1/2 cup creamy peanut butter
1/3 cup honey
1/4 cup soy sauce
3 tablespoons canola oil
1 garlic clove, minced
1 teaspoon curry powder
2-1/2 pounds chicken wings

Steps:

  • In a large bowl, combine the peanut butter, honey, soy sauce, oil, garlic and curry powder until blended. Cut chicken wings into three sections; discard wing tips. Add wings to peanut butter mixture; stir to coat. Cover and refrigerate for 2 hours., Transfer to an ungreased 13 x9-in. baking dish. Bake, uncovered, at 375° for 35-45 minutes or until chicken juices run clear.

4 (5 ounce) skinless, boneless chicken breast halves
¾ (16 ounce) package spaghetti
2 cups chicken broth
¼ cup peanut butter
3 tablespoons soy sauce
2 cups frozen stir-fry vegetables, thawed
salt and ground black pepper to taste
1 medium lime, juiced

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place chicken on the preheated grill and cook for 7 to 8 minutes. Flip and cook until no longer pink in the center and the juices run clear, 7 to 8 minutes longer. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the grill and slice.
  • While the chicken is grilling, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and set aside.
  • Whisk chicken broth, peanut butter, and soy sauce together in a large saucepan. Bring to a simmer over medium hat. Stir in vegetables, noodles, and chicken; cook until liquid is absorbed, 3 to 5 minutes.

1 pound boneless, skinless chicken breast halves or thighs, cut into 1 1/2-inch pieces
Chopped peanuts, if desired
1/3 cup crunchy peanut butter
1/3 cup boiling water
1 tablespoon grated gingerroot or 1 teaspoon ground ginger
1 tablespoon lemon juice
1/8 teaspoon crushed red pepper

Steps:

  • Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Thread chicken pieces on four 10- to 12-inch metal skewers, leaving space between each piece.
  • Make Spicy Peanut Sauce; reserve 1/2 cup sauce to serve with cooked kabobs. Brush chicken with half of the remaining sauce.
  • Cover and grill kabobs 4 to 5 inches from medium heat about 15 minutes, turning and brushing occasionally with remaining sauce, until chicken is no longer pink in center. Serve kabobs with reserved sauce and the peanuts.

1 teaspoon salt

1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
5 tablespoons butter
1 cup orange juice
2/3 to 1 cup salted peanuts
Orange slices or minced fresh cilantro, optional

Steps:

  • In a small bowl, combine the chili powder, salt and pepper; rub over chicken. In a large skillet, saute chicken in butter until golden brown. 1 broiler/fryer chicken (3 to 4 pounds), cut up
4 tablespoons peanut oil, divided
2 tablespoons soy sauce
Dash salt
1 cup water
4 medium tomatoes, cut into wedges
3 large sweet red peppers, cut into wedges
1 large onion, cut into wedges
1 cup creamy peanut butter

Steps:

  • In a Dutch oven, brown chicken in 2 tablespoons oil; drain. Brush chicken with soy sauce; sprinkle with salt. Add water. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until chicken juices run clear., Meanwhile, in a food processor, combine the tomatoes, red peppers and onion. How to make Peanutty Baked Chicken Cutlets

2 tablespoons honey
2 tablespoons Dijon mustard
1/3 cup peanuts
1 cup panko (Japanese breadcrumbs)
4 (1/2-inch-thick) chicken breast cutlets (about 1 pound)
Cooking spray
1/4 cup peach chutney

Steps:

  • Preheat oven to 500°.
  • Combine honey and mustard in a small bowl; stir well. Place peanuts in a food processor; pulse until finely chopped. Combine peanuts and panko in a shallow bowl.
