Pastry:
1 1/4 cups all-purpose flour, plus extra for rolling and dusting
2 tablespoons sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
5 tablespoons butter, cut into 1/2-inch cubes and frozen
1/4 cup plus 2 tablespoon cultured buttermilk
1/4 teaspoon pure almond extract
Cream:
1 large egg white
3 tablespoons confectioners' sugar
3 tablespoons finely ground almonds
2 teaspoons melted butter
1/4 teaspoon pure almond extract
Filling:
3 firm, ripe pears, such as Anjou or Bartlett
2 tablespoon fresh lemon juice
1 1/2 teaspoons grated lemon zest
3 sheets parchment paper
1/4 cup granulated sugar
1/4 teaspoon cinnamon
2 teaspoons butter, cut into small bits
Confectioners' sugar for dusting

Steps:

  • Pastry:
  • Pulse flour, sugar, baking powder, salt, and baking soda in a food processor 30 seconds to combine. Add butter. Pulse until butter pieces are the size of peas. Add buttermilk and almond extract; pulse until dough just comes together. Form dough into a disk, dusting lightly with flour. Cover in plastic wrap or wax paper and refrigerate 1 hour.
  • Cream:
  • Whisk egg white and confectioners' sugar in a bowl until frothy, about 1 minute. Add almonds, butter and almond extract. Whisk. Refrigerate.
  • Filling:
  • Peel and core pears, then cut into slices about 1/4 inch thick; toss in a bowl with lemon juice and zest.
  • Galette:
  • Heat oven to 400°F. Lightly dust a sheet of parchment paper with flour; place dough on top and lightly dust with flour; top with another sheet of parchment and roll out dough into a circle about 12 inches in diameter. Peel off top layer of parchment. Invert dough onto a baking sheet lined with third sheet of parchment. Trim around edges of dough. Spread cream over dough, leaving a 1-inch border. Arrange pear slices in concentric circles over cream. Sprinkle with sugar and cinnamon. Fold edges of dough over pears, crimping dough to enclose ends of pears. Evenly scatter bits of butter over top of filling. Bake 20 to 25 minutes or until pears are tender and crust is golden. (Cover top with a sheet of foil if it begins to overbrown.) Remove; cover edges of tart with foil. Heat broiler. Glaze top of pears under broiler, about 6 inches from heat, 1 minute or until pears are golden brown. Cool on baking sheet 5 minutes. Transfer (on parchment) to rack to cool completely. Dust with confectioners' sugar.

All-purpose flour, for work surface
1/2 recipe Pate Brisee for Plum Crumb Pie
1 tablespoon cornstarch
1/4 cup granulated sugar
Pinch of salt
4 large ripe pears, cut into 1/2-inch pieces (about 3 1/2 pounds)
1 tablespoon unsalted butter, cut into small pieces
1 large egg
Sanding sugar, for sprinkling
1 tablespoon unsalted butter, cut into small pieces
3 tablespoons apricot jam

Steps:

  • Line a baking sheet with parchment paper or a nonstick baking mat.
  • Sprinkle work surface with flour. Roll out dough to a 14-inch round, about 1/4-inch thick. Transfer dough to prepared baking sheet and refrigerate until ready to use, up to 1 hour.
  • In a small bowl, mix together cornstarch, sugar and salt. In a large bowl gently toss together pears and cornstarch mixture until evenly coated. Mound pear mixture on top of dough, leaving a 4-inch border all the way around. Fold dough over pear mixture, overlapping where necessary and gently pressing to adhere the folds. Transfer galette to refrigerator and let chill, 20 to 30 minutes
  • Meanwhile, preheat oven to 400 degrees. In a small bowl, beat egg. Brush edges of dough with egg, and sprinkle edges with sanding sugar. Dot top of galette with butter. Transfer to oven and bake until crust is golden brown and juices are bubbling, about 1 hour.
  • Meanwhile, place apricot jam in a small saucepan over medium heat. Cook until heated through; strain through a mesh sieve set over a bowl. Remove baking sheet from oven and transfer to a wire rack; brush heated jam over pears. Let cool briefly before serving warm or at room temperature.

