When I was trying to duplicate a favorite restaurant recipe, I came up with this hearty stew. Pork, pasta, vegetables and beans in a thick tomato broth make it a warm and satisfying supper. My husband and I love the savory Italian flavor.

1-1/2 cups beef broth
2 celery ribs, chopped
2 large carrots, cut into 1/4-inch slices
1 medium onion, chopped
1 can (46 ounces) V8 juice
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
2 cans (6 ounces each) Italian tomato paste
1 tablespoon dried oregano
1-1/2 teaspoons pepper
1/4 teaspoon garlic powder
3/4 pound ground pork
3/4 cup kidney beans, rinsed and drained
3/4 cup great northern beans, rinsed and drained
1 cup medium shell pasta, cooked and drained
Shredded Parmesan cheese

Steps:

  • In a Dutch oven or soup kettle, combine the broth, celery, carrots and onion. Bring to a boil. Reduce heat; cover and simmer for 5-7 minutes or until vegetables are crisp-tender. Stir in the V8 juice, tomatoes, tomato paste, oregano, pepper and garlic powder. Cover and simmer for 40-45 minutes., Meanwhile, in a skillet, cook pork over medium heat until no longer pink; drain. Add meat and beans to soup; cover and simmer 30-45 minutes longer or until heated through. Stir in pasta just before serving. Sprinkle with Parmesan cheese.

This hearty chicken and veggie stew is perfect for a French dinner - made using Progresso® broth and peas.

2 cups ready-to-eat baby-cut carrots
1 cup sliced fresh mushrooms (about 3 oz)
4 small red potatoes, cut into quarters
1 jar (12 oz) chicken gravy
1 3/4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1 teaspoon dried thyme leaves
1/2 cup frozen baby sweet peas
1 deli rotisserie chicken (2 to 2 1/2 lb), cut into serving pieces

Steps:

  • In 4-quart saucepan, mix all ingredients except peas and chicken.
  • Heat to boiling over medium-high heat. Reduce heat to medium-low. Cover; simmer about 20 minutes or until vegetables are tender.
  • Stir in peas and chicken. Cover; simmer about 5 minutes or until peas are tender.

Got this recipe from taste of home and absolutely love it!! Pasta can be omitted by all means, i haven't added it in a long time. It's the flavour I love! The key is the V8 juice!

1 1/2 c beef broth
2 celery ribs chopped
2 large carrots chopped
1 medium onion chopped
1 can(s) 46oz v8 juice
1 can(s) diced tomatoes undrained
2 can(s) 6oz each tomato paste (i use one)
1TB oregano, dried
pepper
garlic powder (to your taste)
3/4-1lb ground pork
1 can(s) kidney beans, rinsed & drained
1 c med shell pasta or other small pasta cooked and drained
parmesan cheese

Steps:

  • 1. In skillet, brown pork till no longer pink, drain and set aside.
  • 2. In dutch oven/large pot combine the broth, celery, carrots and onion. Bring to a boil. Reduce heat and simmer for 5 min or so till veggies are crisp-tender. Stir in V8 juice, tomatoes, tomato paste, pork and spices. Simmer for approx 1 1/2 hours, add the beans during the last half hour of cooking.
  • 3. Stir in the pasta just before serving and sprinkle with parmesan cheese. Serves approx 8.

Found the basic recipe in Cooking Light Magazine - I changed some spices and added more juice (with the broth and wine). It sounded like a great way to use up some chicken thighs I got for a steal at the grocery store and it being colder out now, this turned out FANTASTIC!!! My family loved it, and my hubby is VERY picky, he had seconds (which is okay, because it is low cal and good for you).

1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
3 skinless chicken thighs (about 3/4 pounds)
1 cup chopped onion
1 cup green peppers or 1 cup red pepper, chopped
1 (14 1/2 ounce) can Mexican-style stewed tomatoes, with cilantro, undrained
1 (4 1/2 ounce) can fat free chicken broth
1/4 cup white wine, a good one you drink
1 (15 ounce) can kidney beans, rinsed and drained
1/4 cup minced fresh cilantro
1/4 cup reduced-fat sour cream
1 cup cooked brown rice
shredded cheese (mexican blend works best)

Steps:

  • Combine chili powder, garlic powder, Kosher salt, and pepper; sprinkle over chicken.
  • Place chicken in an electric slow cooker.
  • Stir in onion, tomatoes, broth and wine.
  • Cover with lid; cook on high-heat setting for 3 hours.
  • Stir in beans.
  • Cover; cook on high-heat setting 1 hour.
  • Place 1/3 cup brown rice in each of 3 soup bowls.
  • Next, place 1 chicken thigh on top of brown rice in each soup bowl;
  • Ladle 1 1/4 cups stew into each bowl.
  • Top each serving with 2-3 Tablespoons shredded mexican blend cheese & 2 teaspoons cilantro and 2 teaspoons sour cream.

