PEAR-LIME GELATIN SALAD

A "must" at our family reunions is this easy make-ahead gelatin salad. Try decorating the top with maraschino cherries. The red and lime-green color is especially pretty for the holidays.

Number Of Ingredients 6

1 can (15 ounces) pear halves
1 package (3 ounces) lime gelatin
1 package (8 ounces) cream cheese, cubed
1 can (20 ounces) unsweetened crushed pineapple, well drained
1 cup chopped pecans, toasted, divided
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • Drain pears, reserving juice; set pears aside. In a small saucepan, bring juice to a boil. Stir in gelatin until dissolved. Remove from the heat; cool slightly. , In a food processor, combine pears and cream cheese; cover and process until smooth. Transfer to a large bowl; stir in gelatin mixture until blended. Stir in the pineapple and 3/4 cup pecans. Fold in whipped topping. , Pour into an ungreased 11x7-in. dish. Refrigerate until set. Sprinkle with remaining pecans. Cut into squares.

This is one of the first dishes I made growing up, my Father loved it so of course,I made it often.I still make it since I love it too! The dollop of cottage cheese is optional but I usually add it,I love cottage cheese!

small box of lime jello
1 c boiling water
1/2 c ginger ale
1/2 c pear juice(from the canned pears)
1 c canned pears
cottage cheese, optional

Steps:

  • 1. Dissolve the Jello in boiling water. Drain pears,add the ginger ale and pear juice, and chill until thick. Chop the pears in bite size pieces . When Jello is thickened, add the pears. Chill until firm. Add a dollop of cottage cheese if you like.

This is my daughter in law's recipe. When we have our family gatherings I always ask her to bring this recipe. It is so good and the whole family enjoys it so much. It is also pretty to serve.

1 can(s) (29-32) can pears
1 oz 8 oz. cream cheese
1 oz 8 oz. cool whip
1 small lime jell-o
chopped pecans or walnuts (optional)

Steps:

  • 1. Heat 1 cup of the pear juice that is in the can with pears to boiling. Remove from heat and add Jell-O; set aside. Place whole pears in the bottom of your dish. If you want to add nuts sprinkle them over pears.
  • 2. In a mixer, mash cream cheese and Cool Whip together and then add Jell-O and pour over whole pears that you have lined in bottom of a pretty bowl. (I use my glass bowl that I would serve it in) Chill overnight.
  • 3. Slice and serve over lettuce with your meal. Or just cut in squares and serve alone without lettuce.
  • 4. Note: You can also make this recipe in a Jell-O mold.

Great and green, this light gelatin salad made with pears and reduced fat cream cheese and whipped topping is a staple at any holiday meal in our family.

1 (.6 ounce) package sugar-free lime Jell-O®
1 cup boiling water
1 (15.25 ounce) can pear halves in juice
1 (3 ounce) package reduced-fat cream cheese, softened
1 ½ cups reduced-fat frozen whipped topping, thawed

Steps:

  • Whisk together the lime gelatin and boiling water in a large bowl until the gelatin dissolves. Pour the mixture into the container of a blender, and add the pear halves and cream cheese. Cover and blend until smooth. Pour back into the bowl, and gently whisk in the whipped topping. Transfer to a mold or serving bowl, cover and refrigerate until firm, at least 4 hours. To unmold, dip the mold briefly into hot tap water to loosen the gelatin, then invert onto a plate.

An old fashioned Jello salad that is also great for a light dessert. I changed it a little from the original in the matter of adding a little zip to it with different & extra spice & subbing lime juice for the original lemon juice

1 (16 ounce) can pear halves in natural juice
1 (3 ounce) package lime Jell-O gelatin
1 cup boiling water
1 tablespoon lime juice
6 ounces cream cheese, softened
1/4 teaspoon ginger
1/4 teaspoon cinnamon

Steps:

  • Drain pears, reserving 3/4 cup of the syrup; coarsely chop pears and set aside.
  • Dissolve jello in boiling water; add pear syrup and lime juice; measure 1 1/4 cups into an 8X4 loaf pan or a 4 cup gelatin mold- chill until set but not firm- about one hour.
  • Meanwhile, slowly (to prevent lumps) blend remaining gelatin into the softened cream cheese; beat until smooth then blend in spices and chopped pears.
  • Pour over set gelatin in refrigerator and let finish firming up in fridge, about four hours.
  • Note- This can be made with pears in syrup; doing that makes it sweeter and more of a dessert dish which is how we prefer it here at my house.

Prepare this refreshing Under-the-Sea Salad. Lime gelatin, cream cheese, pears and cinnamon make this Under-the-Sea Salad both pretty and delicious.

1 can (15-1/2 oz.) pear halves in light syrup, undrained
1 cup boiling water
1 pkg. (3 oz.) JELL-O Lime Flavor Gelatin
1 Tbsp. fresh lemon juice
6 oz. (3/4 of 8 oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/8 tsp. ground cinnamon

Steps:

  • Drain pears, reserving 3/4 cup of the syrup. Dice pears; set aside.
  • Stir boiling water into gelatin and salt in medium bowl at least 2 minutes until completely dissolved. Stir in reserved syrup and lemon juice. Pour 1-1/4 cups gelatin mixture into 8x4-inch loaf pan or 4-cup mold sprayed with cooking spray. Refrigerate about 1 hour or until set but not firm (should stick to finger when touched and should mound).
  • Beat remaining gelatin mixture gradually into cream cheese until smooth. Stir in pears and cinnamon. Spoon over clear gelatin in pan.
  • Refrigerate 4 hours or until firm. Unmold. Cut into 8 slices. Store leftover gelatin mold in refrigerator.