3/4 teaspoon kosher salt
10 tablespoons/140 grams cold unsalted butter (1 1/4 sticks), cut into pieces
4 tablespoons/60 milliliters ice water
1 large egg, lightly beaten, for brushing

1 to 2 crisp apples, such as Pink Lady (12 ounces/340 grams), peeled, cored and very thinly sliced
1 to 2 just ripe Bartlett pears (12 ounces/340 grams), cored and very thinly sliced

Steps:

  • In the bowl of a food processor, combine flours, sugar and salt. Add the butter and pulse until the mixture resembles coarse sand with some larger pieces. Add the ice water and pulse just until the mixture is evenly moistened. Tip the mixture out onto a piece of plastic wrap. Use the edges of the plastic to pack the dough into a disc. Wrap and refrigerate for at least 1 hour and up to 3 days.
  • Heat the oven to 400 degrees. In a large bowl, toss together apples, pears, sugar, cornstarch, lemon zest and cinnamon. On a lightly floured piece of parchment, roll the dough out into a 12-inch circle. Top the dough with the prepared fruit in concentric circles leaving a 1 1/2-inch border. Lift and press the edges up over the fruit, folding as necessary. Using the parchment paper, transfer the galette to a rimmed baking sheet. Chill for 10 minutes.
  • Brush the border of the pastry with the beaten egg and sprinkle with sanding sugar, if using. Dot the fruit with the butter. Bake until the filling is tender and the crust is deep golden brown, about 45 minutes. Some of the juices may leak out, but that's O.K.
  • Meanwhile, make the caramel: Bring apple cider to a boil over medium-high heat in a small saucepan. Continue to cook the cider until it has reduced to 1 cup liquid, about 13 to 14 minutes. Then add brown sugar, butter, and salt and stir to combine. Reduce heat to maintain a simmer, and continue to cook the mixture, whisking often, until it has become syrupy and thickened slightly, about 13 to 15 minutes. Whisk in the cream and set aside to cool slightly. (The caramel will thicken as it cools.)
  • Remove tart from the oven, and let it cool slightly on the pan on a rack. Transfer the galette to a serving plate and drizzle with caramel. Serve warm or at room temperature with any remaining caramel.

I used Bartlett pears for this juicy galette, but pretty much any variety will work, as long as they're not overly ripe.

1 dessert galette pastry (1/2 recipe)
2/3 cup dried cranberries
2 pounds pears, ripe but not too soft, peeled, cored and sliced (about 8 to 12 wedges per pear, depending on the size; if the pears are very large, cut the slices into 2 pieces at the middle)
1 tablespoon fresh lemon juice
2 tablespoons mild honey, like clover
1/2 teaspoon cinnamon
1 teaspoon vanilla
1/4 cup (25 grams) almond flour
1 egg beaten with 1 teaspoon milk, for egg wash
1 tablespoon raw brown sugar

Steps:

  • Remove the pastry from the freezer and place it on a baking sheet lined with parchment. Leave to thaw while you prepare the fruit, but don't keep it out of the freezer for too long. It's easiest to handle if it's cold and will thaw quickly. You just want it soft enough so that you can manipulate it.
  • Soak the cranberries for 5 minutes in hot water. Drain and dry on paper towels. Toss the sliced pears with the lemon juice in a large bowl, then add the dried cranberries, honey, cinnamon and vanilla and gently toss together.
  • Sprinkle the almond flour over the pastry, leaving a 2- to 3-inch border all around. Place the fruit on top. Fold the edges of the dough in over the fruit, pleating the edges as you work your way around the fruit to form a free-form tart that is roughly 9 inches in diameter. Place in the freezer on the baking sheet for 45 minutes to an hour. This helps the galette maintain its shape.
  • Meanwhile, preheat the oven to 350 degrees. Remove the galette from the freezer. Brush the exposed edge of the pastry with the egg wash. Sprinkle the sugar over the fruit and the crust. Place in the oven and bake 50 to 60 minutes, until the fruit is bubbly and the juice is running out and caramelizing on the parchment. Remove from the oven and allow to cool for at least 15 minutes. Serve hot, warm or at room temperature.

1 tablespoon sugar, plus more for sprinkling
1/2 teaspoon kosher salt
5 tablespoons cold unsalted butter, cut into small pieces
5 ounces cold cream cheese, cut into small pieces
1 large egg, lightly beaten
1 tablespoon ice water
3 ripe pears (such as Bosc or Anjou), peeled and cut into small chunks
1 1/2 cups cranberries (fresh or frozen)
3/4 cup sugar
2 teaspoons all-purpose flour
1 teaspoon grated orange zest (optional)
1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/8 teaspoon freshly grated nutmeg
Pinch of kosher salt
1 tablespoon cold unsalted butter, cut into small pieces

Steps:

