PEAR TARTS WITH CARAMEL SAUCE



Pear Tarts with Caramel Sauce image

1/4 cup unsalted butter, softened
1/3 cup super fine sugar
2 large egg yolks
1/4 teaspoon Amaretto or almond extract
1 cup ground almonds (see note)
1 tablespoon all-purpose flour
1/2 cup brown sugar, packed
4 tablespoons unsalted butter
2 tablespoons heavy cream
1 pound puff pastry
2 large ripe pears, peeled, cored, and thinly sliced
1 egg yolk
4 sprigs mint
Confectioners sugar, for serving

Steps:

  • To make the almond cream: In the bowl of an electric mixer or with a wooden spoon, beat the butter and sugar together until light and fluffy. Add the egg yolks, beat in well, and add the Amaretto. Stir in the ground almonds and flour until evenly mixed. The mixture should be the consistency of a thick paste.
  • To make the caramel sauce: In a small sauce pan, combine the brown sugar, butter and cream. Bring the mixture to a boil and boil vigorously for 2 minutes, remove from the heat. Cover and keep warm at the back of the stove.
  • To make the tarts: Preheat the oven to 400 degrees. On a lightly floured surface, roll out the pastry to a 1/8 inch thickness and, using a plate or cardboard circle as a template, use a very sharp knife to cut four 7 inch circles. Spread a circle of almond cream in the center of each, leaving a 1inch border. Fan the sliced pears out from the center of each tart, completely covering the almond cream but still leaving the border. Beat the egg yolk lightly with a fork and brush the border of the pastry with it (try not to let any yolk dribble down onto the cut edges of the pastry, otherwise it will not rise as high). Bake the tarts for about 20 minutes, until the edges are golden and the pastry is baked through. Remove from the oven and allow to cool for 5 minutes Place a sprig of mint in the center of each tart and sprinkle it with a little confectioners sugar. Serve warm, drizzled with the warm caramel sauce.

D'ANJOU PEAR AND ALMOND TARTS

I don't have a real sweet tooth so I wanted to make a dessert that wasn't too decadent. We love these tarts because they're just enough sweet with that unique pear taste and the crunch of almonds, a lot like apple pie. For those of you who make your own pie crust, it will make them that much better! I think these would pear well with your favourite cup of tea or a bubbly glass of Prosecco. Enjoy!

1 cup sugar, divided
2 large eggs, room temperature
2-1/2 cups all-purpose flour

1 large egg white
3 to 5 tablespoons 2% milk, divided
1-1/3 cups confectioners' sugar

Steps:

  • Cream butter and 1/2 cup sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture to form a dough. Divide dough in half; shape each into a rectangle. Wrap and refrigerate 1 hour., Meanwhile, in a small saucepan over medium heat, combine pears and remaining sugar. Cook and stir until sugar is dissolved and pears are softened, 6-8 minutes. 2 large Bosc pears, peeled, halved, cored, cut lengthwise into 1/8-inch-thick slices

Steps:

  • Preheat oven to 425°F. Roll out 1 pastry sheet on floured work surface to 1/8-inch thickness. Using 6-inch plate as aid, cut out 2 rounds. Repeat rolling and cutting with second pastry sheet, forming 4 rounds total. Place rounds on heavy large baking sheet, spacing apart. Using 1 pear half for each tart, fan out pear slices in center of each round. Brush tarts with melted butter; sprinkle each with 1 tablespoon sugar. 1 pound refrigerated pie dough
All-purpose flour, for dusting
3 pears, peeled, cored and diced
1/4 cup apple juice
1/4 cup lemon juice
1 tablespoon sugar
1 egg
1 cup powdered sugar
2 tablespoons milk
1 tablespoon grated lemon zest
1/4 teaspoon vanilla extract
1 tablespoon poppy seeds

Steps:

  • Divide the pie dough into two flattened discs; wrap in plastic and chill.
  • Preheat the oven to 375 degrees F. Line two cookie sheets with parchment.
  • Working one disc at a time, roll out the dough into a 1/8-inch-thick rectangle on a floured work surface. Cut into 9 even rectangles, then transfer to the prepared cookie sheets and chill.
  • Meanwhile, in a heavy-bottomed saucepot, add the pears, apple juice, lemon juice and sugar. Cook over medium heat until the pears begin to soften and the liquid thickens, 20 minutes. Set aside and let cool.
  • When the pear filling has cooled, remove one of the cookie sheets of portioned dough to a work surface. Whisk the egg and brush it evenly on the surface of the rectangles. Add 1 tablespoon of the pear filling to each rectangle. Remove the second cookie sheet from the refrigerator and place the remaining rectangles on top of the pear filling, pressing the edges with your fingers. With a fork, go over edges to seal. Poke holes in the top to allow steam to exit. Place the assembled tarts back in the refrigerator for 30 minutes.
  • Bake for 16 minutes, until golden brown, rotating every 5 minutes for even cooking. Let cool for 5 to 7 minutes.
  • In a small bowl, mix together the powdered sugar, milk, lemon zest and vanilla. Ice each tart and sprinkle with the poppy seeds.