PEASANT STYLE MONKFISH STEW

This is based on a recipe I saw on Emeril Live. I had to make some adaptations because I don't eat meat and Emeril has quite a fondness for sausage and pork fat! The original recipe called for 1/2 lb of chorizo, but I usually substitute either seafood sausage or soy Italian sausage in its place. On occasion, I've added 1/2 lb shrimp to this as well.

2 (10 ounce) monkfish, tails
4 teaspoons creole seasoning
3 tablespoons olive oil
1/2 lb italian soy sausage or 1/2 lb chorizo sausage, removed from casings (you choice)
1 cup chopped yellow onion
3/4 cup chopped green bell pepper
2 tablespoons minced shallots
1 tablespoon minced garlic
1 tablespoon tomato paste
1 cup peeled seeded and chopped tomato
1/2 cup dry white wine
1/2 cup pitted black olives, halved
1/2 cup pimento stuffed olive, halved
1/2 lb new potato, scrubbed and cut into quarters
1 tablespoon chopped fresh oregano (or 1 tsp dried)
1 bay leaf
2 1/2 cups shrimp stock or 2 1/2 cups fish stock
1/4 cup grated parmesan cheese (optional)
chopped fresh parsley

Steps:

  • Preheat your oven to 350 degrees.
  • Sprinkle Creole seasoning on all sides of the monkfish.
  • In a large stock pot, heat the oil over medium-high heat.
  • Add the monkfish and sear, about 2 minutes per side.
  • Remove from the pan and set aside.
  • Add whatever sausage you prefer to the oil in the pan and cook, stirring, until brown, about 3 minutes, (a little less if you use the seafood sausage).
  • Add the onions and bell peppers and cook until slightly softened, for about 3 minutes.
  • Add the shallots and garlic, and cook, stirring, for 30 seconds.
  • Add the tomato paste and cook until slightly browned.
  • Add the wine and stir to deglaze the pan, scraping up all the bits that have stuck to the bottom of the pan.
  • (Note, the seafood and/or soy sausage don't give off nearly the fat that chorizo would, so I usually keep my on it until I pour in the wine to make sure its not getting too dry).
  • Reduce wine for a couple minutes add then add your tomatoes.
  • Let them cook for about 1 minute and then add the olives, potatoes, oregano, and bay leaf.
  • Finally, add the shrimp stock and stir well.
  • Bring to a boil.
  • Remove from the heat, return the monkfish to the pan, cover tightly and roast in oven until the fish is tender, about 35 to 40 minutes.
  • Remove from the oven.
  • Divide the monkfish and pan juices among 4 large, deep bowls.
  • Sprinkle each portion with the cheese and parsley if desired.
  • Serve immediately.
  • I always serve with lots of crusty bread to mop up the juice.

My son came up with the name for this recipe because I just through some stuff together when I was trying to figure something out to eat for dinner one night.

1 can(s) hartford house beef stew
1 can(s) carrots, canned, drained
1 can(s) green beans, canned, drained
1 can(s) corn, canned, drained
1/2 tsp garlic salt
1/2 tsp lawry's seasoned salt
1/4 tsp onion powder
1 pinch thyme, dried
1/2 pinch rosemary, dried
1 dash(es) cayene red pepper, ground
1 tsp coarse ground black pepper
1 tsp chopped chives
1/2 pkg ground hamburger 80/20
1 dash(es) sage, ground
1 can(s) campbell's tomato soup

Steps:

  • 1. Brown hamburger meat over medium heat. Add the dash of sage, ground black pepper, onion powder, thyme, 1/4 teaspoon garlic salt rosemary and 1/4 teaspoon of seasoning salt to the hamburger while it is cooking. Drain off any grease.
  • 2. In a large pot pour your can of Hartford House Beef Stew, carrots, green beans, and corn. Heat over medium low heat. Mix these ingredients well. Add to this the ground cayenne red pepper, rest of coarse black pepper, chopped chives, rest of garlic salt and drained cooked hamburger meat. Add one can of Campbell's tomato soup to this mixture. Use your empty soup can to add one can of water.
  • 3. You can add more water to your stew if you would like it a little thinner or add less water to have it thicker. serve with some hot homemade cornbread with butter and enjoy.

1 (14.5-ounce) can Mexican-style stewed tomatoes with jalapeño peppers and spices, undrained
1 (4.5-ounce) can chopped green chiles, undrained
1 (15-ounce) can pinto beans, rinsed and drained
1 (15-ounce) can kidney beans, rinsed and drained
1/4 cup minced fresh cilantro
1/4 cup reduced-fat sour cream

Steps:

  • Combine cumin, salt, and pepper; sprinkle over chicken. Place tempeh in an electric slow cooker; stir in onion, tomatoes, and chiles. Cover with lid; cook on high-heat setting for 3 hours. Stir in beans. Cover; cook on high-heat setting 1 hour. Ladle 1 1/4 cups stew into each bowl. Top each serving with 2 teaspoons cilantro and 2 teaspoons sour cream.
