SPICY LEMON, PEAR & GINGER NUT BREAD



Spicy Lemon, Pear & Ginger Nut Bread image

I love tea breads with a cup of good strong coffee. It doesn't get any better than this. I hope that you will enjoy my creation for the Ready Set Cook - 2018 game over at Food Friends and Fun. It's spicy and delicious.

Number Of Ingredients 19

1/3 c soft butter + 2 tbsps
1 1/4 c white sugar
1 1/2 tsp lemon zest
2 large eggs,
2 c white flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp freshly ground cinnamon
1/4 tsp freshly ground mace or nutmeg
1/2 c half n half cream
1/8 c 1/8 cup water + 1 thbs
1 1/2 Tbsp lemon juice
1/2 c fresh, peeled, diced pear
1 Tbsp finely chopped candied ginger
1/3 c coarsley chopped hazelnuts
GLAZE
1/3 c icing sugar
2 1/2 tsp half n half cream

Steps:

  • 1. Preheat your oven to 350°F. Butter or spray a 9 - x 5 - x 3 - inch loaf pan and lightly flour the pan; get rid of any excess flour. Set aside until needed.
  • 2. In a large bowl beat together butter, sugar and lemon zest until light and fluffy. Then add the eggs, 1 at a time, mixing well after each addition.
  • 3. Into a small bowl add the flour, baking powder, baking soda, salt, ground cinnamon and mace, mix well to combine.
  • 4. In a measuring cup add the half and half cream, water and lemon juice. Mix well.
  • 5. Next with your mixer on low speed, gradually add the flour mixture and the milk mixture alternately in batches, into your butter mixture. (Please begin and end with the flour mixture.)
  • 6. Next, gently add the pear, candied ginger and nuts into the batter.
  • 7. Pour the batter into your prepared loaf pan and bake for 50 - 60 minutes. While the bread is baking prepare your glaze. If using.
  • 8. Glaze: In a small bowl stir together the icing sugar and cream until smooth. Set aside until needed.
  • 9. Cool the baked bread for 10 - 15 minutes then remove from pan and allow to finish cooling on a wire rack. Now drizzle the simple glaze over the bread and enjoy!

Last fall, I made several half-pints of Pear Butter. It's similar to apple butter, but with the emphasis on nutmeg instead of cinnamon in the spices. I came up with this recipe, based on a pumpkin bread recipe, to use my pear butter. I've made a test batch, and it is delicious! I'll be serving it at a baby shower tomorrow, so...

3/4 c all purpose flour
1/2 c low carb baking mix
1/4 c almond meal/flour
1/4 c ground flaxseed
1/4 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 1/3 c sugar
1/3 c soft shortening (i used coconut oil)
2 large eggs
1 c pear butter
1/3 c pear nectar (or milk)
1/2 tsp vanilla
1/2 c coarsely chopped walnuts or pecans
1/3 c raisins or chopped dates (optional)

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Stir together the dry ingredients (except sugar) in a medium bowl.
  • 3. In a large bowl, beat the sugar, shortening, and eggs until light and fluffy. Add the pear butter and beat in.
  • 4. Add the dry ingredients in 3 additions to the liquid ingredients, alternately with the pear nectar (or milk). Stir in the vanilla.
  • 5. Fold in the nuts and raisins or dates (if used).
  • 6. Place batter into 3 greased mini-loaf pans and bake about 25-30 minutes or until bread tests done with toothpick.
  • 7. This can also be made in one large 9 x 5 loaf pan. It will take about 35-40 minutes to bake.

1 can (16 oz) Bartlett pear halves
2 1/2 cups all-purpose flour
1/2 cup sugar
3 t baking powder
1 t salt
1/8 t allspice
1/4 cup vegetable oil
1 large egg, beaten
2 t grated orange rind
1/2 cup chopped walnuts
1 cup sifted powdered sugar
2 T orange juice

Steps:

  • Drain pears, reserving syrup; reserve 1 pear half for topping. Process remaining pears in a blender or use an immersion blender, process until smooth; transfer to a 1-cup measuring cup. Add as much of the reserved pear syrup as needed to make 1 cup. Reserve remaining syrup for other use. Mix flour, sugar, baking powder, salt and allspice in large bowl. Mix pear puree, oil, egg and orange rind in medium bowl. Add to flour mixture; stir just until moistened. Fold in walnuts; batter will be stiff. Spoon batter into greased 8 x 4 inch loaf pan. Cut reserved pear half into 6 slices; arrange crosswise in a row on top of batter. Bake in preheated oven at 350 for 50-55 minutes or until wooden toothpick comes out clean. Cool in pan on wire rack, 5 minutes. In a small bowl, mix powdered sugar and as much of the orange juice as needed to make a thin, smooth glaze. Remove bread from pan; spoon glaze on top of bread. Cool completely on wire rack. Wrap bread in aluminum foil; let stand overnight before slicing.