  • Make the crust: Position a rack in the bottom third of the oven and preheat to 350 degrees F. Spread the pecans on a baking sheet and bake until lightly toasted, about 6 minutes. Transfer to a plate and let cool.
  • Pulse the toasted pecans, flour, sugar and salt in a food processor until the nuts are finely chopped. Add the butter and pulse about 4 times to coat the flour. Pulse in the cream cheese until the dough looks like coarse crumbs and just holds together when pinched. Pulse in the egg and ice water just until the mixture is slightly moist. The dough will be crumbly; do not overwork it. Turn out onto a piece of plastic wrap and pat into a disk, using the plastic wrap to help you. Wrap and refrigerate until firm, at least 1 hour and up to 24 hours.
  • Line a baking sheet with parchment paper. Dust the top of the dough with flour and press and roll out into a 14-inch round on a lightly floured surface. Transfer to the baking sheet. (It's OK if the dough is larger than the baking sheet ¿ you'll fold in the edge.) Pinch together any cracks in the dough.
  • Make the filling: Toss the pears, cranberries, sugar, flour, orange zest, cinnamon, allspice, nutmeg, salt and butter in a large bowl. Spread the filling over the dough, mounding it slightly in the center and leaving a 2-inch border. Fold the edge of the dough over the filling, pleating as needed. Brush the edge with water and sprinkle with sugar.
  • Bake until the filling is soft and bubbling and the crust is golden brown, about 1 hour. Transfer to a rack and let cool completely, at least 4 hours.

RUSTIC CRANBERRY-PEAR GALETTE

Although now slightly tweaked, this recipe comes from the Jan 2003 cookbooklet Favorite Brand Name Recipes -- Holiday Desserts. Why it's called a 'galette' is beyond me since in France, I understand that refers to a type of cake, while in French Canada, I think it's more like a large cookie. What this recipe makes, for me, is more like an open, rustic pie! Whatever you call it, it is delicious!

1 tablespoon cornstarch, plus
1 teaspoon cornstarch

1 refrigerated pie crust, room temperature
1 egg white
1 tablespoon water

Steps:

  • Preheat oven to 450 degrees F. Coat pizza pan or baking sheet with nontstick cooking spray, then set aside.
  • Set aside 1 teaspoon sugar, then, in a medium bowl, combine remaining sugar, cornstarch & cinnamon, blending well.
  • Add pears, cranberries & vanilla extract & toss to coat.
  • Remove crust from pouch, then unfold it, remove plastic sheets & place it on the prepared baking sheet.
  • Spoon pear mixture in center of crust to within 2 inches of the edge.
  • Fold edge of crust 2 inches over pear mixture & crimp slightly.
  • In a small bowl, combine egg white & water & whisk until well blended.
  • Brush egg wash onto outer edges of pie crust & sprinkle with remaining 1 teaspoon of sugar.

1/3 cup canola oil
1 teaspoon almond extract
3 -4 tablespoons ice water
3 pears
1/4 cup Splenda granular, sugar substitute, no calorie sweetener (granular form not liquid)
2 tablespoons no-sugar-added apricot jam, melted
1 tablespoon dried cranberries
1 tablespoon slivered almonds (optional)
lemon juice (only added to water bath to stop pears from turning brown)

Steps:

  • Preheat oven to 350ºF.
  • Lightly coat baking sheet with non stick cooking spray.
  • In a medium bowl, mix together flour and salt.
  • While stirring flour mixture briskly with fork, drizzle in oil a little at a time, stirring until mixture resembles coarse crumbs.
  • Add almond extract and water a tablespoon at a time, adding just enough water for tough to come together.
  • Shape dough into a disc.
  • Wrap in in waxed paper or plastic; refrigerate one hour or until firm.
  • While dough chills, peel pears and slice in half lengthwise.
  • Core pears by cutting a V-shaped wedge lengthwise from the center of the cut side of each pear.
  • Place the pear halves in a bowl of water mixed with a little lemon juice.
  • On baking sheet, roll out dough int a rectangle.
  • Drain pears and and slice thinly.
  • Insert knife blade under the slices and lift onto dough.
  • Repeat with remaining slices.
  • Fold dough edges up and over pears about a 1/2 inch or so to form a border.
  • You can leave the edge plain or notch or flute it like you would a pie crust if you choose to make it look fancy.
  • This is an open fruit cake so Pears will not be entirely covered by dough.
  • Sprinkle pears with Splenda.
  • Brush pears with melted preserves.
  • Sprinkle pears with cranberries and slivered almonds if using.
  • Bake at 350ºF 30 minutes or until top is golden brown.
  • Cool on wire rack.
  • Slice into squares to serve.
  • Can be served warm or room temperature.

