PEAS IN TARRAGON CREAM

Another old time favourite. Grandma always had lots of different ways to serve vegetables. This is another of her recipes. Hope you will enjoy.

Number Of Ingredients 8

12 ounces peas (frozen or fresh)
4 tablespoons butter
4 scallions, chopped, finely
3 celery ribs, chopped, finely
1/2 cup cream, heavy
2 tablespoons French tarragon, fresh, chopped, finely
1/2 teaspoon salt, sea, fine
1/2 teaspoon black pepper, freshly ground

Steps:

  • Cook the peas, do not over cook.
  • Remove from heat, drain and reserve until needed.
  • Melt the butter and saute the scallions and celery until tender.
  • Add the cooked peas to the scallions and celery, mix and stir in the cream and tarragon.
  • Cook for 5 minutes, uncovered on low heat, until heated thru.
  • Season with salt and pepper and serve.

Frozen peas are a gift to the breakaway cook: their creamy, earthy goodness bursts with flavor, and they couldn't be easier to store and prepare. The pesto-like tarragon emulsion, made even creamier by the addition of Greek yogurt, really brings out the best in them, and the sprinkling of pistachios on top lends a lovely toasted, nutty texture. Try them with a broiled fish fillet and a glass of grassy Sauvignon Blanc.

1 pound frozen baby peas
1/2 cup loosely packed fresh tarragon leaves
2 scallions, white and green parts, chopped
2 tablespoons extra-virgin olive oil
1/4 cup Greek yogurt
1/2 cup chopped pistachios

Steps:

  • Preheat the oven to 500˚F. Put the peas in a clay pot or a small Dutch oven and gently heat them on the stove until they thaw, stirring occasionally.
  • Meanwhile, put the tarragon, scallions, olive oil, yogurt, and ¼ cup of the pistachios into a blender and puree. Gently mix into the peas, sprinkle the top with extra chopped pistachios, and bake for about 15 minutes-about the time the top will begin to brown. Remove and serve in your best serving bowl.

1 1/2 pounds fresh peas, shelled or 1 3/4 cups frozen, thawed
8 ounces snow peas, trimmed

  • Melt butter in heavy large skillet over medium heat. Add peas and snow peas. Stir to coat. Cook until just tender, stirring occasionally, about 3 minutes. Stir in tarragon. Season with salt and pepper. Serve immediately.

16 ounces frozen baby peas
8 ounces frozen white pearl onions
2/3 cup cream
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon pepper
1 dash garlic powder
1/4 teaspoon crushed dried tarragon
2 tablespoons flour
2 tablespoons sweet butter, slightly softened
1 tablespoon fresh finely snipped parsley (or fresh mint)

Steps:

  • Cook peas and onions (according to package directions) until done; drain. Set aside and keep warm.
  • In a medium saucepan, whisk together the cream, sugar, salt & pepper, garlic, tarragon, and flour until smooth.
  • Bring to a boil over medium-high heat; reduce heat to medium and continue to cook, stirring constantly, for three minutes more.
  • Reduce heat to low and add the cooked peas and onions to the cream sauce; stir gently to combine and heat through briefly.
  • Serve immediately with a garnish of sweet cream butter and fresh snipped parsley (or mint).
