- Cook pasta according to package directions; drain. In a large skillet, saute green pepper and onion in oil for 6-7 minutes. Add sausage; cook and stir until sausage is no longer pink. Drain. Stir in the spaghetti sauce and pasta., Transfer to a 3-qt. baking dish coated with cooking spray. Cover and bake at 350° for 15-20 minutes. Uncover; sprinkle with cheeses. Bake 5-10 minutes longer or until cheese is melted.

- Heat oven to 375ºF.
- Cook pasta as directed on package, omitting salt.
- Meanwhile, cook sausage in large skillet on medium heat 8 to 9 min. or until done, stirring occasionally. Remove sausage from skillet; drain skillet. Add oil and onions to same skillet; cook on medium heat 4 min. or until onions are crisp-tender, adding garlic for the last minute. Stir in cream cheese spread and broth; cook and stir 2 min. or until cream cheese spread is melted.
- Drain pasta. Add to cream cheese mixture with the sun-dried tomatoes, basil and sausage; mix lightly. Spoon into 2-qt. casserole sprayed with cooking spray. Top with cheese; cover.
- Bake 30 min. or until heated through.

PENNE & ITALIAN SAUSAGE BAKE
This is my adaptation of a recipe in a Liquor Control Board of Ontario magazine. I usually serve it with Caesar salad & garlic bread and its always been given "2 thumbs up" by my friends & family. You can increase the heat by using hot sausages & adding more cumin - or cayenne or red pepper flakes - according to your own taste! Please note that the starch in the pasta cooking liquid will thicken the sauce when the casserole is baking!

Steps:
- Prick sausages in several places.
- Heat oil in a large, deep frying pan set over medium high heat.
- Add sausages& cook until evenly browned- about 8 minutes.
- Remove from pan& cut into 1/2 inch pieces.
- Add onions to fat remaining in pan& saute for about 5 minutes.
- Return sausages to pan.
- Add fennel, garlic, cumin, peppers& celery; cook for about 5 minutes, stirring often.
- Drain excess fat from pan.
- Stir tomato sauce, basil& wine into sausage mixture.
- Bring to a boil, then reduce heat& simmer for 15 minutes.
- Meanwhile, cook penne, according to package directions until el dente (about 10 minutes).
- Drain- reserving 1/2 cup of the cooking water.
- Combine sausage mixture, pasta & reserved cooking liquid in a 5 litre casserole dish.
- Mix well.
- Combine Mozarella& Parmesan cheese and parsley.
- Stir into the pasta mixture.
- Bake in preheated 375F oven for 30 minutes.

- Brown sausage in skillet.
- melt butter in sauce pan over medium heat, add flour and stir until light golden brown (don't burn), wisk in milk garlic pwd and salt and pepper.
- Mix sauce in with sasuage, mix with pasta then pour into a casserole dish sprayed with cooking spray, sprinkle cheeses on top.
- Bake 350 for 30min until hot and bubbly.
- Serve with garlic bread.

- Preheat oven to 375 degrees.
- Grease 2 1/2 quart casserole.
- Cut zucchini squash halves into thirds lengthwise, then crosswise into 1 1/2 inch pieces, and cut pepper into 1-2 inch thin/med sized slices.
- (If the pepper is large, you may not want to add whole pepper it depends on your taste).
- After you have removed sausage from casing, put into a medium sized bowl.
- Add the ground chicken and egg, and mix using your hands until the egg is completely mixed into the meat.
- Take 1/3 of your onion and chop it very fine.
- Add to meat/egg mixture.
- Then add a small amount of breadcrumbs, and mix with hands again.
- Continue adding a little bit of bread crumbs at a time, until it is the right consistency to form 1 inch round balls with meat.
- Do not get carried away with the breadcrumbs, but do make sure to add enough so that they will stay in ball form.
- Roll into balls.
- Heat oil in large skillet over medium heat (If you find that there is not enough oil[especially if you add more meat], dont be afraid to add a little more; Just dont get carried away!).
- Add meatballs; cook thoroughly.
- Transfer to bowl using slotted spoon (to drain oil).
- Chop up the rest of the onion (this time not very fine) and add to skillet; cook 5 minutes.
- Add zucchini squash and sweet red pepper slices, minced garlic (if you choose) and corn.
- Season and cook 8 minutes.
- Return meat to skillet.
- Add cream and oregano.
- Bring to a boil.
- Add half the fontina and stir until melted.
- Cook penne al dente, drain and return to pot.
- Add sauce and toss through to coat.
- Transfer to casserole and top with remaining fontina.
- Bake until heated through, about 15 to 20 minutes.
- ENJOY!
