2 tablespoons unsalted butter
1 ounce dried porcini mushrooms, rehydrated in 1 cup hot water for 20 minutes and chopped coarse, liquid strained and reserved separa
1/2 lb boneless skinless chicken breast, trimmed of fat and cut into 1-inch long by 1/4-inch thick strips
ground black pepper
1/2 cup heavy cream
1/4 cup grated parmesan cheese

Steps:

  • Bring 4 quarts water to a boil in a big pot; add in 1 tablespoon salt and the pasta; cook until al dente.
  • Meanwhile, in a large pan, melt the butter over medium heat; add in the mushrooms; cook for 1 minute.
  • Season the chicken with salt and pepper to taste.
  • Increase heat to med-high and add in the chicken; stir/saute until the chicken is opaque, 4 minutes.
  • Add in the porcini soaking liquid and cream; cook until the sauce has thickened slightly, 2-3 minutes.
  • Drain the pasta and return it to the cooking pot; toss with the sauce and cheese.
  • Season with salt and pepper to taste; serve immediately.

3 cups Swiss chard, stems removed, roughly chopped
1 tablespoon butter
3 cloves garlic, thinly sliced
1/2 pound sorrel, stems removed, roughly chopped
1 tablespoon all-purpose flour
2 cups whole milk
1/4 cup grated Parmesan
Salt
Freshly ground black pepper
1/3 cup panko bread crumbs

Steps:

  • Set a heavy pot of salted water over medium-high heat and bring to a rolling boil. Stir in Swiss chard and blanch until softened and bright green, 1-2 minutes. Drain in a colander and squeeze chard leaves to remove excess water. Turn on broiler. Meanwhile, wipe pot clean and set over medium-low heat. Stir in butter and garlic and sauté until garlic lightly browns, about 4 minutes. Increase heat to medium, stir in sorrel and cook until soft, 1-2 minutes. Sprinkle flour over sorrel and cook, stirring, 1 minute more. Add blanched chard to pot with sorrel and stir to combine. Pour in milk and gently simmer, stirring frequently, until liquid almost completely cooks off, about 15 minutes. Remove from heat, stir in Parmesan and season with salt and pepper to taste. Pack simmered greens snugly into a 9-inch round baking dish. Scatter panko overtop and slide dish directly under broiler. Broil until panko turns golden, about 5 minutes. Serve immediately or refrigerate until ready to use, up to 12 hours, and reheat before serving.

6 ounces penne or other tubular pasta
1 1/2 pounds Swiss chard
1/4 teaspoon dried hot red pepper flakes
1 small onion
2 teaspoons unsalted butter
1/4 cup heavy cream
1/4 teaspoon freshly grated nutmeg
2 tablespoons freshly grated Parmesan

Steps:

  • Fill a 4-quart kettle three-fourths full with salted water and bring to a boil for pasta.
  • Chop Swiss chard into 1/4-inch-wide pieces and finely chop separately red pepper flakes and onion. In a 12-inch heavy skillet cook onion in butter over moderate heat, stirring occasionally, until golden brown, about 5 minutes. Add Swiss chard and cook, stirring, 15 minutes, or until tender.
  • While Swiss chard mixture is cooking, cook pasta in boiling water until al dente and drain in a colander. Add pasta to Swiss chard mixture with red pepper flakes, cream, and nutmeg and cook, stirring, 1 minute. Remove skillet from heat and stir in Parmesan and salt and pepper to taste.

1 lb penne
1 cup dried porcini mushrooms, reconstituted in white wine
1 tablespoon olive oil
1/2 medium shallot, minced
4 slices prosciutto di Parma, chopped
1/2 cup dry red wine
1 cup Italian plum tomato, crushed (canned)
salt and pepper, to taste
2 cups heavy cream
6 basil leaves, shredded
1/2 cup parmigiano-reggiano cheese

Steps:

  • Fill a 5-quart stock pot 3/4 full with salted water and bring to a boil for pasta. Pre-heat a 3-quart stock pot over medium heat and add olive oil, shallots and prosciutto. Stir with a wooden spoon and cook 2-3 minutes until shallots are translucent. Deglaze pot with red wine and reduce by half. Squeeze excess wine out of porcini mushrooms and add to red wine reduction. Add tomatoes and bring to a boil. Season with salt and pepper and add cream, stirring to incorporate. Bring to a boil and reduce heat to low, stirring occasionally.
  • Add pasta to boiling water and cook al dente. Drain and return to pot. Add sauce, cheese and basil and mix well. Serve immediately and sprinkle with more cheese as preferred.
  • Suggested wine: 2000 Frescobaldi/Mondavi Lucente
  • (blend of Cabernet, Merlot and Sangiovese).

1 ounce dried porcini mushrooms
1 pound whole wheat penne pasta
3 tablespoons extra-virgin olive oil
1 large or 2 small shallots, sliced
2 cloves garlic, finely chopped
box of sliced mushrooms
white wine
2 large bunches Swiss chard, center stems removed and leaves chopped into 1-inch pieces
1 cup plus some extra love of vegan mascarpone cheese, at room temperature (8 ounces)
Tofu, cubed
salt and pepper

Steps:

  • Mascarpone Cheese : 7 oz raw cashew nuts, pre-soaked - or if using a high speed blender just rinse before processing 1 tsp nutritional yeast 2 tsp vanilla extract 2 Tbsp maple syrup or agave ½ cup cold water THICKENER INGREDIENTS 1½ tsp agar powder mix well with ½ cup boiling water Pasta: Boil the broth and mushrooms over medium-high heat in a small saucepan. Turn off the heat and allow the mushrooms to soften in the liquid, about 20 minutes. Remove the mushrooms and coarsely chop. Bring a large pot of salted water to a boil over high heat.
