1 pound penne rigate
2 tablespoons extra-virgin olive oil
12 ounces spicy Italian sausage (about 4 links), casings removed
2 shallots, diced
2 cup frozen corn, thawed
1/2 teaspoon kosher salt, plus for the pasta water
8 ounces mascarpone, room temperature
1 tablespoon Calabrian chile paste
1 cup freshly grated Parmigiano Reggiano, plus for serving
1/4 cup fresh basil leaves, chopped

Steps:

  • Bring a large pot of salted water to a boil over medium-high heat. Add the penne and cook according to package directions or until al dente. Drain well, reserving 1/2 cup of the pasta water.
  • Meanwhile, heat a medium skillet over medium-high heat. Add the olive oil and sausage; cook for about 5 minutes, breaking up the sausage into bite-size pieces with a wooden spoon. Add the shallots and cook for another minute. Stir in the corn and salt, and cook, stirring often, until the corn is warmed through, another 2 minutes. Transfer the mixture to a large bowl.
  • To the bowl, add the mascarpone, chile paste and the hot pasta and reserved pasta water. Add the Parmesan directly over the untossed hot pasta. Using a large serving spoon, toss everything together well. Add the basil and toss again. Serve with additional Parmesan if desired.

This recipe is the best when made using farmer's sausage, but any sausage links will do. Add the red pepper flakes at the end for a little kick, or leave them out if spice isn't for you.

4 ½ teaspoons coconut oil
1 pound smoked sausage (such as farmer's sausage), sliced
1 onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 (8 ounce) package mushrooms, sliced
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 teaspoon minced garlic
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon red pepper flakes

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Heat oil in a large skillet over medium heat, and cook and stir sausage, onion, green bell pepper, red bell pepper, orange bell pepper, and mushrooms until vegetables are tender, about 10 minutes.
  • Stir diced tomatoes, tomato sauce, minced garlic, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes into vegetable mixture; bring to a simmer and cook, stirring occasionally, about 10 minutes.
  • Drain pasta and spoon onto plates and top with sauce mixture.

2 tablespoons olive oil
3/4 cup chopped onions
1 green pepper, seeded and chopped
1 sweet red pepper, seeded and chopped
2 large cloves garlic, finely chopped
1 pound penne
3 cups finely chopped fresh tomato pulp (about six medium ripe tomatoes)
Kernels stripped from 4 ears of corn
Salt and freshly ground black pepper
1/4 teaspoon hot red pepper flakes, or to taste
1/2 pound Italian hot sausage removed from its casing
4 tablespoons butter
1 tablespoon chopped fresh coriander leaves
Freshly grated Parmesan or aged Monterey Jack cheese

Steps:

  • Heat the oil in a heavy saucepan, add the onion, green and red pepper and cook slowly until the vegetables are tender but not brown. At the same time bring a large pot of water to a boil for the pasta.
  • Stir the garlic into the sauce, cook a moment longer then add the tomatoes. Simmer 10 to 15 minutes.
  • Add the corn, salt and pepper and hot red pepper flakes. Continue to simmer the sauce for another five minutes or so.
  • Meanwhiie, crumble the sausage in a skillet and saute it, stirring to break up the pieces, until they are lightly browned.
  • Cook the penne until it is al dente, six to eight minutes. When the pasta is cooked, drain it well and transfer it to a warm serving dish. Toss with the sausage.
  • Reheat the sauce, adding the butter. Pour over the pasta and toss. Sprinkle coriander on top and serve. Pass the grated cheese alongside.

1 lb penne pasta, cooked as directed
3/4 lb ground beef
1 lb hot Italian sausage
1 large green pepper, chopped
1 large red pepper, chopped
1 onion, chopped
2 large garlic cloves, minced
2 (28 ounce) jars pasta sauce
2 teaspoons basil
2 teaspoons oregano
3 -4 cups mozzarella cheese
1 cup parmesan cheese, freshly grated
4 -5 tablespoons ricotta cheese

Steps:

  • Brown ground beef in large skillet, drain.
  • Cut hot italian sausages into 4-5 pieces, brown in skillet, remove.
  • Add enough butter to the pan to saute green peppers, red peppers and onion. Season with salt and pepper. Saute 5 minutes.
  • Add garlic to pepers and onions.
  • When garlic is fragrent, add ground beef, hot italian sausages, basil, oregano and pasta sauce.
  • Combine.
  • Fold in penne pasta and ricotta cheese, transfer to two greased 8x8 baking dishes.
  • Top with Mozzarella and Parmesan cheese.
  • Bake at 400F until cheese is melted and browned.
  • Serve with garlic bread, enjoy!

2 cups uncooked penne pasta
1 pound smoked sausage, cut into 1/4-inch slices
1-1/2 cups 2% milk
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1-1/2 cups cheddar french-fried onions, divided
1 cup shredded part-skim mozzarella cheese, divided
1 cup frozen peas

Steps:

  • Preheat oven to 375°. Cook pasta according to package directions., Meanwhile, in a large skillet, brown sausage over medium heat 5 minutes; drain. In a large bowl, combine milk and soup. Stir in 1/2 cup onions, 1/2 cup cheese, peas and sausage. Drain pasta; stir into sausage mixture., Transfer to a greased 13x9-in. baking dish. Cover and bake until bubbly, 25-30 minutes. This luscious pasta dish is one I've avoided making recently; it's not exactly a lowfat dinner and I feel guilty serving it to my husband -- neither of us should be eating such a high calorie meal. But it's so, so good! Even though I can't claim it's part of a healthy diet, I hope you try it at least once -- it's a fast, easy dish, after all! I serve this with a simple green salad.

1 lb penne pasta (fusilli or ziti could also be used, but I prefer penne)
3 tablespoons olive oil (preferably extra-virgin)
3 cloves garlic, minced
1 pinch cayenne pepper
1 lb sweet mild Italian sausage
1 cup heavy cream
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon freshly grated nutmeg
3 tablespoons unsalted butter (cut into small bits)
1/2 cup freshly grated parmesan cheese
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh flat leaf parsley

Steps:

  • Bring a large pot of salted water to boil and cook the penne until al dente; drain well and do NOT rinse.
  • After you put the water on to boil, remove sausage meat from the casings, crumble, and set aside.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.
  • Cook until sausage meat is no longer pink (about 5 minutes or so).
  • Add cream, salt, pepper and nutmeg to skillet and turn heat to high to bring mixture to a boil.
  • Reduce heat and simmer, gently, until the cream reduces and the sauce thickens a bit; it takes about 10 minutes.
  • Place cooked penne in a large serving bowl (it's nice if you warm it first) and pour sauce over; add butter and cheese to bowl and combine all well.
  • Taste; add more salt and/or pepper if you wish.
  • Sprinkle chopped herbs over top and serve.

1 (12 ounce) package dry penne pasta
2 teaspoons olive oil
1 pound mild Italian sausage
1 cup chopped onion
½ cup white wine
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes with garlic
1 (6 ounce) can tomato paste
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally.