5 ginger tea bags
1 regular black tea bag
1/4 cup sugar
2 tablespoons honey
1 teaspoon black peppercorns
1 inch piece ginger, sliced
Zest of 1 lemon (removed with a vegetable peeler) plus the juice
2 small firm-ripe Bosc pears, peeled but left whole
2 tablespoons unsalted butter
2 leeks, split lengthwise and sliced (white and light green parts only)
Kosher salt and freshly ground black pepper
1 refrigerated rolled pie crust (from a 14.1-ounce box)
All-purpose flour, for rolling
1/2 cup shredded sharp white Cheddar
1 large egg, beaten
1 tablespoon chopped fresh chives, optional

Steps:

  • To poach the pears, bring 4 cups water to a boil in a medium saucepan. Remove from the heat and add the ginger and black tea bags; let steep 10 minutes. Squeeze the bags against the side of the pan, then discard them. Stir in the sugar, honey, peppercorns, ginger and lemon peel and bring to a simmer. Add the pears and additional water to cover the pears, if needed. Simmer, turning the pears occasionally, until just tender all the way through, 20 to 22 minutes. Let cool in the liquid. Halve and core the pears and pat dry. Slice the pears into 1/4-inch slices. (You'll get 6 or 7 slices from each pear.)
  • Heat the butter in a medium skillet over medium heat. Add the leeks and cook, stirring occasionally, until tender, about 10 minutes. Season with salt and pepper. Set aside to cool.
  • Preheat the oven to 400 degrees F.
  • Unroll the pie crust on a floured work surface and roll to a 14-inch circle. Center on a parchment-lined baking sheet (it's OK if it overhangs at this point). Spread the leeks on the crust in a 9-inch circle. Sprinkle the cheese over the top. Top with the pears in a spiral. Fold over and pleat the edges of the dough, leaving the center of the galette open. Brush the dough with the beaten egg.
  • Bake the galette until the juices are bubbling and the pastry is golden brown and crisp, 40 to 45 minutes. Remove to a baking rack to cool. Serve warm or at room temperature, sprinkled with the chives, if using.

4 medium bosc pears
1 premade pie crust
1 large egg
1 teaspoon coarse brown sugar, for sprinkling
ice cream, for serving

Steps:

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a small bowl, combine the sugar, cinnamon, cardamom, nutmeg, ginger, and cloves.
  • On a cutting board, cut the pears lengthwise in 2 halves, removing the cores. Slice into ¹⁄₁₆-inch (1 mm) thick slices. Slice all the way through, but keep the pear halves together.
  • Lay the pie crust on the prepared baking sheet and arrange the pear halves on top, separating the slices to cover the center of the crust, leaving a 1-inch (2 cm) border around the edge.
  • Sprinkle the sugar spice mix over and between the pear slices.
  • Fold the edge of the crust over the pears.
  • Beat the egg in a small bowl, then brush over the crust. Sprinkle coarse sugar on top of the egg wash.

3 green apples
3 bartlett pears
1/4 c apricot preserves
3 Tbsp sugar cinnamon mixture
1/2 c sliced almonds

1 beatened egg
1/2 tsp sugar
2 Tbsp flour

Steps:

  • 1. On lightly floured surface place one pie crust on top of other and roll out to 16in circle. Transfer to parchment lined baking sheet. Spread crust with 1/4 cup preserves, leaving two inch border.
  • 2. In mixing bowl combine sliced fruit, cin sugar, 2tbls flour lemon juice, ginger, and almonds. Transfer to pie crust leaving border. Fold over fruit mixture.

Steps:

