2 cups fresh broccoli florets
1 cup fat-free milk
1 package (6-1/2 ounces) reduced-fat garlic-herb spreadable cheese
1 cup cubed fully cooked ham
1/4 teaspoon pepper

Steps:

  • In a large saucepan, cook penne according to package directions, adding broccoli during the last 5 minutes of cooking; drain. Remove and set aside., In the same pan, combine milk and spreadable cheese. Cook and stir over medium heat for 3-5 minutes or until cheese is melted. Add the ham, pepper and penne mixture; heat through.

8 ounces dry penne pasta, uncooked
1/2 cup frozen green peas
1 can (10 oz each) Ro*Tel® Mild Diced Tomatoes & Green Chilies, undrained
1 pkg (8 oz each) 1/3 less fat cream cheese (Neufchatel), cubed
1/2 cup shredded sharp Cheddar cheese
3/4 cup chopped fully cooked lean ham

Steps:

  • 1. Cook pasta according to package directions, omitting salt; add peas last 2 minutes of cook time. Drain; set aside and keep warm.

1/4 cup olive oil
3 tablespoons butter
3 cups cubed fully cooked ham
1 large sweet red pepper, finely chopped
1 medium onion, chopped
2 garlic cloves, minced
1/4 cup minced fresh parsley
1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1 can (14-1/2 ounces) chicken broth
1 tablespoon lemon juice
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add ham, red pepper and onion; cook and stir 4-6 minutes or until ham is browned and vegetables are tender. Add garlic and herbs; cook 1-2 minutes longer., Stir in broth and lemon juice. 1/4-1/2 lb smoked ham, cubed
1 tablespoon extra virgin olive oil
1 small red bell pepper, seeded and chopped
1 small yellow bell pepper, seeded and chopped
2 fresh jalapeno peppers, seeded and finely minced (use less if you don't like that much spice)
salt, to taste
pepper, to taste
2 cups reduced-sodium chicken broth
1 1/2 cups heavy cream
1 lb penne pasta, cooked and still hot
1/2 cup parmesan cheese, garnish

Steps:

  • 1. Pour the chicken broth into a small saucepan and reduce to 1/3 cup over high heat. Add heavy cream and continue reducing over medium-high heat until desired sauce consistency.
  • 2. In a large stock pot, bring 4 quarts water to boil. Add 1 tablespoons salt. Add penne; stir to separate. Cook until al dente; drain.
  • 3. In the mean time, in large frying pan, saute ham in olive oil over medium heat until slightly golden. Remove to separate dish. Add red and yellow pepper to pan and saute for 1-2 minutes. Add jalapenos, salt and pepper and saute until peppers are softened; about 2-3 minutes.
  • 4. Place pasta in large serving bowl. Add ham and peppers and pour sauce over it. Toss to combine. Sprinkle with parmesan cheese. Sauce will thicken as it cools. Serve warm.

Tomato, ham and cream come together in this simple pasta sauce to form a comforting and easy weeknight meal. Cooked ham (as Italians call it, "prosciutto cotto"), is a hearty addition, as it provides texture and necessary salt. This recipe calls for deli ham, but you can substitute prosciutto or even pancetta if the mood strikes. An extra shower of Parmigiano before serving is a must for this filling meal.

3 tablespoons extra-virgin olive oil
1 shallot, minced
2 garlic cloves, thinly sliced
1 teaspoon red-pepper flakes
8 ounces sliced deli ham, cut into little squares
1 (28-ounce) can tomato passata (purée)
1 pound penne
3/4 cup heavy cream
1/2 cup grated Parmigiano-Reggiano, plus more for garnish

Steps:

  • Bring a large pot of salted water to a boil. Add the olive oil to a large skillet and heat over medium. Add the shallot, garlic and red-pepper flakes. Cook, stirring often, until shallots and garlic soften but are not yet brown, 2 to 3 minutes. Add the ham and stir to coat, 1 to 2 minutes.
  • Add the tomato purée. Add ¼ cup of the boiling salted water from the pot to the can, stir to loosen any purée, then add the liquid to the pan. Season the sauce with salt. Increase the heat to medium-high and bring it to a boil, and then reduce the heat to medium-low and simmer for 10 minutes.
  • While the sauce simmers, cook the pasta in the boiling water according to package instructions until al dente; drain well.
  • Reduce the heat to low and then add the cream, cheese and salt; stir to combine. Add the drained pasta, and toss to coat. Transfer pasta to a serving dish and top with more cheese.

1 pound Garrotxa, shredded
1/4 cup milk
1/2 cup crème fraîche
1 tablespoon butter
1/2 teaspoon freshly ground white pepper
1/3 cup chopped sun-dried tomatoes
6 ounces serrano ham slices, torn coarsely by hand into chunks

Steps:

  • 1. Preheat oven to 375°F.
  • 2. Cook the pasta in salted boiling water until al dente. Drain through a colander. Set aside.
  • 3. In a saucepan, combine cheese, milk, crème fraîche, and butter. Cook over medium-low heat until cheese is mostly melted and you have a creamy sauce. To keep the cheese sauce from breaking, remove the sauce from the heat before the cheese is entirely melted. Season with pepper, adding more to taste if you like.
  • 4. In a shallow buttered casserole dish, toss pasta with sun-dried tomatoes and Serrano ham. Pour the sauce over the pasta, then stir together until combined. Bake for 15 to 20 minutes, until the top is golden brown and bubbling around the edges. Serve immediately.

Steps:

1 tablespoon plus 1 1/2 teaspoons finely grated lemon zest (from about 1 large lemon)

Steps:

  • Cook farfalle in a large pot of boiling salted water, stirring occasionally, until al dente; drain, reserving 2 Tbsp. pasta cooking liquid.