1 large ripe pear
320g pack ready-rolled puff pastry
plain flour , for dusting
1 tbsp honey
50ml double cream
25g mild roquefort , crumbled
2 tbsp golden caster sugar

Steps:

  • Unravel the pastry and cut out two 15cm diameter circles using a saucer or small plate as a guide. Put them on a tray and prick all over with a fork. Peel, core and halve the pears lengthways. Finely slice each half and arrange in a neat overlapping circle in the middle of the pastry, leaving a 2cm border. Roll up and crimp the edges of the pastry to tuck the pears neatly into the tart. Can be prepared up to 1 day ahead and kept in the fridge; if the pears brown a little, it won't show.
  • To make the cream, whisk the cream and honey together to form soft peaks, add the cheese and continue to whisk. Scrape into a small container and chill until needed. Can be made 1 day ahead.
  • Put a baking tray in the oven and heat to 200C/180C/gas 6. For the glaze, put the sugar in a pan over a medium heat until it melts and caramelises. Pour this over the pears, then put the tarts on the hot baking tray and cook for 15 mins until they're puffed up and golden. Lift the tarts onto warmed plates and serve with a spoonful of the Roquefort cream so it melts on top.

1 cup slivered blanched almonds (1/4 lb), toasted and cooled
1/4 cup sugar
2 cups fine fresh bread crumbs (from 6 to 7 slices firm white sandwich bread)
5 tablespoons unsalted butter, melted for filling
1 fresh brown coconut (1 1/2 lb)
1 cup heavy cream
2/3 cup sugar
3 large egg yolks, lightly beaten
1 teaspoon vanilla (preferably Mexican)
For sauce
1 3/4 lb fresh red prickly pears (also called cactus pears; about 8)
3 tablespoons sugar, or to taste
1 to 2 teaspoons fresh lime juice
2 teaspoons orange liqueur such as Cointreau (optional)
1/2 cup crema (thick Mexican cream), crme frache, or sour cream thinned with 1 teaspoon milk
Special Equipment
6 (4-inch) fluted tart pans

Steps:

  • Make crust:
  • Line bottom of each tart pan with a round of parchment or wax paper.
  • Finely grind 1/3 cup almonds with sugar in a food processor (reserve remaining almonds for filling), then add bread crumbs and pulse until combined. Drizzle butter over crumbs and pulse until evenly moistened. Divide mixture among tart pans and press evenly over bottom and up side of each tart pan. Chill tart shells while making filling.
  • Make filling:
  • Put oven rack in middle position and preheat oven to 400°F.
  • Pierce softest eye of coconut with a metal skewer or small screwdriver and drain liquid through a sieve into a bowl and reserve. (If it tastes sweet, the coconut is fresh; if it tastes off, the coconut is rancid and should be discarded.) Bake coconut 15 minutes, then cool until it can be handled.
  • Reduce oven temperature to 350°F.
  • Break shell of coconut with a hammer or back of a heavy cleaver, then remove flesh with point of a strong knife, levering it out carefully. Remove brown skin with a sharp knife or vegetable peeler. Shred coconut in cleaned food processor fitted with medium-size shredding disk or hand-grate with medium-size teardrop holes of a box grater. Measure 2 1/2 cups loosely packed coconut and reserve. Transfer remaining coconut to a shallow baking pan and toast in oven, stirring occasionally, until golden, 8 to 10 minutes. Cool in pan on a rack and reserve for garnish. Leave oven on.
  • While coconut toasts, bring reserved coconut liquid, cream, and sugar to a simmer in a 1 1/2- to 2-quart heavy saucepan over moderate heat, stirring until sugar is dissolved. Simmer, uncovered, stirring frequently, until reduced to about 1 cup, 25 to 35 minutes. Transfer to a large bowl, then stir in reserved 2 1/2 cups untoasted coconut, yolks, vanilla, and reserved toasted almonds (2/3 cup) until combined well.
  • Put tart pans on a large baking sheet, then spoon coconut filling evenly into shells, stirring filling in between additions to get even amounts of solids and liquid and bake until filling is set and golden brown, 25 to 30 minutes. Cool tarts on a rack.
  • Make sauce:
  • Wearing rubber gloves, cut a 1/2-inch slice off both ends of each pear, then make a 1/2-inch-deep incision with a paring knife down side of each pear. Peel off rind, starting from incision, and discard. Coarsely chop flesh, then purée in cleaned food processor. Force pur&eacut;e through a medium-mesh sieve into a bowl using a rubber spatula.
  • Bring 1 cup purée and 3 tablespoons sugar to a simmer in cleaned 1 1/2- to 2-quart heavy saucepan, stirring, then simmer briskly, stirring frequently, until reduced to 1/2 cup, 10 to 12 minutes. Transfer cooked purée to a bowl, then cool to room temperature and stir in uncooked purée. Season to taste with lime juice, additional sugar, and orange liqueur (if using).
  • Using tip of a paring knife, loosen edge of 1 tart crust from pan, then invert tart into your hand, removing pan, and transfer tart, right side up, to a serving plate, then repeat with remaining tarts. Serve tarts topped with dollops of crema and sprinkled with toasted coconut, then spoon sauce around tarts.

