CHOCOLATE PEAR POUCHES

2 small Bosc pears
1 cup port or red wine
1/4 cup sugar, plus more for sprinkling
2 tablespoons dried cherries
1 cinnamon stick
2 cardamom pods
2 ounces semisweet chocolate chunks or chips
1/4 cup chopped walnuts
1 stick unsalted butter, melted
Pinch of salt
3 sheets frozen phyllo dough, thawed

Steps:

  • Peel the pears and, using a melon baller or paring knife, core from the bottom, leaving the stems intact. Combine the wine, 3 cups water, the sugar, dried cherries, cinnamon stick and cardamom in a saucepan. Bring to a boil over medium-high heat, stirring to dissolve the sugar. Reduce the heat to medium low and add the pears (add more water to submerge the pears, if necessary). Poach until tender, about 10 minutes. Remove from the heat; let the pears cool in the liquid. (To make a day ahead, transfer the pears and liquid to a container, cover and refrigerate.)
  • Preheat the oven to 400 degrees F. Mix the chocolate, walnuts, 1 tablespoon melted butter and a pinch each of sugar and salt in a bowl. Remove the pears from the liquid and stuff with some of the chocolate mixture. Simmer the poaching liquid over medium-high heat until syrupy, 20 to 25 minutes.
  • Lay out 1 sheet of phyllo, brush with melted butter and sprinkle with sugar. Repeat the layering 2 more times. Cut the dough in half crosswise. Spoon the remaining chocolate mixture in the center of each piece and top with the pears, stem-side up. Pull up the corners of the phyllo to meet at the pear stem; pinch and twist the excess phyllo. Brush with butter and sprinkle with sugar. Transfer the pouches to a baking sheet and bake until golden, 20 to 25 minutes. Serve with the cherry syrup.

10 sheets Athens Fillo Dough
3 tablespoons unsalted butter, melted
3 to 4 medium Bosc pears, peeled, cored and thinly sliced
1 tablespoon granulated sugar
1 tablespoon cold unsalted butter, cut into small cubes
1/4 cup granulated sugar
2 tablespoons unsalted butter
Generous pinch of sea salt
2 tablespoons heavy cream

Steps:

  • Heat oven to 400°F. Brush 1 sheet fillo dough with melted butter, then gently press into bottom and sides of 9-inch tart pan, letting ends extend over edges of pan.
  • Repeat with remaining fillo dough, brushing each layer with butter and arranging in pan in rotation so corners of dough do not overlap. Fold in edges of dough, slightly pinching sides to form crust.
  • Arrange pear slices in decorative circles in prepared crust. Sprinkle top with sugar and cubes of butter.
  • Bake 45 minutes until crust is deep golden brown and pear topping is cooked. Remove from oven and transfer to cooling rack; leave oven on.
  • Meanwhile, in small saucepan over medium heat, heat sugar until dissolved. Cook 3 to 4 minutes, carefully swirling pan, until sugar begins to caramelize and turn amber in color. Remove from heat; stir in butter and salt until combined. Stir in heavy cream.
  • Return saucepan to stovetop over medium heat; continue to cook sauce 2 minutes, stirring constantly, until slightly thickened and smooth. Remove from heat.
  • Carefully and quickly brush top of tart with caramel sauce (you may need to reheat sauce over medium heat if it becomes too thick). Be sure to brush both crust and pear topping (there may be some caramel sauce left over). Return tart to oven and bake 10 minutes until caramel is melted and just begins to bubble.
  • Return tart to cooling rack. Cool completely before slicing.

Steps:

  • Pre-heat oven to 350F (180C). Line a large or 2 medium cookie sheets with parchment paper.
  • In a large bowl whisk together the flour, sugars, baking powder and salt. Add the eggs and butter and beat on medium speed to combine.

4 tablespoons (1/2 stick) unsalted butter, melted
2 tablespoons cocoa powder
3 sheets thawed phyllo dough
6 tablespoons sugar
1/2 cup mascarpone
1/2 pint raspberries
Mint sprigs
Powdered sugar
Raspberry puree, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • In a small bowl, combine the butter and cocoa to make "cocoa butter".
  • Line a large sheet pan with parchment paper. Place 1 sheet of phyllo on the pan and brush with cocoa butter. Sprinkle evenly with 2 tablespoons of sugar, then place another sheet of phyllo on top. Brush with cocoa butter, sprinkle with sugar, lay another sheet of phyllo on top, brush with cocoa butter, and sprinkle with sugar. Cover the stack with parchment paper. Place another pan on top to weight it down. Then place another, empty sheet pan on the very top. (This is to keep the phyllo from buckling during baking).
  • Bake for 15 to 20 minutes, until the phyllo is dark brown. It's very difficult to tell, as it's so chocolate-y looking as it is. Remove the whole stack of sheet pans and let cool (do not unstack the pans).
  • To assemble the dessert, break the phyllo up into random pieces about 3-inches square. Place a dab of mascarpone on each of 4 plates and press 1 phyllo piece down on it. Spoon on a heaping tablespoon of mascarpone in the center and surround it with raspberries. Place another phyllo piece on top and repeat, topping off with a final phyllo piece. Garnish with a mint sprig, a dusting of powdered sugar, and raspberry puree, if desired.