  • In a large bowl, mix together the flour, sugar and salt. Using a box grater, grate the cold butter atop the flour mixture. Working quickly and using your hands, break the butter bits into the flour until they're evenly distributed and resemble the size of small peas.
  • Add 4 tablespoons of water and mix. The mixture will be shaggy at this point. From here, add 1 tablespoon of water at a time until the dough comes together (generally about 3 additional tablespoons). Flour a work surface and dump the dough onto it. Knead a few times until it comes together. Form dough into a disk. Wrap the disk in plastic wrap and transfer to the refrigerator to chill for at least 1 hour, ideally overnight.
  • Just before the dough is ready to remove from the fridge, mix together the filling. In a medium bowl, toss together the pear slices, brown sugar, cocoa powder, coffee grounds, vanilla extract and salt.
  • Remove the disk of dough from the refrigerator and allow to come to room temperature for 10 minutes. Liberally flour a work surface and rolling pin. Begin to roll the dough to a 16-inch round, being sure to rotate it every so often to avoid sticking, Using the bottom of a bowl or plate that measures about 6 inches in diameter, cut out 3 circles. Re-roll the scraps to get 1 additional circle.
  • Arrange the pears slices neatly in a circular pattern in the center of each of the pie crust rounds, leaving about 1 1/2 inch clear at the edges. Fold over the edges to cover about 1/2 inch of the filling. Repeat with the remaining rounds. Transfer the galettes to a baking sheet lined with Reynolds® Parchment Paper and place in the freezer to chill for 15 minutes. Meanwhile, preheat your oven to 400 degrees F.
  • Lastly, brush the pie crust edges with the egg wash and sprinkle with turbinado sugar. Transfer to the oven to bake for 20 to 25 minutes, until the edges are golden brown. Check on the galettes periodically. If at any time the crusts' edges are getting too brown, take a piece of Reynolds Wrap® Aluminum Foil and tent over the edges. 1 teaspoon kosher salt
3/4 cup (1 1/2 sticks) cold unsalted butter, cubed
2 tablespoons plain yogurt
1/4 cup ice-cold vodka
1 tablespoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 cup packed light brown sugar
1/4 cup honey plus more for drizzling
Juice of 1/2 lemon
1 teaspoon vanilla bean paste
3 Anjou pears
1 large egg
1/4 cup crushed walnuts
1 tablespoon turbinado sugar

Steps:

  • For the pie dough: Combine the flour and salt in a food processor. Add the butter cubes and yogurt and pulse until pea-size bits of butter remain.
  • Add the vodka to the food processor and pulse until the dough pulls together. Do not over process.
  • Remove the dough from the machine and form into 2 disks. Do not over knead, just barely bring the dough together. Flatten each disk and wrap tightly with plastic to rest and chill in the refrigerator for 1 hour minimum.
  • Preheat the oven to 425 degrees F with a rack in the center.
  • For the chai spice mix: In a small bowl, combine the cinnamon, cardamon, ginger, nutmeg and cloves. Mix to combine and set aside.
  • In a small saucepot, combine the brown sugar, honey, lemon juice, vanilla paste, 1 tablespoon of the chai spice mix and 1/4 cup water and bring to a simmer over medium heat. When the sugar has completely dissolved, turn off the heat. Whisk until thoroughly combined. Set aside.
  • When ready to use, pull 1 disk from the refrigerator (save the other disk for another use). Lightly flour the counter. Roll out the pie dough into a 1/4-inch-thick round. (Because the galette is freeform, the dough doesn't have to be exactly round.) Transfer the dough round to a parchment-lined baking sheet.
  • Trim the top and bottom of each pear and cut in half lengthwise. Using a spoon or melon scooper, remove the core and seeds. Place the flat side of the pear on the cutting board and slice lengthwise into 1/4-inch-thick slices
  • Place the pear slices on top of dough, overlapping slightly. Keep the filling flat and compact, leaving a 3-inch border on all sides so you can fold the edges over the filling.
  • Drizzle enough syrup over the pears so they are all coated, but stop if the syrup is leaking out from under the fruit and onto the pastry. Fold the dough over the pears, overlapping where necessary and gently pressing to adhere the folds. Add more syrup to the center if desired.
  • Transfer the sheet pan and galette to the refrigerator to chill for 20 minutes. In a small bowl, beat the egg with 1 tablespoon water to make an egg wash.
  • Just before the galette is ready to go into the oven, sprinkle the exposed fruit with walnuts. Use a pastry brush to brush the pie dough with egg wash and sprinkle with turbinado sugar.
  • Bake the galette on the center rack at 425 degrees F for 10 minutes, then lower the temperature to 350 degrees F and bake until the crust is golden brown and feels firm to the touch, about 20 minutes. Remove to a wire rack to cool completely.

1 teaspoon vanilla extract
FILLING
6 tablespoons (3/4 stick) unsalted butter
3/4 cup (packed) golden brown sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
6 medium-size ripe Bartlett pears, peeled, halved, cored, each half cut into 3 wedges
8 tablespoons walnut pieces, toasted

Steps:

  • FOR CRUST: Combine flour, sugar and salt in processor; blend 5 seconds. Add butter and process, using on/off turns, until butter is reduced to pea-size pieces. Add 5 tablespoons buttermilk and vanilla. Blend until moist clumps form, adding more buttermilk by teaspoonfuls if dough is dry. Gather into ball; flatten into disk. Wrap; chill at least 1 hour and up to 1 day. Preheat oven to 425. Roll out crust on floured surface to 14-inch round; trim to 12 1/2-inch round. Slide dough round onto rimless baking sheet and chill while preparing filling. FOR FILLING: Melt butter in heavy 12-inch-diameter nonstick ovenproof skillet over medium heat.