10 ounces goat cheese
1/2 tablespoon sugar
1 pinch cinnamon
1 (17 1/2 ounce) package puff pastry sheets (2 sheets per pkg.)

Steps:

  • Preheat oven to 400°F.
  • Grease well a mini muffin tin. (or whatever size you like).
  • Roll 1 sheet of puff pastry to a 20 x 20 inch square with a rolling pin.
  • Cut into 2 x 2 inch squares (depending on the size of your tins).
  • Press into tins.
  • Chop the pears finely with the skins on (for added color).
  • Stir pears, sugar and cinnamon together.
  • Spoon approximately 1/2 tablespoon of goat cheese into the bottom of each tart.
  • Add approximately 1 tablespoon of pear mixture on top.
  • Bake for 25 minutes until edges of pastry are golden brown.

Add pears, raisings and ginger; toss to coat. Place one crust round on large baking sheet. Spoon 1/8 of the pear mixture (about 1/3 cup) onto center of round, leaving 1 1/2" around edge. Fold and firmly crimp edges up to partially enclose filling. Repeat with remaining rounds and filling. Brush edges lightly with watre and sprinkle with coarse sugar. 1/2 cup vegetable shortening
1/2 cup butter
2 eggs
1/2 tablespoon vanilla extract
1 pound or 2 cups pastry flour
4 tablespoons almond paste
1 cup sugar
1 cup butter
1 cup ground almonds
7 eggs
2/3 cup all-purpose flour
1/2 tablespoon almond flavor extract
2 (16-ounce) cans peeled pear halves

Steps:

  • Add sugar, shortening and butter. Mix until well blended and creamy. Add the eggs and vanilla extract and mix well. Add the flour and combine all ingredients until well blended. Chill before rolling out. Roll out pastry and cut to fit into 2-inch tar
  • Preheat your oven to 350 degrees.

1/4 c granulated sugar
1/4 tsp ground cinnamon
1 sheet frozen puff pastry, thawed
flour for dusting
2 Tbsp almond paste
4 tsp sour cream
2 small firm, ripe pears (preferably bartlett), peeled, cored, and cut into 12 wedges each
vanilla ice cream for serving (optional)

Steps:

  • 1. Position a rack in the center of the oven and heat the oven to 425°F. Line a baking sheet with parchment. Combine the sugar and cinnamon in a small bowl. Unroll or unfold the puff pastry on a lightly floured surface. Pinch any creases together and then smooth them out with your fingertips. Cut the pastry sheet into four equal squares and transfer them to the lined baking sheet.
  • 2. Roll 1-1/2 tsp. of almond paste into a small ball, flatten it slightly with the palm of your hand, and put it in the center of one puff pastry square. Drop 1 tsp. of sour cream on top. Sprinkle about 1/2 Tbs. of the cinnamon sugar over the sour cream. Arrange four pear wedges in the center of the puff pastry, two leaning away from the center one way and two leaning the other way. Sprinkle with another 1/2 Tbs. of the cinnamon sugar. Repeat with the remaining three puff pastry squares and filling ingredients-you won't need all of the sliced pears.
  • 3. Fold the corners of the puff pastry over the pears until the tips are just touching but not overlapping and press the dough against the pears. (The tarts won't look pretty now, but they'll be beautiful once they bake and puff up.) Bake until puffed and golden brown on the edges, 22 to 27 minutes. Let cool. Any juices that leak onto the baking sheet will harden to a candy-like consistency, so break off and discard these bits before serving.
  • 4. Serve topped with some vanilla ice cream (optional).

