This came from my friend Jolene. of course, I "HAD" to change it a bit, I can't help myself. It's a bit much for most Fish but it goes well with almost alything else especially Chicken and Turkey. Come to think of it maybe you'll like it with Fish. Give it a try.

1 cup old fashioned peanut butter, smooth or crunchy,stirred well to mix oil back into the solids.
1 cup ketchup
1 cup fresh orange juice
1/2 yellow onion, finely chopped
4 tablespoons prepared mustard
4 tablespoons gluten-free soy sauce
3 tablespoons Worcestershire sauce
2 teaspoons hot sauce, Cholulla or Tapatio

Steps:

  • Combine all ingredients in a blender, puree.
  • Place in a small sauce pan.
  • Bring to a slow boil, reduce heat and simmer 9-10 min.
  • Cool to room temperature.

1/2 cup orange juice
3 tablespoons reduced-sodium soy sauce
2 tablespoons lime juice
1 tablespoon dark brown sugar
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1 teaspoon curry powder
1 teaspoon dried cilantro
2 pork tenderloins (about 1 1/2 pounds)
1/2 cup reduced-fat creamy peanut butter
1/2 cup water
2 tablespoons minced garlic
2 tablespoons minced fresh ginger
2 tablespoons rice vinegar
1 teaspoon hot sauce
2 teaspoons reduced-sodium soy sauce
1 teaspoon dark brown sugar
1 peanut crunch candy bar, finely crushed (recommended: Planters Peanut bar)
2 ounces fat free pretzels, finely ground (about 1/3 cup)

Steps:

  • To make the satay: Combine all ingredients except the pork and pour into a shallow, nonreactive dish. Cut the pork tenderloins across into 2-inch-thick pieces. Pound each piece until very thin and even. Place in the dish and turn to coat. Cover and refrigerate at least 2 hours and up to 24 hours.
  • To make the sauce: Stir all ingredients except peanut crunch candy bar and pretzels until smooth. Place in a serving bowl. Combine peanut crunch candy bar and pretzels and place in a separate serving bowl.
  • Remove the pork from the marinade, pat dry and cut into 1 1/2-inch thick strips. Thread onto the skewers. Light a grill or heat a grill pan over medium-high heat. Grill the skewers until just cooked through, 3 to 4 minutes per side.
  • Serve immediately, with the sauce for dipping. Have guests first dip satay in sauce and then in crunch bar and pretzels.

This recipe comes from a local cookbook called Recipes and Memories of Patrick W. Cox. It's different and tasty. I made a slight change in the ingredients but not much.

1 1/2 lbs pork tenderloin
fresh ground black pepper
2 tablespoons soy sauce
2 tablespoons peanut butter
1/4 teaspoon ground red pepper
3 garlic cloves, minced
1/2 cup pineapple preserves

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Trim fat from tenderloin.
  • Sprinkle with fresh ground black pepper to taste.
  • Line a baking dish with parchment paper or aluminim foil.
  • Mix the soy sauce, peanut butter, red pepper and minced garlic together.
  • Spread mixture over pork loin.
  • Bake uncovered for 30 minutes.
  • Remove from oven.
  • Carefully spread pineapple preserves on top of pork loin.
  • Bake another 10 mintes or until meat reaches 150 degrees Fahrenheit.
  • Let stand for 5 minutes before serving.

South American Peanut Pork image

2 tbsps. Crisco® Pure Canola Oil
3 to 4 cloves garlic, minced
1 1/2 cups chopped onion
1 cup chopped red bell pepper
1 cup shredded carrots
1 1/2 lbs. pork tenderloin, cut into 1/2 inch cubes
1/2 tbsp. paprika
1/2 tbsp. sugar
1/2 tsp. ground cumin
1/4 tsp. cayenne pepper, or to taste
Salt and pepper
4 cups chicken broth
1 cup Jif® Extra Crunchy Peanut Butter
Hot cooked rice
1/2 cup dry roasted peanuts, chopped
Thinly sliced green onions

Steps:

  • HEAT oil in a large saucepan over medium heat. Add garlic, onion, bell pepper and carrots. Saute about 2 minutes, stirring often.
  • ADD the pork, paprika, sugar, cumin and cayenne pepper. Add salt and pepper to taste. Brown pork on all sides.
  • POUR in chicken stock, scraping the bottom and sides of pan to deglaze it. Add peanut butter; bring to a boil, stirring constantly. Reduce heat and simmer, stirring occasionally, about 15-20 minutes until the pork is tender.
  • SEASON with additional salt and pepper, if desired. Serve over rice, topped with sliced green onions and chopped peanuts.
