Yield Makes 4 servings

Number Of Ingredients 9

1 tablespoon Dijon mustard
2 tablespoons maple syrup (see Tip)
Juice of 1 lime
1/4 cup olive oil
Four 6-ounce tuna fillets
Salt and freshly ground black pepper
4 cilantro sprigs
Pear-Potato Salad
Avoid imitation maple-flavored syrups, which are typically made without any real maple syrup.

Steps:

  • 1. Whisk together the mustard, maple syrup, lime juice, and 1 tablespoon of the olive oil. Set aside.
  • 2. Season the tuna on both sides with salt and pepper. Heat the remaining 3 tablespoons olive oil in a large cast-iron skillet over high heat. Add the tuna and cook for 30 seconds on each side.
  • 3. Remove from the pan and brush both sides of the tuna with the maple-mustard glaze. Transfer to a serving platter and garnish with the cilantro. Serve with the pear-potato salad.

Ahi Tuna Salad with Ginger Pear Dressing image

Great lite lunch salad

Number Of Ingredients 12

2 inch piece of ginger sliced
1/2 c olive oil
1 asian pear peeled cored and chopped
2 Tbsp white miso
2 tsp lime zest
1 Tbsp rice vinegar
1 clove garlic
4 ahi tuna steaks
1/2 c black sesame seeds
1 tsp ground ginger
salt
salad ingredients of your choice

Steps:

  • 1. Cook the ginger in the oil in a small saucepan over med. low heat for 10 to 15 minutes. Do not burn. let oil cool. Strain out the ginger and discard.
  • 2. Place the pear, miso, lime zest, vinegar and garlic in a blender and blend until smooth. Drizzle in the olive oil until emulsified. Taste and season with salt
  • 3. Season the tuna with salt. Mix the black sesame seeds with the ginger powder. Roll the outside of the tuna steaks in the seed mixture
  • 4. Add a little oil to a cast iron pan. Get pan hot and sear the tuna on both sides. Remove tuna to cutting board and slice
  • 5. Arrange salad ingredients together on plate. Top with tuna and drizzle the dressing over top.

4 large Anjou pears, cored, peeled and chopped
1 cup chopped celery
2 scallions, chopped (white and green)
1 1/3 cups chopped walnuts
1 1/2 tablespoons lemon juice
1/2 teaspoon sugar
18 ounces solid white tuna packed in water, drained and flaked
1/4-1/3 cup light mayonnaise
4 cups mixed baby greens or 4 cups other mixed greens

Steps:

  • Combine first 5 ingredients in a bowl. Stir in tuna and mayonnaise and toss to mix.
  • Serve on a bed of greens.

FOR THE PEAR DRESSING
1/2 barlett pear peeled cored and diced
1/3 cup(s) olive oil
3 tablespoon(s) pear nectar
1 tablespoon(s) apple cider vinegar
1 teaspoon(s) lemon juice
1 teaspoon(s) whole grain mustard
salt and pepper
FOR THE SALAD
2 large tuna steaks
2 tablespoon(s) olive oil
salt and pepper
1 head butter lettuce chopped
1/2 barlette pear peeled cored and sliced
1/4 cup(s) cooked shelled edamame
1 cup(s) bok choy chopped
2 hard boiled eggs sliced
1 avocado peeled and pitted and diced
2 ounce(s) goat cheese crumbled
1/4 cup(s) pitashio nuts shelled

Steps:

  • For the dressing Place all ingredients in food processor and process until smooth
  • For the salad On 2 plates place the lettuce, pear, edamame, bok choy, eggs, avocado, pitashios and crumbled goat cheese.
  • Add olive oil to skillet. Season the Tuna steaks with salt and pepper. When the oil starts smoking sear the tuna on all side. Remove to a cutting board and cut into strips.
  • Place the tuna on top of the salad and pour dressing over.