6 sheets frozen phyllo dough (11 1/2 by 15 inches each), thawed
1 stick unsalted butter, melted
3 small firm pears, such as Forelle or Seckel
2 Granny Smith apples, peeled

Steps:

  • Preheat oven to 400 degrees with a rack in top position. Combine pecans, breadcrumbs, sugar, and cinnamon.
  • Line a baking sheet with parchment, and top with 1 phyllo sheet. Brush phyllo all over with butter, and sprinkle pecan mixture evenly over top. Repeat 4 times. Top with remaining phyllo sheet, and brush with all but 2 tablespoons butter.
  • Slice pears and apples 1/8 inch thick; discard seeds. Arrange pear and apple slices in a single layer on phyllo, leaving space between fruit and a 1/4-inch border around edges. Brush fruit with reserved 2 tablespoons butter. Sprinkle with sugar, and dust with cinnamon. Bake, rotating sheet halfway through, until phyllo is golden brown and fruit is soft, 28 to 32 minutes. 2 cups pear juice (or apple)
1 cup amaretto liqueur
1/2 cup sugar
2/3 cup sugar
6 pears, peeled, halved and cored
2/3 cup heavy cream
2 1/4 cups whole milk
1 pinch salt
6 egg yolks
1/2 cup hazelnuts, toasted, skinned and chopped (optional)

Steps:

  • In a large saucepan, combine the pear or apple juice, amaretto, and 1/2 cup sugar. Heat the mixture over medium heat, stirring until the sugar is dissolved. Add the pears and poach for 35 to 40 minutes, or until tender but not falling apart. Using a slotted spoon, transfer the pears to a plate. Reduce the cooking liquid for 20 minutes, or until slightly thickened. Set aside to cool. Stir in the cream. Cover and refrigerate the pears and liquid separately until needed.
  • In a medium saucepan, combine the milk and salt. Heat over medium heat until bubbles form around the edges. Remove from heat and cover to keep hot.
  • In a blender or food processor, blend the 2/3 cup sugar and the egg yolks together until very thick and smooth. With the machine running, gradually add the hot milk.
  • Return the mixture to the saucepan. Cook over medium heat, stirring constantly with a wooden spoon, for 6 to 8 minutes, until the mixture thickens slightly and coats the back of the spoon, Remove the pan from heat and set it in a bowl if ice water. Stir for 2 minutes to cool the mixture. Cover and refrigerate for at least 2 hours, or until thoroughly chilled.
  • Chop 6 of the pear halves, refrigerate the remaining 6 for serving. In a blender or food processor, puree the chilled custard and the chopped pears until smooth. Freeze in an ice cream maker according to the manufacturer's instructions.
  • To serve, arrange a pear half on each plate. Reheat the reduced cooking liquid. Scoop gelato on top of each pear half, spoon some of the reduced cooking liquid over, and garnish with chopped hazelnuts. Makes 1 1/2 quarts, serves 6.

POACHED PEARS IN PHYLLO OVERCOAT WITH MADEIRA ZABAGLIONE `21' CLUB



Poached Pears in Phyllo Overcoat with Madeira Zabaglione `21' Club image

This is a cozy, fireside kind of winter dessert. The lightness of the fruit and flaky phyllo balance the rich Madeira custard sauce.

Number Of Ingredients 13

4 small firm-ripe pears (preferably Bosc) with stems intact
3 cups water
1/2 cup dry white wine
1/3 cup sugar
1 cinnamon stick
2 whole cloves
1 small dried chili such as habanero or 1/4 teaspoon dried hot red pepper flakes
12 sheets phyllo, thawed if frozen, stacked between 2 sheets wax paper and covered with a dampened kitchen towel
1 stick (1/2 cup) unsalted butter, melted
1/4 cup sugar
3 large egg yolks
1/4 cup Portuguese Madeira (preferably sweet, such as Malmsey)
Garnish: 1/4 cup dried cranberries or dried sour cherries, soaked in hot water 20 minutes and drained

Steps:

  • In a saucepan just large enough to hold pears upright in one layer simmer water, wine, sugar, cinnamon stick, cloves, and chili 10 minutes to blend flavors. Peel pears, leaving stems intact, and cut a thin slice from bottom of each so pears will stand upright. Add pears to poaching liquid and simmer until tender when pierced with a sharp knife, 10 to 12 minutes. Transfer pears to a plate and cool completely. Core pears from bottom, leaving stem ends intact, and pat dry.
  • Preheat oven to 400°F.
  • On a work surface brush a phyllo sheet with some melted butter and top with 2 more layers phyllo and butter in same manner. Put a pear in center of phyllo and gather phyllo up around top of pear, allowing excess to fold back and leaving stem exposed. Trim excess phyllo to about 3 inches if necessary and brush outside of phyllo with more butter. Make more wrapped pears with remaining pears, phyllo, and butter in same manner. On a baking sheet bake pears 20 minutes, or until phyllo is golden, and cool slightly. Pears in phyllo may be made 4 hours ahead and kept at room temperature.
  • In a metal bowl whisk together sugar, yolks, and Madeira until combined. Set bowl over a saucepan of simmering water and heat mixture, whisking, until frothy, pale golden, and each whisk stroke leaves a clean path. (An instant-read thermometer should register 140°F. for 3 minutes to ensure eggs are safely cooked.)
  • Divide zabaglione and pears among 4 dessert plates and garnish with dried fruit.
