 375 degrees F. Lightly grease a 6-inch cast-iron skillet with canola oil spray.
  • Remove the biscuits from the package and lay them out on a clean work surface. Gently pull the layers apart at the middle to divide the biscuits in half. Gently pull each of the halves apart so you are left with four thin, round biscuits each (32 in all). Don't worry if any biscuits tear: just press the torn pieces back together.
  • Place 1 teaspoon of the mozzarella in the center of each biscuit round; you will use about 1 1/2 cups of the mozzarella for this. Fold the dough around the cheese and roll into balls. Arrange the balls in a circle around the edge of the prepared skillet, then work your way in until you have completely filled the cast-iron pan with the dough balls. If you start to run out of room as you get closer to the center of the skillet, gently push the dough from the center towards the edges of the pan to make more space.
  • Melt the butter in a medium skillet over medium-high heat. Once melted, stir in the scallions, garlic, red pepper and salt. Cook until the butter is just beginning to brown and the garlic is lightly toasted and very fragrant, 2 to 3 minutes. Remove the pan from the heat and stir in the vinegar. Pour the melted butter evenly over the top of the dough and sprinkle with the remaining 1/2 cup mozzarella.
  • Bake until the dough is cooked through and golden brown, 25 to 30 minutes. Remove from oven and let cool slightly, about 10 minutes. Serve in the skillet.
