PEAR-LIME GELATIN SALAD



Pear-Lime Gelatin Salad image

A "must" at our family reunions is this easy make-ahead gelatin salad. Try decorating the top with maraschino cherries. The red and lime-green color is especially pretty for the holidays.

1 can (15 ounces) pear halves
1 package (3 ounces) lime gelatin
1 package (8 ounces) cream cheese, cubed
1 can (20 ounces) unsweetened crushed pineapple, well drained
1 cup chopped pecans, toasted, divided
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • Drain pears, reserving juice; set pears aside. In a small saucepan, bring juice to a boil. Stir in gelatin until dissolved. Remove from the heat; cool slightly. , In a food processor, combine pears and cream cheese; cover and process until smooth. Transfer to a large bowl; stir in gelatin mixture until blended. Stir in the pineapple and 3/4 cup pecans. Fold in whipped topping. , Pour into an ungreased 11x7-in. dish. Refrigerate until set. Sprinkle with remaining pecans. Cut into squares.

This pretty lime gelatin mold has two layers. Both are studded with pears and one is made with cream cheese and pecans. Serve as a salad or dessert.

Number Of Ingredients 6

1 can (16 oz.) pear halves, undrained
1 pkg. (8-serving size) JELL-O Lime Flavor Gelatin
1-1/2 cups cold ginger ale
2 Tbsp. fresh lemon juice
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup chopped pecans

Steps:

  • Drain pears, reserving liquid. Add enough water to liquid to measure 1-1/2 cups; bring to boil in small saucepan. Chop pears; set aside.
  • Stir boiling liquid into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold ginger ale and lemon juice. Pour 1 cup of the gelatin into 5-cup mold. Refrigerate about 30 minutes or until slightly thickened (spoon drawn through leaves definite impression). Arrange some of the pears in mold, pushing into gelatin in mold.
  • Meanwhile, gradually add remaining gelatin to cream cheese in large bowl, mixing with wire whisk until well blended. Refrigerate about 30 minutes or until slightly thickened (consistency of unbeaten egg whites). Stir in remaining pears and pecans. Spoon over gelatin layer in mold.
  • Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin mold in refrigerator.

Yield 8 to 12 depending on how small or large you slice the mold.

Number Of Ingredients 7

1½ cups boiling water
1 (6 oz) box or 2 (3 oz) boxes lime Jello, I used sugar free
1 (15 oz) can sliced pears in juice
1 (3 oz) package cream cheese, I used reduced fat or Neufchatel cream cheese, softened to room temperature
1 cup mini marshmallows
½ cup chopped or cut up pecans, optional
1½ - 2 cups Cool Whip or Truwhip whipped topping, thawed

Steps:

  • In a large mixing bowl, dissolve Jello in boiling water. Let cool a few minutes. Then, pour into a blender. Add juice from pears along with the softened cream cheese. Cover and whirl until smooth. Pour mixture back into mixing bowl. Gently fold in whipped topping. Add marshmallows and pecans. Pour into mold or large serving bowl. Cover with plastic wrap and refrigerate at least 5 hours or overnight. Check to make sure it's firm. Still jiggly--it's Jello! To unmold, dip the bottom of the bowl or mold into hot tap water to loosen. Then, invert onto a serving plate.

I have not tried this one yet but I thought It sounded interesting so I thought I'd save it here until I can try it myself. For more texture you could add 1/2 cup of chopped nuts to this salad. Cook time is chill time.

2 (15 ounce) cans pear halves (reserve 1 cup of juice)
1 (3 ounce) package lime gelatin
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
1 (8 ounce) container Cool Whip, thawed

Steps:

  • In a small saucepan, add 1 cup of pear juice and bring to a boil.
  • Remove from heat.
  • In a large bowl combine dry lime gelatin with pear juice and stir until gelatin is dissolved.
  • Chill until partially set.
  • In a medium bowl, cream the cream cheese with milk until blended and smooth.
  • In a small bowl, mash pears until smooth. Mix with the cream cheese mixture and mix until smooth.
  • Combine gelatin mixture and cream cheese mixture and blend until smooth.
  • Fold in cool whip.
  • Pour into a mold or leave in a bowl and chill 2-3 hours or until set.

1 (.6 ounce) package sugar-free lime Jell-O®
1 cup boiling water
1 (15.25 ounce) can pear halves in juice
1 (3 ounce) package reduced-fat cream cheese, softened
1 ½ cups reduced-fat frozen whipped topping, thawed

Steps:

  • Whisk together the lime gelatin and boiling water in a large bowl until the gelatin dissolves. Pour the mixture into the container of a blender, and add the pear halves and cream cheese. Cover and blend until smooth. Pour back into the bowl, and gently whisk in the whipped topping. Transfer to a mold or serving bowl, cover and refrigerate until firm, at least 4 hours. 1 can (15-1/2 oz.) pear halves in light syrup, undrained
1 cup boiling water
1 pkg. (3 oz.) JELL-O Lime Flavor Gelatin
1 Tbsp. fresh lemon juice
6 oz. (3/4 of 8 oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/8 tsp. ground cinnamon

Steps:

  • Drain pears, reserving 3/4 cup of the syrup. Dice pears; set aside.
  • Stir boiling water into gelatin and salt in medium bowl at least 2 minutes until completely dissolved. Stir in reserved syrup and lemon juice. Pour 1-1/4 cups gelatin mixture into 8x4-inch loaf pan or 4-cup mold sprayed with cooking spray. Refrigerate about 1 hour or until set but not firm (should stick to finger when touched and should mound).
  • Beat remaining gelatin mixture gradually into cream cheese until smooth. Stir in pears and cinnamon. Spoon over clear gelatin in pan.
  • Refrigerate 4 hours or until firm. Unmold. Cut into 8 slices. Store leftover gelatin mold in refrigerator.

So easy and yummy! We here in Utah are famous for our green Jello. This is a different version than usual. I love the pear and lime flavors together! Comes from a Lehi Sesquicentennial Cookbook.

1 quart pear, with juice

  • Refrigerate until set, about 2 hours.