1 cup plus 2 Tbsp. flour, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, divided
1/2 cup cold butter, cut into small pieces
3 pears (1-1/4 lb.), peeled, thinly sliced
1/4 cup packed brown sugar
1/4 tsp. ground cinnamon
2 Tbsp. chopped pecans

Steps:

  • Heat oven to 400ºF.
  • Place 1 cup flour in large bowl. Cut half the cream cheese into cubes. Add to flour along with the butter; cut with pastry blender of 2 knives until mixture resembles coarse crumbs.
  • Shape dough into 2 balls; flatten each into disk. Wrap tightly with plastic wrap. Refrigerate 1 hour.
  • Place 1 disk of dough between 2 lightly floured sheets of waxed paper; roll into 7-inch round. Discard top sheet of waxed paper. Invert dough onto one end of large baking sheet. Discard second sheet of waxed paper. Repeat with remaining dough, inverting onto opposite end of baking sheet.
  • Spread half of the remaining cream cheese into 4-inch circle on center of each dough round.
  • Toss pears with sugar, cinnamon, nuts and remaining flour; spoon over cream cheese. Fold edges of crusts over pears. (Center of tarts will remaining uncovered.)
  • Bake 20 min. or until pears are softened and crusts are golden brown, covering loosely with foil the last 5 min. Cool.

These are very easy and quick to make especially using bought frozen pre rolled puff pastry sheets and canned pear or peach halves. They make for a light dessert. Also fun for children to help make and then watch puff up while cooking.

4 pear halves in natural juice (canned)
200 g puff pastry
4 tablespoons chocolate (chopped or coarsely grated)
milk or beaten egg, to glaze

Steps:

  • Roll out puff pastry to a 20cm square or use a frozen pre rolled puff pastry sheet which has been defrosted.
  • Cut into quarters.
  • Place some chocolate in centre of each square.
  • Sit a pear half cut side down firmly on top.
  • Brush with beaten egg or milk.
  • Sprinkle on a little demerara sugar for a crunchy topping if wished.
  • Bake at 220°C for 12-15 minutes until risen and golden brown.
  • Serve warm with whipped cream and/or pre made custard which has been thinned a little with some juice from the tin of pears.
  • These can also be made using peach halves and the centres filled with white chocolate.

2 (4-ounce) cans diced pears in extra light syrup
1 1/4 cups cold milk
1 (3 1/2-ounce) box instant vanilla pudding (4-serving size)
1 package Keebler® Ready Crust® graham cracker pie crust tarts
1 3/4 cups sliced fresh strawberries, divided
1 tablespoon sugar
1 1/2 teaspoons cornstarch

Steps:

  • 1. Drain pears, reserving 1/4 cup liquid. Set aside.2. In medium bowl beat milk and pudding mix with wire whisk for 2 minutes. Fold in pears. Spoon into crusts. Top each tart with 2 to 4 strawberry slices. Refrigerate while preparing topping.3. In medium saucepan mash remaining strawberries. Stir in sugar and cornstarch. Add reserved pear liquid. CARAMELIZED PEAR TARTS WITH CARDAMOM CREAM

1 frozen puff pastry sheet (from a 17 1/4-oz package), thawed
2 firm-ripe Bosc pears, peeled, halved lengthwise, and cored
1 tablespoon fresh lemon juice
1/2 cup plus 1 tablespoon granulated sugar
2 tablespoons unsalted butter
1/2 cup chilled heavy cream
1/8 teaspoon ground cardamom
Confectioners sugar for dusting (optional)

Steps:

  • Put oven rack in middle position and preheat to 425°F. Line a baking sheet with parchment or wax paper.
  • Roll out pastry into a 12-inch square on a lightly floured surface with a floured rolling pin. Brush off excess flour and cut out 4 (5-inch) rounds by tracing around an inverted plate or bowl with tip of a small sharp knife. Prick pastry rounds all over with a fork and transfer to baking sheet. Bake until rounds are puffed and golden, 12 to 15 minutes, then cool on baking sheet on a rack.
  • While pastry bakes, toss pear halves with lemon juice in a bowl. Cook 1/2 cup granulated sugar and a pinch of salt in a dry 10-inch heavy skillet over moderate heat, swirling skillet (to help sugar melt evenly), until caramel is deep golden, about 4 minutes. Remove from heat and stir in butter with a wooden spoon (mixture will bubble vigorously). When bubbling begins to subside, immediately add pear halves, cut sides down, and cook over moderately low heat, covered, turning over once, until pears are tender when pierced with a small sharp knife, about 13 minutes total. Remove from heat.
  • Beat cream, cardamom, and remaining tablespoon granulated sugar in a bowl with a whisk or an electric mixer until it just holds soft peaks.
  • Put each pastry round on a small plate and dust lightly with confectioners sugar if desired. Spoon some of caramel sauce onto center of each round and top with a pear half, cut side down. Serve with cardamom cream on the side.

  • Combine the first nine ingredients in a small saucepan. Bring to a boil over medium heat; cook until liquid is reduced by half. Add pears; cook and stir for 6-8 minutes or until pears are tender., Meanwhile, unfold puff pastry. Roll each pastry into a 10-in. square. Using a 2-in. round cookie cutter, cut out 25 circles from each square. Transfer to a greased baking sheet. Bake at 400° for 7-9 minutes or until golden brown., Spoon pear mixture over pastries; sprinkle with cheese and, if desired, pecans.
