2 large eggs
1/2 cup unsweetened finely shredded coconut
1/2 cup finely chopped pecans
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
4 tilapia fillets (6 ounces each)
2 tablespoons canola oil

Steps:

  • In a shallow bowl, whisk eggs. In a separate shallow bowl, combine coconut, pecans, salt and pepper flakes. Dip fillets in eggs, then in coconut mixture, patting to help coating adhere., In a large skillet, heat oil over medium heat. In batches, add tilapia and cook until fish is lightly browned and just begins to flake easily with a fork, 2-3 minutes on each side.

1/2 cup dry breadcrumbs
2 tablespoons finely chopped pecans
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 cup low-fat buttermilk
1/2 teaspoon hot sauce
3 tablespoons flour
4 (6 ounce) tilapia fillets
1 tablespoon oil, divided
lemon wedge

Steps:

  • Combine breadcrumbs, pecans, salt, garlic, and pepper in a shallow dish.
  • Combine buttermilk and hot sauce (such as Tabasco) in a medium bowl.
  • Place flour in a third dish.
  • Dredge 1 fillet in flour, dip into buttermilk mixture, then into breadcrumb mixture. Repeat with remaining fillets.
  • Heat 1 1/2 tsp oil in a large skillet (non-stick works best) over medium-high heat.
  • Cook 2 fillets for 3 minutes on each side or until fish flakes easily.
  • Add remaining oil and cook additional 2 fillets.
  • Serve with lemon!

This is my wife's favorite recipe for Tilapia. It is simple to prepare and the fish remains moist and riddled with flavor. A five star favorite when I entertain guests for dinner. I found the recipe somewhere on the internet, but not sure where.

4 tilapia fillets
1/2 cup mayonnaise (not low fat)
1/4 cup Dijon mustard
1 teaspoon butter (or Pam Spray)
1/4 cup finely chopped pecans

Steps:

  • Spread butter on metal baking pan (or spray with olive oil Pam).
  • Place filets on pan.
  • Combine mayo and Dijon and spread on filets.
  • Sprinkle with pecans.
  • Preheat oven to 375 and bake about 10 minutes unless filets are extra large, then add about 2 minutes.

1 tsp bottled hot sauce
3 Tbsp flour
1 Tbsp canola oil-divided
4 6 oz tilapia fillets

Steps:

  • 1. Combine first 6 ingredients in a shallow dish or pie plate. Combine buttermilk and hot sauce in a medium bowl: place flour in a shallow dish. Dredge each fillet in flour. Dip in buttermilk and then breadcrumb mixture. making sure fillets are nicely coated with crumbs. 2. Heat 1-1/2 teaspoons of oil in a large nonstick skillet over medium-high heat. Working with 2 fillets at a time, add fillets to pan and cook 3 mins per side or until fish flakes easily when tested with a fork and has an internal temp of 145 degs. Repeat procedure with remaining oil and 2 fillets. Refrigerate and leftovers.
