You'll be so glad you have this around February! A very fresh-tasting tomato sauce. Simple, only 5 ingredients, if you count the salt! Pretty quick to make, with minimal fuss. I have used any and all types of tomatoes and it is almost as good made with canned tomatoes in winter. I believe this is from a Sarah Leah Chase cookbook. Excellent for freezing. I've been making it for years. Every once in a while I toy with the idea of adding several cloves of garlic but kinda hate to mess with success. Just recently I used it in a recipe for Chicken Parmesan. All I can say is WOW! Sometimes quick and easy is best.

1/3 cup olive oil
3 large yellow onions, chopped medium fine
1 teaspoon salt (or to taste)
2 1/2 tablespoons tomato paste
6 -8 plum tomatoes, peeled and chopped or 6 -8 a 35 oz. can tomatoes

Steps:

  • Heat oil in large pot over high heat until sizzling hot.
  • Add the onions and saute, stirring frequently, for 5 minutes.
  • Reduce the heat to medium and cook the onions, stirring frequently just until beginning to turn golden brown, about 25 minutes.
  • Stir in salt and tomato paste. Stir in canned tomatoes and simmer uncovered for 30 minutes.
  • Freezes very well.

3 tablespoons olive oil
450 g ripe tomatoes, peeled and chopped
4 eggs, beaten a little with a fork
1 teaspoon thyme or 1 teaspoon basil
salt
black pepper
1 pinch sugar

Steps:

  • Heat the olive oil in a large frying pan and add the prepared tomatoes and the herbs.
  • Stir a little and let them cook gently for 5-8 minutes until all the liquid evaporates.
  • Stir in some seasoning and the sugar and add the seasoned beaten eggs, pouring them evenly all over the tomatoes.
  • Stir gently with a fork and cook slowly for 3-4 minutes until the eggs are cooked but not too solid.

1 pound dried great northern beans
6 cups water
3 carrots, sliced
3 celery ribs, sliced
2 medium onions, chopped
2 garlic cloves, minced
2 bay leaves
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon dried basil
1/2 teaspoon pepper
2 tablespoons olive oil

Steps:

  • Rinse and sort beans. Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until beans are softened., Drain and rinse, discarding liquid. Return to Dutch oven. Add 6 cups water, carrots, celery, onions, garlic, bay leaves, tomatoes, basil and pepper; bring to a boil. Reduce heat; cover and simmer 1-1/2 hours or until the beans are tender., Discard bay leaves. Add oil and heat through.
