This is a wonderfully rich, Southern pie recipe that is the best I've tried!

1 ¾ cups white sugar
¼ cup dark corn syrup
¼ cup butter
1 tablespoon cold water
2 teaspoons cornstarch
3 eggs
¼ teaspoon salt
1 teaspoon vanilla extract
1 ¼ cups chopped pecans
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, combine the sugar, corn syrup, butter, water, and cornstarch. Bring to a full boil, and remove from heat.
  • In a large bowl, beat eggs until frothy. Gradually beat in cooked syrup mixture. Stir in salt, vanilla, and pecans. Pour into pie shell.
  • Bake in preheated oven for 45 to 50 minutes, or until filling is set.

Pastry for single-crust pie (9 inches)
3 large eggs
3/4 cup sugar
3/4 cup dark corn syrup
2 tablespoons butter, melted
1 tablespoon bourbon
2 cups semisweet chocolate chips
1 cup plus 3 tablespoons sweetened shredded coconut, divided
1 cup chopped pecans

Steps:

  • Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge., In a large bowl, beat eggs, sugar, corn syrup, butter and bourbon until blended. Stir in chocolate chips, 1 cup coconut and pecans. Pour into pastry shell; sprinkle with remaining coconut., Bake 45-50 minutes or until filling is set and coconut is golden brown. Cool on a wire rack; serve or refrigerate within 2 hours.

Yes you read correctly...Pecan Pie Jelly. The texture of this is amazing! A custard base with tiny bits of crunchy pecans.

1 c finely chopped pecans - i used a food processer
1 c granulated white sugar
pinch of salt
1 Tbsp heaping brown sugar
1/4 c butter
1/4 tsp pure vanilla extract
1 Tbsp pure maple syrup
1/2 c brewed coffee
2 Tbsp cornstarch mixed in 1/4 cup water

Steps:

  • 1. In a medium sauce pan combine coffee in butter cook on medium heat until butter has melted. Add sugars, salt, pecans, and maple syrup. Cook until sugar had dissolved completely.
  • 2. When the pecan mixture just begins to boil add cornstarch mixture and stir until thick and bubbly. Remove from heat and add vanilla.
  • 3. Pour into jars allow to cool and refrigerate.
  • 4. Use within 2 to 3 weeks.

1/2 teaspoon allspice
3 tablespoons ground ginger

  • Combine all ingredients in a large kettle
  • Cook on medium heat until it turns a rich golden color.

2 cups pecan halves, broken into coarse pieces
1 cup white sugar
¾ cup light corn syrup
¾ cup dark corn syrup
4 eggs
¼ cup butter, melted
1 ½ teaspoons vanilla extract
1 pinch salt
8 half pint canning jars with lids and rings
cooking spray
2 unbaked 9-inch pie crusts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread pecans on a baking sheet.
  • Bake pecans in the preheated oven until lightly toasted, 6 to 8 minutes. Cool to room temperature.
  • Bring sugar, light corn syrup, and dark corn syrup to a boil in a saucepan; boil for 2 minutes. Remove from heat and cool slightly, about 10 minutes.
  • Whisk eggs in a large bowl until frothy. Add syrup mixture slowly, whisking constantly to prevent eggs from curdling. Whisk in butter, vanilla extract, and salt until batter is smooth.
  • Spray 8 small jars with cooking spray. Press pieces of pie crust dough into bottom and sides of jars. Add a layer of toasted pecans to each jar. Spoon in batter, leaving 1/4 inch rim at top.
  • Bake in preheated oven until darkened on the top, about 40 minutes. Cool to room temperature before serving.

5 cups chopped pecans (pecan pieces if buying bagged)
5 cups white sugar
5 tablespoons dark brown sugar
2 tablespoons ground ginger
1 tablespoon ground cinnamon
1 tablespoon almond extract
1/2 lb butter
5 tablespoons apple cider vinegar

Steps:

  • In a large stainless steal or enamel pot melt the butter over medium heat, add sugars.
  • Stir until sugars are melted and then add remaining ingredients, stirring frequently for around 10 minutes, or until jam reaches a golden color-you do not want the jam as dark as the pie filling.
  • Ladle jam into steril hot jars leaving 1/2 inch head space, and process for 20 minutes for half pint jars in a boiling water bath, at altitudes up to 1000 feet.
  • Check seals when cool.
  • Keeps for up to 6 months-mine never makes it past 2, everyone eats it!
  • **Thisrecipe makes"around" 4 cups, depending on the nuts, how they are chopped and if you have tamped the measuring cup down well.

Make this traditional all-American Thanksgiving dessert for a celebratory dinner party. Our classic pecan pie recipe is best served with whipped cream or a scoop of ice cream

flour, for dusting
500g pack sweet shortcrust pastry
75g butter, softened
100g golden caster sugar
175g golden syrup
175g maple syrup
3 eggs, beaten
½ tsp vanilla extract
300g pecan halves
double cream, whipped, to serve

Steps:

  • On a lightly floured surface, roll out the pastry. Use the pastry to line a 23cm tart tin, keeping any off-cuts in case you need to fill any cracks after blind-baking. Prick the base of the pastry case with a fork and chill for 30 mins, or until firm.
  • Heat oven to 190C/170C fan/gas 5. Line the pastry case with baking parchment, fill with baking beans and bake for 15-20 mins until the sides are set. Remove the beans and parchment and return the tin to the oven for 5-10 mins until the pastry is golden and the base is set. Leave to cool.
  • Increase oven to 200C/190C fan/gas 6. Use an electric whisk to beat the butter and sugar together until light and fluffy. Keep the beaters going and pour in both of the syrups. Gradually add the eggs, ¼ tsp salt and the vanilla, then whisk until combined. Stir through the pecans, then pour the mixture into the tart case. Bake for 10 mins. Turn heat down to 160C/140C fan/gas 3 and continue baking for 30-35 mins (the pie should be golden brown and the filling should wobble a little in the centre when shaken). Leave to cool in the tin. You'll probably need to run a knife around the tin to lift out the pie. Serve with whipped cream or ice cream.
